Garlic Parmesan Turkey Breast

When it comes to mixing ingredients and seasoning without a recipe, I can often be a mess. Following a recipe makes me a gourmet chef, trying to work alone with ingredients out of my pantry makes me a novice. The blend of olive oil, garlic, and Parmesan is perfect on these boneless turkey breasts. We find the recipe is great with leftover turkey as it can bring a whole new taste to your refrigerator leftovers.

Ingredients:

  • 4 Tbsp olive oil
  • 4 Minced garlic cloves
  • 1 Tsp salt
  • 1 Tsp pepper
  • 4 Boneless turkey breasts
  • ½ Cup grated Parmesan cheese
  • ¼ Cup cream


Directions:

  1. Preheat oven to 300 degrees.
  2. Combine olive oil, garlic, salt, and pepper in a small bowl.
  3. Pour mixture over turkey breasts and bake for 1 hour 15 minutes until skin is crisp.
  4. Heat cream in the microwave until warm.
  5. Pour cream into a serving dish and place turkey breasts on top.
  6. Garnish with the Parmesan cheese.
  7. Serve and enjoy.

Tips: Mix the Parmesan cheese with Italian seasoning for a more savory finish.

Scale

When pumpkin season hits, we get rather excited. Pumpkin, Pumpkin everything!  These Pumpkin Oatmeal Donuts are sure to please and are not too difficult to make. You will want to make sure you have a donut baking pan before getting started.

Ingredients:

  • ¾ Cup milk
  • 1½ Cups flour
  • ½ Cup oatmeal
  • ½ Cup brown sugar
  • 2 Eggs
  • 2 Tbsps peanut butter
  • ¼ Cup maple syrup
  • 1 Cup canned pumpkin
  • 1 Tsp ground cinnamon
  • 2 Tsps baking soda
  • Pinch of salt
  • Cinnamon-sugar mix, to taste
  • Sugar glaze, for garnish

Directions:

  1. Preheat the oven to 350 degrees.
  2. Grease a donut baking pan with non-stick cooking spray.
  3. In a saucepan over medium-low heat pour the milk and add the sugar. Cook until dissolved (about 4 minutes).
  4. In a bowl incorporate the remaining donuts ingredients (flour, oatmeal, eggs, peanut butter, maple syrup, pumpkin, cinnamon, baking powder, and salt).
  5. Then gradually incorporate the warmed milk, beat until thick.
  6. Fill the donut pan with the batter.
  7. Place in the oven and cook for 12 – 15 minutes, or until the donuts are well cooked.
  8. Remove from the oven, and garnish with the cinnamon sugar mix and the sugar glaze.
  9. Serve and enjoy.

Tip: Use gluten free flour for a gluten free option.

Ham, Sweet Potato, and Spinach Fall Breakfast Casserole

I don’t know about you, but we always have a ton of leftover ham, especially around the holidays. I hate wasting meat and I’m always trying to find ways to use it, and this was the perfect way to do it! To keep the fall flavors going, we added sweet potato, which gave the dish just the right amount of sweetness without being too sweet. The spinach adds color and tons of nutrition, the green onions add a nice pop of freshness, and the Parmesan cheese adds a nice salty, savory finish. You can substitute the spinach with kale or any green you like. Bacon or sausage would also work in place of the ham and would be equally delicious with the sweet potato.

This was absolutely delicious and super healthy! This recipe feeds 6, double or even triple to feed a longer crowd.

Ham, Sweet Potato, and Spinach Breakfast Casserole
(makes six servings)

Ingredients:

  • 1 1/2 cups cooked sweet potato, peeled and cubed
  • 1 cup cooked ham, diced
  • 1/4 cup diced onion
  • 2 cups spinach, packed
  • 2 green onions, sliced (greens and whites separate)
  • 6 large eggs
  • 3 tablespoons half-and-half
  • 2 tablespoons olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt

Directions:

  1. Preheat your oven to 350°F
  2. Spray a shallow 1.5-quart baking dish with nonstick cooking spray.
  3. Add the olive oil to a skillet over medium-high heat.
  4. When the oil is hot, add the sweet potato and cook for five minutes.
  5. Add the onion and the ham, and cook for an additional five minutes.
  6. Turn the heat down to medium-low, and add the white part of the green onion along with the spinach.
  7. Cook until the spinach is just wilted, which will only take about 60 seconds.
  8. Remove the pan from the heat.
  9. Pour the mix mixture into your prepared baking dish and spread out it evenly.
  10. In a separate bowl, whisk together the eggs, half-and-half, salt, and pepper.
  11. Pour the egg over the potato mixture, making sure to fill in all the gaps.
  12. Sprinkle the top with the Parmesan cheese and the remaining green onion.
  13. Place the pan in the oven on the center rack and bake for 25 to 30 minutes or until the eggs are set in the middle.
  14. Serve with additional green onion and Parmesan, if desired.

I am a huge fan of Trader Joe’s. Every time I go into their grocery store, I am amazed by the prices, options, and flavors. I have been tempted to Google, “why they are so cheap?” but I never have done it – anyone know this answer? Regardless of price, what often is more important to me are quality ingredients and flavor. Since Trader Joe’s all all of these things – great prices, flavor and whole ingredients, this is a grocery store I frequent. I can’t always stock my pantry with their options, but I can create some pretty yummy recipes (and toss in a few, delicious snacks while I shop!)

S’mores Campfire Cones

We love this twist on a S’more especially if you are camping! These homemade S’mores Campfire Cones are so easy. Heat in an oven or over a grill (not an open flame) for the perfect S’mores Dessert! We think a great addition would be butterscotch chips!

Ingredients:

  • 12 Sugar or Waffle Cones
  • 1 bag Mini Marshmallows
  • 12 oz Chocolate Chips
  • optional: Butterscotch Chips


Directions:

  1. Fill each cone with marshmallows and chocolate chips.
  2. Wrap in aluminum foil.
  3. Head on the grill for 7 – 10 minutes. Keep away from direct flames. (This is also great in the oven!)
  4. Unwrap and enjoy. Be careful as contents may be hot.

  3. Head on the grill for 7 – 10 minutes. Keep away from direct flames. (This is also great in the oven!)
  4. Unwrap and enjoy. Be careful as contents may be hot.

Cinnamon Roll Christmas Trees

If it’s a weekend morning for us, it probably includes a breakfast with Cinnamon Rolls. We love them! We had fun with these cinnamon rolls turning them into Christmas trees with green food coloring, some Christmas sprinkles and and Twizzlers Pull and Peel candy.  This recipe is so easy only requiring a few additional touches to get your final Christmas Food Craft – we think the kids will love it! Enjoy.

Ingredients:

  • Pillsbury Cinnamon Rolls with Icing
  • Green Food Coloring
  • Christmas sprinkes (we used The Geeky Hostess Natural Colored Star Sprinkles)
  • Red Twizzlers Pull and Peel

Supplies:

  • Parchment paper
  • Toothpick
  • Knife for frosting
  • Baking pan

Directions:

  1. Preheat your oven to 400° and line a baking pan with parchment paper.
  2. Open your cinnamon roll packaging and your cinnamon roll dough and set the icing aside.
  3. Press two of your cinnamon roll doughs together and roll out into a long snake like figure.
  4. Repeat step 3 with each piece of dough, making 4 dough snakes.
  5. Form your dough snakes into Christmas trees by using a back and forth motion while placing your dough onto your pan.
  6. Bake for 12-14 minutes or until your cinnamon rolls have a nice golden look to them.
  7. Add a drop of your green coloring into your icing and mix with a toothpick.
  8. Use a knife to frost each cinnamon roll tree with your green icing.
  9. Sprinkle your stars onto each tree and pull apart your pull and peel licorice.
  10. Cut your pull and peel into smaller pieces and place onto you Christmas trees in a zig zag pattern to look like garland.
  11. Serve warm and enjoy!

Campfire Potatoes Recipe

Going camping this summer, this Campfire Potatoes Recipe will be perfect for the great outdoors or your own backyard!

Ingredients:

  • 1 1/2 lb New Red Potatoes
  • 1 large Onion
  • 1 tbsp Minced Garlic
  • 4 tbsp Butter
  • 1-2 tbsp Worchestershire Sauce
  • 1/8 tsp Cayenne Pepper
  • Salt and Pepper to taste

Directions:

  1. Slice potatoes and onion into 1/8 – 1/4″ slices.
  2. Place on piece of aluminum foil large enough to fold over and to be able to roll up edges.
  3. Top with garlic, butter, Worcestershire and cayenne.
  4. Fold packet over and roll edges to close.
  5. Leave on medium grill for 30 minutes or in 350 oven (in a pan to avoid messes) for 35-40 minutes.
