Apple Oat Muffins from Scratch

Another apple recipe for you. This time healthy Apple Oat Muffins. This is a recipe from scratch perfect for breakfast, after school snacks, and any other reason! We love them served warm with a touch of butter on top, but they are also great after a day or two. You can freeze them upon baking to pull out as individual snacks later. Happy Fall!

Apple Oat Muffins from Scratch

Yields: 12 muffins
Prep Time: 10 minutes | Cook Time: 30 minutes | Total Time: 40 minutes

Ingredients:

  • 2 cups buttermilk
  • 1 cup old-fashioned rolled oats
  • 2 large eggs
  • 1/3 cup packed brown sugar
  • 1 unpeeled medium apple, grated
  • 1 2/3 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • Optional flavor additions: 1 cup fresh berries; 2/3 cup dried fruit, ½ cup chopped nuts

Directions:

  1. In a large bowl, combine buttermilk, oats, eggs, sugar and optional flavor additions.
  2. Combine flour, baking soda, baking powder and salt. Sift.
  3. Preheat oven to 375 degrees F. Grease a 12-muffin tin or use muffin liners. Fold dry sifted ingredients gently into wet ingredients until just combined.
  4. Fill muffin tins and bake 25-30 minutes or until golden brown. Loosen from pan immediately and allow to cool on a cooling rack.

Recently we moved from Florida (my home state of 30+ years) to the Washington, DC area. This put us away from extended family in in a while new world of focusing on our core family. My girls are in the early stages of elementary school and are beginning to understand the real meaning of Christmas. Santa, and additionally the Elf on the Shelf, have gone out the window (yes, he no longer comes down the chimney) and my focus is now on finding activities during the Christmas season that reflect not only family, but reason for the season – The Birth of Christ.  One of the ways we have gotten back to the basics is through our family Advent Calendar.

Turkey Cheese Sticks – Kids Food Craft

We had so much fun with the Fall Ice Cream Cone Teepees and our Thanksgiving Kids Food Crafts, that we wanted to do a non “food” item for schools that do not allow food brought in from the outside that isn’t prepackaged. This is another excellent fall idea for a classroom or large group. It is so easy and  the kids will love this fall food craft.

Supplies:

  • Handi Snacks Premium
  • Orange and Red Card Stock
  • Medium and Small Plastic Googly Eyes
  • Scissors
  • Hot Glue/Hot Glue Gun


Directions:

  1. Cut your orange paper into the following: 6 small diamonds for the turkey beaks, 12 small turkey legs.
  2. Cut your red paper into the following: 6 wattles (the red thing that hangs from a turkeys chin).
  3. Hot glue the wattle onto the backside of the cheese compartment.
  4. Hot glue one small and one medium eye onto the back top edge above the cheese compartment.
  5. Now fold your diamond in half and hot glue right on top of the wattle.
  6. Then hot glue the paper legs onto the back of the cracker compartment.

Summertime Mason Jar Recipes

Have you ever made a meal in a mason jar? Yes, it is a thing! Mason jar meals are so easy to make. They are totally portable too, which makes them great for a lunch at work, a picnic, a day at the lake or beach, and tons more! These Summertime Mason Jar Recipes are perfect for summer days or any time of the year when you need a light, delicious meal on the go. They are super easy to make and store well in the fridge, making them the perfect party food. You won’t believe how many kinds of meals you can transform into jar form! What’s great about mason jar meals?

We love mason jar meals in our house because they are a fantastic way to pack lunch without a fancy thermos. Something about mason jars just screams summer. Mason jars look adorable, simple, and clean, not to mention they look fantastic in a photo. You can make these mason jar recipes ahead of time and store them in the fridge. If you are prepping them for a party, this is a great way to plan ahead so you’re not rushing to prepare food the day of the event! They look fancy enough for the ‘gram, and you’ll save money by making the meals yourself rather than buying from somewhere else.

How long do meals in a jar keep in the fridge?

It really depends on the ingredients you use. If your mason jar salad or meal has meat in it, it will last 3-4 days in your refrigerator. As for vegetarian mason jar meals, they should safely keep in the fridge for 4-5 days. Make sure you tighten the lid so that your meals in a jar stay as fresh as possible. You could make a batch on Sunday and eat them throughout the weekdays. Meal prep is a fantastic time and money saver!

The best mason jar meals follow a basic guideline — keep the sauces, dressings, and heavier ingredients at the bottom, and keep the lighter, drier ingredients towards the top. This prevents more delicate ingredients like greens from getting weighed down with dressing and sauces so that everything stays as fresh as when you assembled it. When you are ready to eat, simply shake up the ingredients until well combined and you are good to go!

How do I make a summer bucket list?

There are tons of different ways to create a summer bucket list! First, make a note of all the different kinds of activities you want to do. Then, you might want to consider making a calendar to organize your kids bucket list items.  We had a friend list all her summer bucket list ideas on a calendar with one bucket list activity per day. Alternatively, you can create a list on a dry erase board or a long sheet of paper and cross off your ideas as you get them done. You could even just keep a rough list in a journal and cross off ideas or add more throughout the summer. The kids are in for a memorable summer with these summer bucket list ideas!

How do you make a cute summer bucket list?

Get artistic with it! Wherever you write your summer bucket list down, make it cuter with little drawings and fun colors for each of the activities. Making your summer bucket list look nice will make you want to save it to cherish the memories you made. This is a great activity for the more creative and artistic kids. You could use glitter, paint, stickers, or any other art supplies to create a cute summer bucket list.

On a rainy day, Make Abstract Window Art from And Next Comes L. You could probably google some abstract artists for inspiration and make an art lesson out of it!

Make a PVC Sprinkler like this idea from Make Zine. I think dad might have to get involved in the construction, but it’ll make your yard the hot spot of the neighborhood this summer — or should I say cool spot!

Weave with the Kids. This is a really nice tutorial on Artbar Blog. We worked on some of these recently and the kids had a great time making them!
