Are you looking for a gluten-free recipe that everyone in the family will love? These Veggie Loaded Chickpea Nuggets are the BEST. Since this recipe makes 30 veggie nuggets, there is more than plenty to go around. Plus, it’s the perfect way to load up the kids with extra veggies, too!

how to make Veggie Loaded Chickpea Nuggets

We crave new and fun foods in our house. Maybe we’re a family of foodies, or maybe we just like to try new and exciting things. I really like this easy nugget recipe because the main ingredient is chickpeas and the kids literally have no idea.

It’s not that I’m trying to trick them, but let’s be honest. Getting the kids to eat more food with veggies is probably a daily struggle for most of us. Thankfully there are recipes like this Chickpea Nuggets that make this one less battle to have to fight.

Once the kids gobble them all down, it’s up to you to tell them that they’re just ate simple gluten-free chickpea nuggets. I say some things are just better left unsaid! Make sure to check out my Gluten-free Thanksgiving Recipes for even more yummy options.

How do you get rid of excess water from the shredded zucchini?

You’ll be amazed at how much water zucchini holds! Once you shred the zucchini, you need to get rid of as much of the water as possible. For this baking hack, I typically placed shredded zucchini in a paper towel give it a good squeeze and drain it out, which gets rid of a lot of it quickly.

What dipping sauces go well with chickpea nuggets?

This is all up to you and your dipping preferences! If you want a dip, get that sauce. Just be sure that whatever dip you’re using is gluten-free as well.

Some dips that people use include:

  • ketchup
  • ranch
  • hot mustard
  • salsa
  • honey mustard

And those are just a few. You can even make a combination dip of all your favorite flavors or eat it without a dip and enjoy them as is.

Tips for Making these Chickpea Nuggets

Even though this recipe is pretty simple to do, there is one tip to keep in mind as you’re making it.

The mixture is going to be wet and sticky, so be sure to wet your hands down if it’s sticking to your hands while you’re forming them. This will make it less sticky and easier to handle.

I think that you’ll find that once you make this simple nugget recipe, you’re going to put it on your meal planning radar asap to have it again.

Ham Roll Ups with Cream Cheese

Looking for an easy to make keto-friendly recipe that you can pull together when you’re running short on time? You’ll love these ham roll ups with cream cheese for not only lunches, but a quick energy snack, or appetizer that’s light and low carb.

Busy moms and students on the go will love this simple and flavorful recipe that leaves you feeling great about what’s on your plate.

Why Make Ham Roll Ups with Green Onion

Here are a few reasons why you should make these ham and cream cheese roll ups:

  • Low Carb – With only 3.9g of carbs per serving, this is an easy snack to add to your meal plan before you get too hungry and want something bad for you.
  • Healthy Snack – With only 2.5g of fat per serving, this is a delicious way to get in your green veggies with lunch or for a snack before dinner.
  • Simple & Quick – You can have these ham roll ups ready in under 10 minutes making them perfect when you’re busy at work or school.
  • Tasty Recipe – Feel free to mix in different flavors to your ham roll ups with green onion for a flavored cream cheese.

Diet-Friendly Tips for Ham Roll Ups

With tons of different ways to eat like Keto and Whole30, this simple recipe is easy to adapt to work for your way of eating.

Weight Watchers

You can substitute low-fat cream cheese and sour cream for a Weight Watchers friendly recipe.

Keto

Although I used a honey smoked deli ham, look for ham that doesn’t have the honey in the title if you’re looking for a low sugar, Keto, or low carb option. If you need more help with what’s allowed with Keto snacks, try this printable Keto cheat sheet.

Whole30

Finding a healthy, sugar-free deli meat you can eat on the Whole30 program can be tough. Since ham is a no no, try these ham and cream cheese roll ups with Applegate brand turkey instead of ham. The taste is great and you’ll be one step closer to your goals.

A quick, healthy and delicious lunch or snack no matter who you are or what your lifestyle is, this recipe is a better choice than the traditional pinwheel or roll ups with tortillas.

How to Make Ham Roll Ups

While this recipe calls for ham, feel free to use any deli meat of your choice. You can even wrap a leaf of Bibb lettuce around the outside for more green veggies or slice up some pickle to add to the middle of your roll ups.

Don’t be afraid to mix it up to your family’s taste, especially if your kids won’t eat ham roll ups with green onion.

Parmesan Crisps

I seriously love a salad but the side of something crunchy, salty and irresistible makes it even better! You will love these Parmesan Cheese Crisps. A few suggestions I have are use good quality cheese and a splat mat to prevent sticking and burning.

Ingredients:

  • 8 ounces good quality Parmesan cheese

Directions:

  1. Preheat your oven to 400 degrees.
  2. Finely grate the cheese into a bowl.
  3. Line a large baking sheet with a non-stick pad or Parchment paper.
  4. Add a heaping teaspoon of cheese to the pan until you have six mounds, evenly spread apart.
  5. Lightly press the mounds out until they are flat. Push in any stray pieces that stick out.
  6. Bake for 5-6 minutes or until the egdes are golden brown but not all the way to the center. They will look wet, and that’s ok. If you bake them until entirely brown, they will be bitter.
  7. Remove from oven. They will begin to firm up almost immediately.
  8. Carefully remove with a metal spatula and place on paper towels. Place another paper towel on top and gently press down to absorb the grease.
  9. If you’d like to mold them, be sure to do it before they harden, which happens quickly. You can free hand it, or use a large wooden spoon handle to roll them up.
  10. Once they are completely cooled and crisp, you can store them in an airtight container between layers of wax paper for up to three days. Keep them in the refrigerator.

Makes 25-30 crisps

I like to drag my Silpat (or parchment) off of the pan to speed the cooling process up and get another batch in, but it’s up to you if you want to encourage your readers to do that. The recipe works the either way, but that just makes it go quicker.

I like to drag my Silpat (or parcment) off of the pan to speed the cooling process up and get another batch in, but it’s up to you if you want to encourage your readers to do that. The recipe works the either way, but that just makes it go quicker.

Celebrate America’s favorite author on March 2nd with these easy Dr. Seuss Cupcakes. This Horton Hears a Who craft has an elephant trunk holding a pink clover to represent the speck of Whoville, a microscopic community only Horton can hear. “A person’s a person, no matter how small!”

Horton Hears a Who Craft with Food

Ready to celebrate the wonderful work of Dr. Seuss? We have fun and easy Dr. Seuss Cupcakes using the novel Horton Hears a Who! This food craft is perfect for little hands and such a yummy snack.

Three things to know before beginning this Dr. Seuss Cupcake Craft.

Who is Horton Hears a Who!?

Horton Hears A Who! is a popular children’s book written and illustrated by Theodor Seuss Geisel under the name Dr. Seuss. Published in 1954, the main character is an elephant named Horton. Horton is the only one who can hear Whoville,  a microscopic community on a speck of dust. Promoting the lesson of equality, Horton vows to protect the speck from this neighbors, declaring this Horton Hears a Who quote

“A person’s a person, no matter how small!“

Where is Whoville?

Recognize that name of Whoville? Whoville is a fictional microscopic town created by Dr. Seuss. Found on a pink clover or dust speck, Whoville appeared in the books Horton Hears a Who! and How the Grinch Stole Christmas!

Horton Hears a Who Clover

In the Horton Hears a Who! movie, Horton finds a speck on a pink clover. These tiny pink clovers hold the community of Whoville that Horton is trying to save. Similar to the clovers from Horton Hears a Who are the Lorax Truffula Trees. Truffula trees apparently give off the smell of butterfly milk. This is another place you see overlap in the Dr. Seuss books.

When is Dr. Seuss Day?

Dr. Seuss Day began in the 1990s by the National Education Association. Dr. Seuss Day is recognized annually on March 2nd to celebrate the birthday of Theodor Seuss Geisel – otherwise known as Dr. Seuss.

Now on to yummy cupcakes!

Dr. Seuss Cupcakes Ingredients

This Dr Seuss recipe yields 6 cupcakes, but it is very easy to multiply as needed. We bought prepared cupcakes from the grocery store, but you could also prepare cupcakes using a cake box mix.

  • 6 Prepared Cupcakes
  • 1 Container White Frosting
  • 6 DUM DUMS Lollipops (pink is best; Bubblegum or Watermelon flavors)
  • Edible Pink Glitter (we used CK Cake Decorating Sanding Sugar)
  • Black Food Coloring (we used AmeriColor Food Coloring)

Save this Dr. Seuss Cupcake recipe for later. Print your recipe and add it to your recipe box or recipe binder! This is my favorite Recipe Binder – I get tired of printing the same recipe over and over. A binder keeps me organized and gives me a place to store my recipes.
