According to Healthline.com, a ketogenic diet (often termed keto) is a very low-carb, high-fat diet that shares many similarities with the Atkins and low-carb diets. It involves drastically reducing carbohydrate intake, and replacing it with fat. The reduction in carbs puts your body into a metabolic state called ketosis.

With the reduction of carbs, cookies are not always the first thing that comes to mind. We love this three ingredient recipe using sweetener, peanut butter and one egg! Simple and easy!

Low Carb Keto Peanut Butter Cookies

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 – 3/4 cup Stevia or Erythritol
  • 1 egg

Low Carb Keto Peanut Butter Cookies

Directions:

  1. Preheat the oven to 350 degrees.
  2. Spray a baking sheet with non-stick cooking spray OR use a Silicone baking mat (this is important, I’ve found using sweetener causes the cookies to majorly STICK to the baking sheets).
  3. Combine the ingredients and place in the fridge for 15 minutes.
  4. Remove from fridge and use a small cookie scoop to roll into balls. Place about 2″ a part on your baking sheet and use a fork to make a criss-cross pattern in each cookie.
  5. Bake for 10-12 minutes.
  6. The cookie will be very soft but will firm up. As long as they aren’t burning you can leave them in a few minutes longer. My oven bakes hot so I have to remove around 10 minutes.

This recipe makes approximately 24 small cookies.

        If I shared the net carbs, it would depend on the ingredients you pick off your grocery shelf and be inaccurate. To calculate the net carbs in whole foods, subtract the fiber from the total number of carbs. To calculate the net carbs in processed foods, subtract the fiber and a portion of the sugar alcohols.

    If you bake them on a dark nonstick pan with the small indentations, they do not stick at all.
