Eggs in a Hole Breakfast Recipe


Hello breakfast! This is an easy breakfast to make for yourself, the spouse or the kids before beginning the day.  It takes about 10 minutes and is a filling, hearty breakfast.  Serve with a slice of ham and some orange juice and enjoy!

Ingredients:

  • Eggs
  • Bread
  • Butter cooking spray (or use a slice of butter)*
  • 5″ circle cookie cutter
  • 2″ circle cookie cutter
  • Salt
  • Pepper

* I also love my Copper Nonstick Fry Pan and you could substitute butter all together!


Eggs in a Hole Breakfast Recipe

Directions:

  1. Use your large 5″ circle cookie-cutter to cut out a circle from each slice of bread.
  2. Use your smaller 2″ circle cookie-cutter to cut out a smaller circle from your larger circle.
  3. Spray a large pan with a nonstick cooking spray (or butter) and lightly spray your bread loops.
  4. Turn your burner to medium-high heat.
  5. Place your bread loops into your large pan and cook each side for about five seconds so it is lightly toasted.
  6. Carefully break the egg open into each bread loop and let the egg cook thoroughly (until the yolk is soft and the white is cooked).
  7. Carefully flip your egg in a hole toast over for about a minute to ensure the egg is cooked.
  8. Sprinkle with salt and pepper and enjoy!

Note: Eating raw/undercooked eggs can significantly increase your risk of developing a food borne illness.

Scale
  • Eggs

Instructions

It seems like the last school bell just rang… okay, let’s be serious. Sometimes there is nothing short about summer. Sometimes the days go slow. Regardless of if you feel like you just heard the last bell or it was ages ago, we all are getting ready for back to school.  Not too long ago we shared with you our Back to School Kid Snack Ideas. We have one more and this one is easy, tasty, and fun!  Enjoy this Graham Cracker Pencils recipe. Let us know how it goes and how much your little one loves it!

Ingredients:

  • Graham crackers
  • Wilton pink candy melts
  • Wilton white candy melts
  • Miniature chocolate chips


Directions:

  1. Lay out a piece of parchment paper before you get started.
  2. Carefully break your graham crackers in half lengthwise.
  3. Use a pair of clean kitchen scissors to cut the tip of the graham cracker into a point.
  4. In two separate microwave safe bowls, heat 1 cup of each color candy melt on 50% power for 2-3 minutes, stirring every 30 seconds until melted.
  5. Dip the pointed end of the graham cracker into the white chocolate and press a chocolate chip onto the point with the pointed part of the chocolate chip facing down.
  6. Then dip the flat end of the graham cracker into the pink melted chocolate, spread evenly with a knife and place onto your parchment paper to harden.

It’s Trick-or-Treat time! I don’t know about you but, I’ll take the treats over tricks any day! These Monster cupcakes are such a cute treat and will be perfect for your Halloween bash! They’re so easy to make and you can decorate them as cute or scary as you want. Make a tray of these little monsters and let the kids go nuts decorating them with various candies or keep it simple with eyeballs. Either way they will be a hit!

Ingredients:

Cupcake Ingredients:

  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1 C sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 large egg whites
  • 1/2 tsp vanilla extract
  • 1/3 C buttermilk
  • purple gel food coloring

Frosting Ingredients:

  • 4 C powdered sugar
  • 1 C unsalted butter, room temp
  • 4+ TBSP of heavy whipping cream
  • Purple gel food coloring
  • Candy eyes

Directions:

Cupcake Directions:

  1. Preheat oven to 350 degrees. Line cupcake pan with paper liners.
  2. Sift flour, baking powder, baking soda and salt in a medium bowl. Sit aside.
  3. Using an electric stand mixer whip the butter and sugar until pale and fluffy in the mixing bowl.
  4. Add in an egg, then the egg whites one at a time. Add the vanilla with the second egg white.
  5. Using a liquid measuring cup whisk the buttermilk and purple gel food coloring together.
  6. Start to mix 1/3 of the flour mixture alternating with 1/2 of the buttermilk mixture. Mix after each addition only until just combined.
  7. After all ingredients are blended scoop the batter into the paper lined cupcake pan until each tin is 3/4’s filled.
  8. Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
  9. Allow cupcakes to cool in cupcake pan for 10 minutes.
  10. Remove cupcakes from pan and place each on a wire rack until completely cooled.

Frosting Directions:

  1. Cream the butter and powder sugar until it looks creamy.
  2. Add purple gel food coloring. Stir until the color in fully blended throughout all of the frosting.
  3. Test to see if the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon it is ready if not then….
  4. Add more powder sugar 1/2 C at a time…. mix well.
  5. If ready scoop the frosting into the pastry bag with a large star tip.
  6. Twist the open end of the pastry bag to push the frosting to the tip.
  7. Frost from the cupcake edges inward to the center of the cupcake with a straight down with the tip.
  8. Position the candy eyes on the top of the frosted cupcake.

I am obsessed with Nutella and finding anyway I can make it without feeling too guilty is always exciting to me. We blended some of our favorites – Pillsbury Crescent Rolls, bananas, Nutella and seasoning for this perfect dessert (or breakfast – whatever your pleasure!) This recipe includes easy prep, quick baking, and will be a go-to snack you make over and over!

Ingredients:

  • 1-8ct Pillsbury Crescent Rolls
  • Nutella
  • 1 Large Banana
  • 1/2 Cup Sugar
  • 1 Tablespoon Cinnamon

Directions:

  1. Preheat your oven 375° and line a baking sheet with parchment paper.
  2. Mix your cinnamon and sugar together in a small dish.
  3. Lay your crescent dough on your parchment paper.
  4. Spread about a teaspoon of Nutella on each crescent.
  5. Slice your banana into about 1 1/2″ pieces and place one piece on top of the Nutella on the wide end of the crescent.
  6. Roll your dough from the wide end to the small end and pinch together the ends.
  7. Sprinkle on Cinnamon and Sugar.
  8. Bake for 10-12 minutes.
  9. Enjoy while warm

Lobster Rolls are one of those meals that you typically have while you’re at a restaurant and craving a good comfort meal. Although, you may only have them when you’re out of town, close to the coast. Either way, Lobster Rolls are really easy to make so, you can enjoy them at home anytime with this easy, delicious recipe!  The slightly sweet and buttery lobster paired with the tangy lemon, creamy mayo and crunchy celery and spices topped on a buttery toasted bun. Perfection! You’ll think you were in Maine! Enjoy!

Ingredients:

  • 2 (7 oz.) Lobster Tails
  • 4 Hotdog Buns (you can also use slider buns)
  • ½ Cup Spectrum Canola Mayonnaise
  • ½ Cup Celery
  • 1 Garlic Clove
  • 1 tbsp. Fresh Squeezed Organic Lemon Juice
  • 4 tbsp. Melted Organic Butter
  • ½ tsp. Simply Organic Onion Powder
  • Salt & Pepper

Directions:

  1. Preheat oven at 250 degrees F.
  2. Fill a medium pot about 2/3 of the way with water. Bring to boil. Add lobster tails. You will notice that the shells will begin to turn red almost immediately. Boil for approximately 8-10 minutes. The lobster tails will become slightly curled. Remove lobster tails from water. Set aside on cutting board and let cool.
  3. Dice the celery and garlic clove into small pieces. Slice the lemon in half. Set aside.
  4. Using scissors, cut down the center of each shell. With your fingers, pull the shell away until it breaks away from the meat. Do this until the shell is completely removed from the meat. Discard shell. Chop the lobster into small pieces.
  5. Add 3 tbsp. butter to small microwavable bowl. Microwave for 1 minute or until butter is melted.
  6. Toss chopped lobster in butter. Add onion powder, chopped garlic, lemon juice, chopped celery and mayonnaise to bowl. Stir well with spoon. Add salt and pepper to taste.
  7. Toast 4 buns in oven at 250 degrees for 3-4 minutes. Remove from oven.
  8. Add lobster mixture to each bun.
  9. Heat 1 tbsp. butter in small microwavable bowl. Take an unused paintbrush and brush the melted butter onto each bun. Not only will this increase its flavor value, but it will glisten!
  10. Now grab a blanket and take your picnic outside! Enjoy one of the most beloved foods of every seaside resident – best served with tortilla or potato chips and an ice-cold beer or a nice pop!

Kids Healthy Snack – Woodland  Owl Bagel


This Kids Food Craft is a Hoot! We love the concept and it’s a great idea for an after-school snack! The ingredients are healthy and you don’t have to feel guilty with this yummy treat. Enjoy!

Ingredients:

  • Bagels (or rice cakes)
  • Peanut butter
  • Apple
  • Banana
  • Blueberries
  • Shaved almonds
  • M&M’s


Kids Healthy Snack - Owl Bagel

Directions:

  1. Wash your blueberries and apple and slice your apple into full circles and cut each circle in half.
  2. Slice your banana into circles.
  3. Toast your bagel if desired.
  4. Slice your bagel in half and spread some creamy peanut butter on each half.
  5. Place two banana onto the top center of your peanut butter bagel.
  6. Place one apple halve onto each side of the bagel with the peel of the apple facing outwards.
  7. Place one almond in between and under the banana eyes.
  8. Now arrange 10 M&M’s under the almond starting with a tow of 3, then 4, and 3 on the bottom.
  9. Dip the bottom of a couple blueberries into peanut butter and one on the center of each banana.
