Morning Egg & Asparagus Breakfast

Rise and Shine! This dish will change the way you look at vegetables in the morning. A fried egg atop a bed of delicious asparagus, drizzled with sauce is just what you need to get your morning going. Asparagus is loaded with fiber, folate, vitamins A, C, E and K combined with the protein of an egg, you’ll be off to a great start! We might suggest (if you are not watching carbs) you add an english muffin or consider bacon.

Ingredients:

  • 4 to 5 Stalks of Fresh Asparagus
  • 1 tbsp Butter
  • 1 Egg
  • Salt and Pepper

Directions:

  1. In a small skillet add in stalks of asparagus and a little bit of water to softened the stalks
  2. Once softened remove the asparagus and place on a plate.
  3. Leave remaining water in the skillet, add in 1 T of butter. Stir constantly and make sure it foams up a bit. Don’t let it burn otherwise it’ll have a funny taste. The foaming is what will help the sauce thicken up. As you are stirring add in desired amount of salt and pepper.
  4. Once sauce has thickened you can pour it onto your asparagus or you can add it to a bowl and wait to pour it over the fried egg.
  5. Fry up the egg in the skillet and then place on top of the steamed asparagus. If sauce hasn’t already been poured go ahead and do so now.
  6. Enjoy with a glass of cold orange juice.

    My family and I have recently switched to a very low refined carb and very low refined sugar diet. Breakfasts are sometimes the hardest meal of the day, and I often resort to eat leftover salad for breakfast! This is a great idea to add into the mix. I’ll be pinning for later reference.
