Recently, I got to enjoy a package of Mission Flour Tortillas. Mission Flour Tortillas contain 0 grams of trans fat per serving and are cholesterol free. Mission’s flour tortillas are available in small (6″), medium (8″) and large (10”) sizes in major grocery stores nationwide. I must say that tortillas are some of my favorite foods – I love them for breakfast with eggs and cheese, for lunch with lunchmeat and veggies and for dinner with various Mexican recipes. They are cute too for kids lunches – use a cookie cutter to make a cute sandwich or make pinwheels for some excitement. I also appreciate how they tend to last longer than bread.
I decide to feed my family a rather large enchilada meal. The recipe called for 10 enchiladas. When I opened the package, first I realized two had been stolen by my husband who had an afternoon craving for a ham and cheese (so they make good sandwiches too!) Second, I realized how surprisingly soft and fresh they felt. I wanted to steal one too for me, but that wold cause us to be down to seven enchiladas! I made the recipe on a Sunday afternoon – it is usually when I make my larger meals. I must say, though, that this was an easy and quick recipe for a weekday too.

Enchiladas
2 lbs ground beef
1 small can of green chilies
1 pkg of taco seasoning
16 oz sour cream
2 cans cream of chicken
1 8oz bag of shredded cheddar cheese
1 pkg of Mission flour tortillas (I use 10 ct)
Brown ground beef and drain the juice. Add the taco seasoning according to package directions. Mix the seasoned meat with half of the chilies. Stir and set aside. In a bowl mix sour cream, cream of chicken and the rest of the chilies. Add half the mixture to the bottom of a 13×9 greased dish/pan. Place the seasoned meat on a the tortillas, roll, and place individually on top of the sour cream mixture. Once all the tortillas are on the plan, place the remaining half of the sour cream mixture on top. Place cheddar cheese on top and cook for 25 minutes in a preheated oven at 450 degrees.
