Taco Tuesday is HUGE in our home. In order to appease everyone (because I do have the one child that does not like Mexican) I try to diversify the menu.  Below is a list of 52 week of recipes completing a year of Taco Tuesday. Each recipe is unique so you shouldn’t have to worry about the family tiring of the same old taco recipe. Mexican Stuffed Halloween Pumpkin Peppers

We have so much fun with our Halloween Food Crafts, that we had to make more! Most recently, take a look at this Halloween Dinner Entree – Mexican Stuffed Halloween Pumpkin Peppers with chicken, black beans and rice.

Mexican Chicken Ingredients:

  • 2 Raw chicken breasts
  • 1 teaspoon cumin
  • 1 teaspoon garlic salt with parsley
  • 1 teaspoon chili powder
  • 1/2 teaspoon pepper
  • 1 can diced tomatoes with green chilies (Rotel is great!)

Mexican Chicken Directions:

  1. Place your chicken in the bottom of your slow cooker.
  2. Sprinkle your cumin, salt, chili powder, and pepper on top of your chicken.
  3. Pour your can of tomatoes on top of your chicken.
  4. Cook on high for 4-6 hours.
  5. Shred your chicken and place it back into the tomato sauce (Rotel).

Ingredients

Scale

Easy Fried Rice Recipe

Do you love hibachi? Is there a takeout place where you spend too much money each week? Do you ever wonder what is inside that rice plate you just can’t get enough of? We wanted to take your love of takeout to the table at home with this EASY fried rice recipe. We suggest you pair with chicken or an iceberg salad with ginger sauce!

Ingredients:

  • 4 cups Cooked Rice
  • 3 tbsp Butter
  • 1 Onion, diced
  • 12 oz Frozen Peas and Carrots
  • 1/2 cup Soy Sauce
  • 3 beaten Eggs

Directions:

  1. Melt butter in large nonstick skillet.
  2. Saute onion until transparent.
  3. Add peas and carrots and heat until thawed and tender.
  4. Push vegetables to one side and scramble eggs in other side until set.
  5. Mix eggs and vegetables together.
  6. Add soy sauce and stir to mix.
  7. Add rice gradually to keep it from clumping and ensure it’s well mixed.
  8. Heat until hot and serve.

Chocolate Peppermint Winter Cocktail

This cocktail takes Chocolate and Peppermint to a whole new level! Combine Baileys, Kahlua Mocha, Vodka and Peppermint and you’ve got yourself Winter Goodness in a glass! Garnish with crushed Ghirardelli Peppermint Bark – Tasty! What a wonderful treat to serve at a dessert and coffee party or a yummy addition to any brunch table. However you serve it, your guests will be delighted!




Ingredients:

  • 2 oz. Baileys Original
  • 2 oz. Kahlua Mocha
  • 2 oz. Smirnoff Vodka
  • 1 drop Peppermint Extract
  • 4 oz. Half & Half
  • Simple Syrup (optional)
  • Ghirardelli Peppermint Bark

Directions:

  1. Using a spoon, smash peppermint bark into tiny pieces.
  2. Add a small amount of water or simple syrup to a paper plate. Dip the rim of your glass in water/simple syrup and then dip into peppermint bark pieces, slowly covering the rim of your glass.
  3. Using a shaker, combine Baileys, Kahlua, Smirnoff, peppermint extract, and half & half. Shake. Pour into glass. Enjoy.

Chocolate Peppermint Winter Cocktail

Ingredients

Scale
  • 2 oz. Baileys Original
  • 2 oz. Kahlua Mocha
  • 2 oz. Smirnoff Vodka
  • 1 drop Peppermint Extract
  • 4 oz. Half & Half
  • Simple Syrup (optional)
  • Ghirardelli Peppermint Bark

Instructions

  1. Using a spoon, smash peppermint bark into tiny pieces.
  2. Add a small amount of water or simple syrup to a paper plate. Dip the rim of your glass in water/simple syrup and then dip into peppermint bark pieces, slowly covering the rim of your glass.
  3. Using a shaker, combine Baileys, Kahlua, Smirnoff, peppermint extract, and half & half. Shake. Pour into glass.

We are loving this winter recipe! Stuffed Spaghetti Squash Lasagna isn’t only easy on the eyes with all of the rich colors, it’s low carb and delicious! You can use two different kinds of meat to create a healthy meal that is packed with protein and veggie goodness and will be gobbled up by the pickiest eaters. It’s even perfect to make a double or triple batch and package the leftovers to reheat for lunch. We know your family will love this as much as our does!

Stuffed Spaghetti Squash Lasagna

Yields: 4 generous servings
Total Time: 2 hours

Ingredients:

  • 5 pounds spaghetti squash (2 medium-sized squash)
  • 1 teaspoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef (or Turkey Sausage)
  • 1 ½ teaspoons salt, divided
  • 1 (15 oz) can crushed tomatoes
  • 1 (15 oz) container of ricotta cheese
  • ¼ cup parsley, chopped
  • 1 cup shredded mozzarella
  • Chopped parsley or basil to garnish

Directions:

  1. Preheat oven to 400 degrees F. Cut the squashes in half long ways and scoop out the seeds. Lay them cut-side down in a roasting pan or other baking dish, and add approximately one inch of water. Roast for 45-60 minutes, until soft when poked with a fork.
  2. While the squash is roasting, warm the olive oil in a high-sided skillet or saucepan over medium-high heat. Stir in the onions and cook until translucent, approximately 5 minutes. Stir in the garlic and cook until fragrant, 30 seconds. Add the ground beef and 1 teaspoon of salt. Cook until well-browned, approximately 5-8 minutes. Stir in the crushed tomatoes and bring to a simmer. Continue simmering the sauce until the squashes are ready, 5-20 minutes. Taste the sauce and add more salt if desired.
  3. Use a fork to shred the inside of the squash, leaving about a half-inch of squash left in the shell. Mix the shredded squash into the tomato sauce. In a separate bowl, mix together the ricotta cheese, parsley, and ½ teaspoon of salt.
  4. Wipe out the roasting pan and arrange the squash shells inside, like bowls. Use a spoon to spread ½ cup of the ricotta evenly over bottom of each shell. Spoon a ¼ of the tomato-squash mixture of the top of the ricotta. Top with another layer of ricotta and tomato sauce, using the remainder of each.*
  5. Bake shells for 15 minutes at 400 degrees F. Sprinkle the shredded mozzarella over the tops of the squashes and bake for another 15-20 minutes, until the cheese is melted. For a more golden top, broil the squashes for up to 2 minutes.
  6. Garnish with parsley or basil and serve with a green salad and garlic bread. Leftovers will keep for up to 1 week in the refrigerator.

*If making this recipe in advance, cover the shells at this point with foil and refrigerate for up to 24 hours. Add an extra 10 minutes to the cooking time.

Notes: This recipe can be made into a casserole version (leaving out the shells):

Casserole Version: In a 2-quart baking dish, layer 1/3 of the tomato-squash mixture into the dish and top with half of the ricotta. Continue building layers, ending with the last third of the tomato-squash mixture. Bake for 15 minutes, and then sprinkle with mozzarella. Bake for 15-20 minutes, until bubbly.
