Pumpkin Oatmeal Donuts

When pumpkin season hits, we get rather excited. Pumpkin, Pumpkin everything!  These Pumpkin Oatmeal Donuts are sure to please and are not too difficult to make. You will want to make sure you have a donut baking pan before getting started.

Ingredients:

  • ¾ Cup milk
  • 1½ Cups flour
  • ½ Cup oatmeal
  • ½ Cup brown sugar
  • 2 Eggs
  • 2 Tbsps peanut butter
  • ¼ Cup maple syrup
  • 1 Cup canned pumpkin
  • 1 Tsp ground cinnamon
  • 2 Tsps baking soda
  • Pinch of salt
  • Cinnamon-sugar mix, to taste
  • Sugar glaze, for garnish

Directions:

  1. Preheat the oven to 350 degrees.
  2. Grease a donut baking pan with non-stick cooking spray.
  3. In a saucepan over medium-low heat pour the milk and add the sugar. Cook until dissolved (about 4 minutes).
  4. In a bowl incorporate the remaining donuts ingredients (flour, oatmeal, eggs, peanut butter, maple syrup, pumpkin, cinnamon, baking powder, and salt).
  5. Then gradually incorporate the warmed milk, beat until thick.
  6. Fill the donut pan with the batter.
  7. Place in the oven and cook for 12 – 15 minutes, or until the donuts are well cooked.
  8. Remove from the oven, and garnish with the cinnamon sugar mix and the sugar glaze.
  9. Serve and enjoy.

Tip: Use gluten free flour for a gluten free option.

Chocolate Dipped Cookie Dough Hearts

Is anyone else a cookie dough eater? What is it about this sweet treat. Often my cookies get eaten raw before the make it to the oven to bake. We have the perfect treat for the cookie dough and chocolate lover! These Cookie Dough Hearts are the perfect treat. Serve for Valentine’s Day or any ole’ reason. Enjoy!

Chocolate Dipped Cookie Dough Hearts:

Yields: 25 – 35 hearts (may vary depending on size of cookie cutter used)
Total Time: 20 minutes + 30 minutes cool time = 50 minutes

Ingredients:

  • 1 cup flour
  • 2 tablespoons flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • 6 tablespoons granulated sugar
  • 6 tablespoons brown sugar
  • ½ teaspoons vanilla extract
  • 2-3 tablespoons water
  • 1 cup semi-sweet chocolate chips
  • 2 cups milk chocolate chips
  • Optional: decorative sprinkles


Directions:

  1. Combine flour, baking soda, salt, sugars, softened butter and vanilla extract in a large bowl. With clean hands, work the dough. Add 1 cup semi-sweet chocolate chips and continue to work the dough until chocolate chips are incorporated. One tablespoon at a time, add water if needed to get the desired consistency.
  2. Lay a piece of parchment paper on a large flat surface (baking sheet or cutting board works well). Place the dough onto the parchment paper and spread it out evenly until the thickness reaches approximately 1/2”.
  3. Place the cookie dough in the fridge to cool for 20 minutes.
  4. Once cooled, use a heart-shaped cookie cutter to cut out hearts from the dough (smaller cookie cutters work best to make bite sized pieces). Combine the scrap dough continually to make as many hearts as possible.
  5. Once all dough is used, place 2 cups milk chocolate chips in a microwave-safe bowl. Microwave on high for 15-20 seconds, stir and continue this process until chocolate is completely melted. Place one heart in the chocolate at a time and completely coat. Using a fork lift the cookie dough heart out of the chocolate – tapping the side of the bowl to ensure excess chocolate drips off. Place the chocolate covered heart back on the parchment paper, and quickly add sprinkles (if desired) while chocolate is still melted. Continue this process until all cookie dough hearts are covered in melted chocolate.
  6. Chill in the fridge for 10 additional minutes and then serve.

*Cookie dough hearts should be stored in the refrigerator

You can either have Elf watch (if you don’t touch elf), Elf participate, or have Elf with them when the kids get up in the morning. This recipe is good for minis or larger cookies- your choice! If you are making minis, we think it’s a fun idea and they make a lot – about 80 cookies, that is no typo.  Enjoy!

  • 8 oz softened cream cheese
  • 4 cups powdered sugar
  • 1 teaspoon almond extract

  3. Then add in your almond and vanilla extract and egg then mix.
  4. Now mix in your flour and salt.

  6. Lay down a piece of parchment paper then flour a rolling pin and roll your dough out, keep a little thick.
  7. Use a small 1-2″ cookie cutter to cut your round circles out.
  8. Use a spatula to transfer your dough to your baking pan.
  9. Bake for 8-10 minutes, color will be light.
  10. Let your cookies cool on your pan.
  11. Frost and top with sprinkles

  2. Now mix in your powdered sugar one cup at a time.
  3. Then mix in your almond extract

What is Elf on the Shelf?

Elf on the Shelf is a Christmas Tradition. The tradition has a book and a elf doll. The book is poetic and in rhyme sharing the purpose of the Elf’s visits. The Elf visits each Thanksgiving. He/She goes and returns from the North Pole each evening. Every morning he can be found in a new location in the house. The Elf has been found in the refrigerator, fishing in the toilet, writing messages on the mirror or hanging from the lights. It is VERY IMPORTANT, the Elf is not touch each evening or his Christmas magic will be lost! Each family is able to name their special elf. The elves return to their home (Santa’s North Pole Work shop) every Christmas Eve. An Elf’s Story can also be found on DVD

Recently we moved from Florida (my home state of 30+ years) to the Washington, DC area. This put us away from extended family in in a while new world of focusing on our core family. My girls are in the early stages of elementary school and are beginning to understand the real meaning of Christmas. Santa, and additionally the Elf on the Shelf, have gone out the window (yes, he no longer comes down the chimney) and my focus is now on finding activities during the Christmas season that reflect not only family, but reason for the season – The Birth of Christ.  One of the ways we have gotten back to the basics is through our family Advent Calendar.
