Summer Strawberry Salad with Watermelon

The summer weather has hit and we are feeling the temperatures. In in effort to find the perfect summer salad, I wanted to share with you this delicious recipe. Blended with strawberries, watermelon, onions, tomatillos, olive oil, vinegar and mint, this salad is the perfect about of sweet, crunch and flavor! We think you will love it as much as our family!

Ingredients:

  • About 8-10 fresh washed strawberries
  • 2 small tomatillos
  • 1 small red onion
  • 2 Cups sliced seedless watermelon
  • 10 mint leaves
  • 3 Tablespoons vanilla bean balsamic vinegar (or regular)
  • 3 Tablespoons extra virgin olive oil
  • Salt and pepper to season
  • 1/4 teaspoon diced garlic

Directions:

  1. Wash and dry your fresh vegetables.
  2. Slice your strawberries, tomatillos, and watermelon into bite-size pieces.
  3. Dice your red onion.
  4. Cut your mint leaves into long skinny strips.
  5. Mix your fruits, vegetables, and mint together.
  6. Now toss with your vinegar and olive oil.
  7. Season with salt and pepper and top off with a little extra mint

Rainbow Popsicle Soap Recipe

How much joy would these bring to bath time? These Rainbow Popsicle Soaps are adorable and perfect for making scrubbing up fun! Layer bright colors, mix in a fun scent (like cucumber melon) and enjoy your homemade soap. These would also be great party favor ideas for a party or even nice to gift at a birthday party for someone on a budget!

Materials:

  • Cocoa butter block soap
  • Pink, orange, green, blue, and purple food coloring
  • Soap scent (we used cucumber melon, also consider an Essential Oil* like Lavender)
  • Small spray bottle of rubbing alcohol
  • Popsicle mold (also check the dollar store)
  • Wide craft sticks
  • Small sauce pot
  • 5 empty clean soup cans
  • Knife

*See where I get my Essential Oils.

Directions:

  1. Cut your soap block into about 10 large ice cube size pieces.
  2. Place 2 soap cubes in each tin can.
  3. Fill your pot about 1/4 way with water and bring to a boil on your stove.
  4.  Place one can in the boiling water to act as a double boiler.
  5. Stir occasionally for about 5 minutes until melted.
  6. Add in 1 very small drop of your pink food coloring and 1/8 teaspoon of your soap scent (any more food coloring will stain your hands when using).
  7.  Spray a very small amount of a non stick cooking spray inside your molds.
  8. Pour your pink melted soap 1/5 way up in your Popsicle mold, spray once with alcohol to prevent air bubbles.
  9. Freeze for 5 minutes, then stick Popsicle stick into the center.
  10. While your soap is in the freezer, place your next tin can with 2 soap cubes into the boiling water.
  11.  Add 1 very small drop of orange food coloring and 1/8 teaspoon soap scent, stir occasionally for 5 minutes.
  12.  Once melted, pour over your pink soap another 1/5 way and spray with alcohol.
  13. Freeze for 5 minutes.
  14.  Repeat steps 4-6 with each color.
  15. Once hardened, stick a Popsicle stick into each side of the soap to loosen, then pull out.
  16. Please supervise children around soap and while using soap as this smells and looks yummy but is still soap!

Cotton Candy Cupcakes

Not only are these bright and fun just like a cloud of cotton candy, but they taste just like cotton candy! We used cotton candy flavoring and food coloring to make these cupcakes perfect for a birthday party, after school celebration or any ole reason to have something yum!

Ingredients:

  • 1 1/2 Sticks softened salted butter
  • 2/3 Cup granulated sugar
  • 1 Tablespoons Lorann cotton candy flavoring
  • 2 Eggs
  • 1/2 Cup milk
  • 1 1/2 Cups all purpose flour
  • 1 1/2 Teaspoons baking powder
  • 1 can of vanilla frosting
  • Pink, blue, and purple gel food coloring

Materials:

  • Large mixing bowl
  • Baking cups
  • Cupcake pan
  • Mixing bowl
  • Hand or stand mixer
  • Measuring cups
  • 3 small mixing bowls
  • 4 decorating bags
  • Decorating tip kit-large star tip

Directions:

  1. Preheat your oven to 350 degrees.
  2. Line a cupcake pan with cupcake liners.
  3. In a large mixing bowl beat together your butter and sugar until it has a whipped texture (about 1 minute).
  4. Mix in your eggs and milk.
  5. Now mix in your flour and baking soda.
  6. Once your batter is mixed, mix in your cotton candy flavoring.
  7. Separate your batter into 3 separate bowls, add 2 drops of food coloring to each bowl to make 3 separate colors.
  8. Scoop in 1 Tablespoon of each color batter to each baking cup.
  9. Bake for 20 minutes then let cool.
  10. While your cupcakes are cooling, separate your frosting to 3 separate bowls, and add 2 drops of food coloring to each bowl to make 3 separate colors.
  11.  Scoop each color into a different decorating bag and cut the tips off the bags.
  12. Remove the ring from your coupler base and drop the coupler into a empty decorating bag, cut the tip off the bag, and place your star tip onto the coupler, then place the ring back onto the bag.
  13. Place your 3 frosting filled bags into the empty bag and twist the top.
  14. Starting on the outside of your cupcakes, begin frosting in a swirl to the center of your cupcakes

Campfire Cinnamon Rolls Baked in Oranges

We have shared with you some great camping recipes including our favorite – the S’mores Campfire Cones! With this recipe we wanted something for breakfast and thought to combine the sweet juices of an orange and the amazing flavors of a cinnamon roll. This recipe includes ONLY TWO INGREDIENTS so there isn’t much to pack for your camping trip. It can also be made in the oven, just follow the steps on the outside of your cinnamon roll package. We think it is something you will have out at the campground and also on a lazy Sunday morning at home!

Ingredients:

  • Pillsbury Grands Cinnamon Rolls
  • 6 Large navel oranges

You will also need…

  • Spoon
  • Knife
  • Aluminum Foil

Directions:

  1. Cut your oranges in half.
  2. Use a hand juicer to juice your fresh oranges or scoop out the insides of your oranges with a spoon and eat.
  3. Open up your cinnamon rolls and place one dough inside of each orange.
  4. Press your cinnamon roll inside your orange.
  5. Wrap in aluminum foil and place on your fire for 25-30 minutes or until your dough is cooked.
  6. After cooked, place a spoonful of icing on each cinnamon roll.
  7. Now enjoy a fresh orange cinnamon roll!

Honeydew Cucumber Salad

This Summer salad combines fruits and vegetables and will delight your taste buds! The crispness of the cucumber, pop of red onion and sweetness of melon will be perfect with BBQ, shrimp, steak or by itself. Simply chop, toss and mix into the tangy dressing, it’s best served chilled! Full of naturally good ingredients it will fit with many dietary requirements. Take to your next gathering or picnic for a unique side dish that everyone will enjoy!

Salad Ingredients:

  • 1 Honeydew Melon
  • 1 Cucumber
  • 1/2 Red Onion
  • 2 tbsp chopped Fresh Dill

Salad Dressing Ingredients:

  • 2 tbsp Lemon Juice
  • 1/4 cup Olive Oil
  • 1 tsp Honey
  • Salt and Pepper to taste

Directions:

  1. Whisk together dressing ingredients until blended. Set aside.
  2. Cut melon. Remove seeds and rind and cut into chunks, Add to bowl.
  3. Cut cucumber into chunks and add to bowl.
  4. Dice red onion and add to bowl.
  5. Add dill and dressing and toss to mix.
  6. Chill and Serve (you can consider holding dressing off until serving.)

Simple & Southern Strawberry Sweet Tea

We love the south! With the south comes some amazing sweet tea – all sorts of sweet tea (including our favorite Peach Iced Tea!)  Love fruit, try mixing strawberries with iced tea. This is a very simple tutorial on how to get the most amazing Strawberry Sweet Tea – enjoy!

Ingredients

  • 3 cups sliced Strawberries
  • Juice from 1 Lemon
  • 5 regular Tea Bags
  • 1 cup Sugar
  • 2 quart Water


Simple & Southern Strawberry Sweet Tea

Directions

  1. Steep tea bags in 1 quart boiling water for 5 minutes with 1/2 cup sugar.
  2. Puree strawberries in food processor until liquified.
  3. Remove tea bags and add remaining 1/2 cup sugar.
  4. Add strawberry puree and lemon juice and stir well.
  5. Strain liquid through cheesecloth or fine sieve.
  6. Add remaining quart of water and chill.
  7. Serve over ice.

Nachos are crunchy, gooey and sprinkled with yummy toppings. Here’s our sweet version blending Nachos and Dessert in one! The assembly is easy and the kids will love to help. Drizzle crunchy apple slices with caramel, add chopped nuts and chocolate chips. Toffee bits would be perfect on these too! Make them for your next potluck or play date for a fun twist on a sweet treat. Enjoy!

Ingredients:

  • 15 Caramels
  • 1 tsp Water
  • 3-4 Apples
  • 1/4 cup Chopped Nuts
  • 1/4 cup Mini Semisweet Chocolate Chips

Directions:

  1. Core apples and cut into 1/4″ slices.
  2. Heat caramels and water for 30 seconds and stir. Heat in addtitional 5 second increments, stirring in between until melted and smooth.
