Sweet Fried Banana Bites

Growing up, these were always a treat for my Cuban Family – fried bananas. We actually never used it as a dessert, it was a side to our entree almost every meal. The slightly crunchy outside wrapped around a soft, tangy, almost melted banana. It’s true comfort food. This version gives it a sweet twist that is perfect as a treat for after your meal. We might suggest you play with the recipe adding brown sugar or cinnamon – so many flavors you can consider blending. Serve with caramel sauce, chocolate sauce or ice cream. Your family will love them!

Ingredients:

  • 3 Bananas
  • 1 cup Pancake Mix
  • 1 cup Milk
  • 1 Egg
  • 1/4 cup Powdered Sugar
  • Vegetable Oil (for frying)

Directions:

  1. Slice bananas into 1/2″ slices.
  2. Combine pancake mix, milk and egg. Beat until blended.
  3. Line a plate with paper towels. Set aside.
  4. FIll a pan with oil 1/2″ deep and heat to 350 to 375 degrees.
  5. Dip each banana slice in batter and allow excess to drip off.
  6. Place in oil and fry for about 1-2 minutes on each side or until golden brown.
  7. Remove to prepared plate.
  8. Dust finished bites with powdered sugar.
  9. Serve with caramel sauce, chocolate sauce or ice cream.

Ingredients

Scale
  • 3 Bananas

Love trying new recipes? Check out this Copycat 3 Musketeers Candy Bar. You will not believe how easy this sweet treat is to make! It uses 2 ingredients and is so incredibly smooth and comforting you’ll wonder how you haven’t been making them for years! We love the idea of being able to make your own candy that is perfect for gift giving too! Think Teacher’s Gifts, New Neighbor, Holidays, etc. Be sure to check out our other copycat candy recipes!

Ingredients:

  • 16 oz Chocolate Candy Coating
  • 7 oz Marshmallow Creme

Directions:

  1. Line a loaf pan with aluminum foil and grease. Set aside
  2. Take 8 ounces of chocolate and melt by microwaving for 45 seconds, stirring and repeating until melted and smooth.
  3. Heat marshmallow creme in a large bowl by microwaving for 30 seconds.
  4. Stir melted chocolate into marshmallow creme and =til blended and spread into prepared loaf pan.
  5. Place in freezer for 30 minutes.
  6. Remove from pan and cut into serving sized bars.
  7. Return to freezer for 1 hour.
  8. Line a baking sheet with parchment paper or a silicone mat.
  9. Take remaining chocolate and melt by microwaving for 45 seconds, stirring and repeating until melted and smooth.
  10. Dip each bar in chocolate to cover completely (shaking off excess) and place on prepared sheet.
  11. Place in refrigerator until set.

How to Make Your Own Brown Sugar

Brown sugar is one of those ingredients that makes baking and toppings so much better! I get so upset when a recipe calls for brown sugar and I just don’t have it or, it’s as hard as a rock! Do you realize that making brown sugar requires two easy ingredients? Keep Molasses on hand and make brown sugar whenever you need it with this 1 cup to 1 Tbsp ratio. I also just saw a tip for putting a few marshmallows in your brown sugar to keep it soft, can’t wait to try it.  Happy Cooking!

Ingredients:

  • 1 cup Sugar
  • 1 tbsp Molasses

Directions:

  1. Combine both ingredients in a food processor or blender and pulse until well blended.
  2. Store remaining brown sugar in an airtight container. We suggest you make enough when you need it to keep it fresh.

Ground Pork Lean Stuffed Tomatoes

My family loves this recipe! Loaded with flavor, these stuffed tomatoes are great served with a side salad for a light lunch. They’ll also compliment a main dish perfectly. Our favorite way to serve them is at a picnic! Wrap them in foil after baking for easy transport. It’s great during summer when tomatoes are fresh and most in season. Easy to make and a treat for everyone. Enjoy!

Ingredients:

  • 6 medium Tomatoes
  • 1 lb Lean Ground Pork
  • 1 small Red Onion
  • 2 tsp Minced Garlic
  • 1/4-1/2 cup chopped Bell Peppers (optional)
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 cup Bread Crumbs
  • 1 beaten Egg
  • 2 tsp chopped Parsley

Directions:

  1. Preheat oven to 350.
  2. Split tomatoes through center and scoop out centers into a bowl.
  3. Place hollowed tomatoes into a baking pan and set aside.
  4. Chop tomato centers.
  5. Peel and finely dice onion.
  6. Place a little olive oil in a skillet and begin to cook pork.
  7. Add diced onion, minced garlic, salt, black pepper, and red pepper flakes.
  8. Cook and stir until meat is no longer pink.
  9. Add bell peppers and diced tomato centers and cook for 2 more minutes.
  10. Remove from heat.
  11. Add beaten egg and bread crumbs mixing well.
  12. Fill tomatoes with skillet contents.
  13. Place tomatoes in oven for 40-45 minutes until tomatoes are tender.

Pirate Homemade Sand Playdough

Aaaarrrrgggghhhh! It’s talk like a pirate day every day when you have this Homemade Sand Playdough. We had fun with this creative, crafty vignette. Create a fun pirate scene for hosting a party or just for an afternoon of play at home. This DIY project is much easier than you think using your every day pantry ingredients including water, vegetable oil, flour, salt and cream of tartar. We added some fun elements like decorative sand, gems (our loot), and pirate figures. Of course you could personalize this to any scene creating an under water adventure with mermaids, fish, and coral. We think this could be a fun scene for finding nemo. My girls wanted to use the leftover sand playdough for Barbie. Create a fun shoreline for Barbie to sit down and relax on her next beach getaway. If creating sensory play for for preschoolers, get some small dump trucks and go over giant mounds of sand! Whatever your style, you choose the scene, you choose the fun!

Pirate Homemade Sand Playdough

Supplies:

  • 2 cups water
  • 2 Tablespoons vegetable oil
  • 2 cups all purpose flour
  • 1 cup salt
  • 2 Tablespoons cream of tartar
  • 1 cup decorative sand
  • Aquamarine gems
  • Pirate play figures and accessories


Directions:

  1. 1. Add the water and oil to a large sauce pan and stir to combine. Add the flour, salt and cream of tartar and whisk until all of the ingredients are wet and the flour lumps have disappeared.
  2.  Keep stirring over medium heat until a stiff ball of dough forms and you can no longer stir the dough easily (3-4 minutes). It will look like a ball of pizza dough.
  3. Immediately remove from the heat and place the warm playdough on a level workspace. Knead for 1-2 minutes or until soft and smooth.
  4. Flatten the kneaded playdough out on your workspace and sprinkle 1/4 cup of the craft sand on top. Knead the sand into the playdough and add another 1/4 cup of sand. Continue to work the sand into your playdough with your hands until its well mixed.
  5. Sprinkle the remaining sand on top and add a few aquamarine gems for water. This homemade sand playdough will give your kids hours of sensory and role playing fun! Add pirate figurines, trees, treasure chest, crocodile, etc…any kind of fun pirate accessories you may have. This is a great sensory activity!
  6. ENJOY!!

You can keep in an airtight plastic bag or container for up to three months. We think Tupperware works great!
