Hidden Vegetable Recipes for Picky Eaters aka my kids (and your kids!) Hidden veggies in desserts, breads, mac and cheese and more. Enjoy.

Hidden Vegetable Recipes

Hidden Veggie Recipes for Picky Eaters

When introducing food to my babies, I always introduced vegetable puree first.  My second child would beg for broccoli growing up. I recall picking her up from her crib one day after nap and she asked me for broccoli and a Popsicle. It was a staple in our home. Somewhere between child three (who is 14 months older than the twins) and child four and five (whoa that was fast), I went wrong. We went from a family of four to a family of seven in a years time. It was quick and I guess my mom award got lost in the “extra” people.

The twins, who are 19 months, and my two and a half year old struggle to eat greens. I make myself feel better by getting all the protein in their diet I can, but man – what did I do wrong? Because I lost my mojo, I had to become a trickster.  I was first introduced to hiding veggies in food with this book Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food. I decided to accept the challenge and find additional recipes my kids would love.

Are you looking for something fun to do with the kids? These Fish Marshmallow Pops are going to do the trick! As a mom of multiple little boys, I can say that we’re always looking for something fun and simple to do and these marshmallow candy pops on sticks are the solution to beloved cake pops.

Fish Marshmallow Pops

Not only is this recipe and craft fun to make, it’s also delicious to eat. My boys love picking up the little candy pieces and putting them into their mouths. I can’t blame them, I often do the same thing when I’m cooking. Tasting is part of making the recipe!

With many children, it’s important to find something we can all do together. Time in our home is precious! I don’t want to spend hours putting a craft together. Do you? Plus, it’s hard to keep the attention span of five children. I love that my older girls can help with this and the younger boys enjoy it too.

I feel as though this craft is great to do after you watch a good Disney movie too! Who would agree with me? “Under the Sea” refers to the movie the Little Mermaid. This movie has ALWAYS been one of my favorite movies!  If you’re a Disney fan, I’m sure you’ll also love these Disney inspired Under the Sea Marshmallow Pops!

Taste wise, they are so delicious. Like, you think you’ll be able to only eat one, but you’ll eat many more. If you’re looking for something easy to make with your kiddos, make these! They’re easy, fun, and so delicious!

Fish Marshmallow Pops Ingredients

Just a few pantry ingredients needed to make marshmallow pops.

How to Make Marshmallow Pops

A few simple marshmallow directions…

First, carefully place sucker sticks into each marshmallow.

Melt the candy melts according to package directions. Place in a tall jar so it’ll be easier to dip.

Dip a marshmallow into the chocolate and tap off excess, roll the top into the nerds and place on a parchment lined cookie sheet. Let dry for a few minutes before you place the fish on or they will just slide off. Place 1 to 3 fish on each marshmallow.

Let dry and enjoy this fun treat!

How Long to Marshmallow Pops Last?

Well first, these will be eaten fast. So it’s a silly question. The shelf life of marshmallow pops depends on the best before date and how they are stored.

First, you can see how long it will take for your marshmallows to expire by reading the bag. Since you moistened them and dipped them in chocolate, the shelf life will go down a lot. I suggest storing in an air tight container and eating within the week (if they last that long before sticky fingers get to them.)

Keto Recipes for the Entire Family

Keto recipes

According to Healthline.com, a ketogenic diet (often termed keto) is a very low-carb, high-fat diet that shares many similarities with the Atkins and low-carb diets. It involves drastically reducing carbohydrate intake, and replacing it with fat. The reduction in carbs puts your body into a metabolic state called ketosis.

A Keto diet can be very flavorful, you really are not limited on taste but you are limited on some foods. In short, you should eat REAL food such as meat, eggs, nuts, yogurt, vegetables and occasionally some fruits. Apart from the obvious limitation of carbohydrates in foods, it is also recommended to avoid processed food and any food that may contain preservatives and colorings. Again, low-carb, high-fat!

One of the easiest ways to break a day is through snacking. Getting from one meal to the next on an empty belly can cause for old habits and favorite snacks to creep into the day, completely sabotaging all of your efforts.

One negative about going on keto is having to get rid of many favorite foods like chips, cookies, donuts, and candy. This sounds daunting at first, but being on a keto-friendly diet actually reduces and sometimes eliminates the desire for these snack foods. Additionally, there are low-carb options that are keto friendly and replace ingredients in your favorite snack recipes.

Have you tried a Keto Diet?

According to Healthline.com, a ketogenic diet (often termed keto) is a very low-carb, high-fat diet that shares many similarities with the Atkins and low-carb diets. It involves drastically reducing carbohydrate intake, and replacing it with fat. The reduction in carbs puts your body into a metabolic state called ketosis.

With the reduction of carbs, cookies are not always the first thing that comes to mind. We love this three ingredient recipe using sweetener, peanut butter and one egg! Simple and easy!

Low Carb Keto Peanut Butter Cookies

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 – 3/4 cup Stevia or Erythritol
  • 1 egg

Low Carb Keto Peanut Butter Cookies

Directions:

  1. Preheat the oven to 350 degrees.
  2. Spray a baking sheet with non-stick cooking spray OR use a Silicone baking mat (this is important, I’ve found using sweetener causes the cookies to majorly STICK to the baking sheets).
  3. Combine the ingredients and place in the fridge for 15 minutes.
  4. Remove from fridge and use a small cookie scoop to roll into balls. Place about 2″ a part on your baking sheet and use a fork to make a criss-cross pattern in each cookie.
  5. Bake for 10-12 minutes.
  6. The cookie will be very soft but will firm up. As long as they aren’t burning you can leave them in a few minutes longer. My oven bakes hot so I have to remove around 10 minutes.

This recipe makes approximately 24 small cookies.

Does using the word diet make anyone else crave something they can’t have. The trick to “dieting” is finding something that fits your desires but stays within your parameter. On a healthy ketogenic diet, there area  few rules.

Keto Rules:

  • 75% fat, 20% protein and 5% or less than 50 grams of carbs per day.
  • Focus on high-fat, low-carb foods
  • Restrict highly processed items and unhealthy fats.

The trick is to turn your fats into fuel while eating the food you love – like candy!

Can you have any sweets on Keto?

If you love sugar, the thought of keto might bring fear. It’s okay! You can have sugar substitutes on Keto and enjoy some of your favorite foods like brownies, cookies, ice cream, and candy and never tell they are sugar free desserts. One popular Keto sweeteners alternative is Swerve Sweeteners. They are excellent for baking with a Keto approved diet.

Side Note: You can even have Keto Chips and Snacks! Make or buy your own Keto snack recipes.

How to Make Keto Caramel Pecans Candy

A long time ago when sugar and heavy cream were cool, we made these Easy Micrwoave Pralines. The traditional ingredients in pralines are butter, sugar, brown sugar, cream and pecans. We of course  wanted the similar taste of this homemade candy, only something that was friendly to a Keto Diet.  Hence an adapted Keto Praline Recipe.

Only three ingredients make this Keto Praline Candy Recipe and you can repeat the process as many times as you would like!

Ingredients

  • 1 ½ cups pecan halves
  • ¼ cup butter
  • 3/4 cup Swerve brown sugar (you can get Swerve Sweeteners here)
  • 1 teaspoon of vanilla extract (we have used this Vanilla Extract forever)

Directions

First, in a saucepan over medium heat, melt the butter.

Add the Swerve brown sugar and stir until combined.

Next, add vanilla extract and combine.

You can cook it for up to 7 minutes but I did this recipe at about 2 minutes as I wanted a thicker coating.

Remove from heat and add in pecans. Make sure to coat well.

Finally, put your coated pecans on a sheet lined with parchment paper and place in the fridge for 2 hours to cool completely.

Once cooled, break apart and enjoy!
