Bacon and Fresh Corn Ditalini Pasta Salad

We are so excited about this recipe! First, it tastes like a million bucks, second your friends will think you are a gourmet cook with this amazing blend of ingredients. Loaded with flavor and texture from the slightly sweet corn, creamy chickpeas, crunchy, salty bacon, creamy goat cheese and tangy tomatoes. It tastes as good as it looks! It’s easy to make and is perfect for a picnic!

Ingredients:

  • 2 cups fresh corn kernels (about 3 ears)
  • 5 cups cooked Ditalini pasta, (or any small pasta)
  • 6 strips bacon
  • 1 cup chopped tomatoes
  • 1 small jalapeño, finely diced
  • 1 garlic clove, crushed or grated
  • 1 15-ounce can chick peas
  • 4-ounces crumbled Goat cheese
  • 1 tablespoon fresh lime juice
  • 1/4 cup olive oil
  • 1/2 cup white balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 5-6 fresh basil leaves, torn
  • 1 green onion top or a few chives, finely sliced

Directions:

  1. Cook the pasta according the directions on the box. Drain, remove 5 cups and add to a large bowl. You can save the remaining pasta for up to 5 days in the refrigerator.
  2. Cook the bacon in a large skillet until crispy. Remove with a slotted spoon and drain on paper towels.
  3. Pour off the bacon grease, leaving about 1 tablespoon in the pan.
  4. Turn the heat down to medium-low and add the corn to the skillet. Cook for about 2 minutes.
  5. Add the garlic and cook for about one more minute, or until fragrant.
  6. Add the corn & garlic, bacon, tomatoes, jalapeno, herbs, and chick peas to the pasta and toss to combine.
  7. In a separate bowl, whisk together the olive oil, white balsamic, lime juice, salt and pepper. Pour over the pasta salad and stir to combine.
  8. Add the Goat cheese crumbles and gently stir to combine.
  9. Taste and adjust seasonings, oil and/or vinegar.
  10. Store in the refrigerator for up to 5 days.

Christmas has become lost in the commercialization of the season. My family and I have worked hard to return to the reason we celebrate Christmas. The coming of Christ. One way we have done that is through a Birthday cake for Jesus.

“For unto us a Child is born, Unto us a Son is given; And the government will be upon His shoulder. And His name will be called Wonderful, Counselor, Mighty God, Everlasting Father, Prince of Peace.  Of the increase of His government and peace.” Isaiah 9:6

Christmas Traditions

We began the Jesus Birthday Cake Christmas Tradition in 2012 when my girls were 3 and 4 years old. There wasn’t much on Pinterest, it was pre the dawn of Kid’s Baking Championship, and we baking that cake like a box cake mix champ. In sweet fashion, though, my girls wanted the picture shared with the world of social media. I took their photo and my daughter asked… “Mom, are you sending that picture to baby Jesus?” Yes, sweet girl. I am. Consider that cake seen and loved!

If you are in the early age of beginning Christmas traditions, cross cookies for Santa off your list and make a Birthday cake for Jesus. You could even leave a piece for Santa on Christmas Eve. It’s an excellent way to focus on the reason for the season and bring it all back home to why we celebrate Christmas.

Symbolism in Jesus Birthday Cakes

While all of these cakes might just look like another Christmas cake or nativity scene, many offer symbolism in the colors and shapes. Take a look at these cake characteristics that tell the story of Christ.

Jesus Birthday Cake Colors and Shapes

Chocolate Layer – The darkness represents all people have sinned.

Red Layer – The red color reminds us that the blood of Jesus was shed for the forgiveness of our sins.

Green Layer – When we accept Jesus, we have new life in Jesus and begin to grow.

Round Cake Shape – Jesus came to the world. The cake shape is round, a circle that is never ending. Just like God’s love.

White Frosting – Righteousness and purity of Jesus covers all our sins. Our sin is covered over by the Jesus who died for our sins. Our sin is washed white as snow.

Red Heart – Christians are Jesus’ messengers and witnesses. Christ first loved us so we are called to follow His example and love others.

Gold Star – The star of Bethlehem that pointed the wise men the way to Jesus. Wise men still follow him today.

Candles – Jesus is the light of the world. Let our light shine before men, that they may see our good works, and glorify our Father in heaven.

Consider sharing the message and gospel of Christ when sharing about the symbolization of your Jesus Birthday Cake.

Round Cake Shape – Share John 3:16

For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life.

For all have sinned and fall short of the glory of God.

But God demonstrates his own love for us in this: While we were still sinners, Christ died for us.

M&M Christmas Poem and Printable Gift Tag

These festive M&M Christmas Gifts and Poem are so easy to make and have on hand throughout the holidays! Fill a mason jar with M&M’s, print and cut out the poem and tie it on with a ribbon! Make several for teachers, coworkers and hostess gifts. It couldn’t be simpler to give something sweet with the meaning of Christmas. Merry Christmas!

Supplies:

  • 1 large package of M&Ms (we used red and green)
  • 1 Mason Jar
  • Ribbon as needed
  • Printable M&M Poem for Christmas

Directions:

  1. Pour M&Ms into a Mason Jar.
  2. Close the Jar.
  3. Print out your printable M&M Poem.
  4. Cut out individual tags.
  5. Punch a hole in the corner.
  6. Tie the poem to the mason jar with ribbon.
