Chicken Pineapple Kabobs

Looking for a moist Chicken Recipe that is healthy and perfect for your summer grilling? These Chicken Pineapple Kabobs are the perfect dinner entree for your family, friends and yourself!

Ingredients:

  • 1 cup Ketchup
  • 1/4 cup Soy Sauce
  • 1/4 cup Honey
  • 1 tbsp Mustard
  • 1/2 cup Brown Sugar
  • 1 tsp Minced Garlic
  • 1 tbsp Lemon Juice
  • 2 lb Boneless Skinless Chicken Breasts
  • 1 Pineapple
  • 1 Red Onion
  • 1 Green Bell Pepper
  • Salt and Pepper (to taste)

  1. Add ketchup, soy sauce, honey, mustard, lemon juice, brown sugar and garlic to a small pan and cook for 10 minutes. Remove from heat and allow to cool.
  2. Cut chicken, peppers and onion into 1 1/2 in cubes.
  3. Peel and core pineapple and cut into 1 1/2″ cubes.
  4. Place Pineapple, chicken and vegetables onto skewers alternating pieces.
  5. Transfer 1/2 of sauce to another dish to use when serving.
  6. Brush skewers with oil then with sauce and place on heated grill.
  7. Baste skewers every 3-5 minutes while cooking. Cook for about 15 minutes.

    These were delicious, and have made them several times for company!
    Prepped them ahead of time, covered with seran and put in fridge till ready to BBQ…so easy!

      Yes, just make sure the chicken is cooked through. You could also just prepare the chicken before the rest of the items.
