Paleo Banana Chocolate Chip Muffins Recipe on Frugal Coupon Living using bananas, chocolate chips, almond butter, eggs and more. Natural Clean Eating Muffin Idea. Great Paleo breakfast or Paleo snack.

Paleo Banana Chocolate Chip Muffins

What does Paleo Mean? As defined by Webster, Paleo means older or ancient, especially relating to the geological past. The Paleo diet is based on the types of foods presumed to have been eaten by early humans. The diet consists of foods that can be hunted or fished like meat, organ meat and seafood and foods that can be gathered like eggs, fruits, vegetables, mushrooms, nuts, seeds, herbs, and spices.

Looking for a morning muffin or afternoon snack? This Paleo Banana Chocolate Chip Muffin not only tastes great but your body will appreciate the ingredients! We have made this recipe with peanut butter and almond butter.  I would stick with a runnier nut butter (like almond butter). I substituted peanut butter previously and it wasn’t as moist as the original recipe.

Paleo Banana Chocolate Chip Muffins:
Yields: 11-12 muffins (depending on the size of bananas used)
Prep Time: 5 minutes | Bake Time: 15 minutes | Total Time: 20 minutes

Ingredients:

  • 1 cup almond butter
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ cup dark chocolate chips (or more if desired)

Chocolate Chip Muffins

Directions:

  1. Preheat oven to 400 degrees F. Place baking cup liners in muffin or cupcake pan, or lightly grease the pan cups.
  2. Place all ingredients (except chocolate chips) into a large bowl and mix well to incorporate. Fold in chocolate chips.
  3. Spoon batter into cups of prepared pan until each cup is about 2/3 full.
  4. Sprinkle a few extra chocolate chips on top for presentation.
  5. Bake in preheated oven for 12-15 minutes or until toothpick inserted in center comes out clean.
  6. Allow muffins to cool for 10 minutes before serving.

Notes: I would stick with a runnier nut butter (like almond butter). I substituted peanut butter previously and it wasn’t as moist as the original recipe.

Edible OREO Acorns

We think these OREO Acorns will be a hit with your family this Fall! Not only are they delicious but, they’re fun to make! The kids will love to help with every step of this recipe. Did you know that Oreos took their flavors to a whole new level and added peanut butter? YUM! They may look intricate to make but, in just a few simple steps you will have a bowl of OREO acorns to nibble. Happy Fall!

Ingredients:

  • 1 package peanut butter Oreos
  • 1 8 oz. package cream cheese, softened
  • 12 oz Chocolate chips or Chocolate Candiquick chips
  • 6 oz Butterscotch or Peanut Butter chips
  • Brown Sprinkles
  • Pretzel Sticks

Directions:

  1. Allow the cream cheese to come to room temperature
  2. Put Oreos in the food processor and pulse until you have crumbs. You may need to split this into two batches depending on the size of your food processor.
  3. Once the cream cheese is softened, mix the Oreos and cream cheese together until well blended.
  4. Use a heaping tablespoon of the mixture to form into acorn shapes. To form, roll into an elongated ball, then pinch one end to make it slightly tapered. Place the acorns on a baking sheet with wax paper and place them in the freezer for 1 hour.
  5. After the acorns are hard, melt the chocolate. Dip each acorn into the chocolate with a fork. Tap the edge of the bowl to remove any excess chocolate – then place back on parchment paper. Continue until all acorns are dipped, and then allow them to come to room temperature to harden.
  6. Once the chocolate covered acorns are hardened, melt the butterscotch chips and pour brown sprinkles into a separate bowl.
  7. Dip the tops of each chocolate covered acorn into the butterscotch – then immediately dip into the sprinkles.
  8. Cut ½ inch pieces of the pretzel sticks. Dip the edge of each pretzel stick into the butterscotch and press into the top of each acorn. Return to baking sheet to allow the pretzels to set before serving.

Turkey Sugar Cookies (Pin it to Pinterest)

This recipe is the most simplistic. Make the attached sugar cookie recipe or grab a pre-made store brand. Use icing as glue and create decadent feathers with candy corn.

Turkey Nutter Butter Cookies (Pin it to Pinterest)

The most popular Thanksgiving Food Craft, the flexibility of this food craft is nice. How much you want to go with this cookie is up to you. You can have a stand up turkey or a lay down turkey instead.  Add left over Halloween candy to spruce up the design or keep it simplistic with icing and candy corn.

Rolo Pilgram Hats (Pin it to Pinterest)

On the show we made these with chocolate peanut butter cups but you can also do with caramel cups. Pick up store bought frosted fudge cookies and glue on the top of the hat to make the perfect little snack for your little Pilgrim.

Chocolate Covered Oreo Turkeys (Pin it to Pinterest)

This turkey craft is likely for experienced and steady of hands baker. Mix colors and create bright feathers on your Oreo Turkey using a pretzel as a template. Again, how little or how much of the activity and design you want to do is up to you.

Chocolate-Dipped Banana Bites with Peanut Butter centers. Serve room temp or freeze for later. I love to freeze them without chocolate and eat after workouts.

I wanted to share with you one of my favorite recipes! This is a go to recipe for the kids and I and it is so easy, really just takes minutes. Sometimes we use the recipe with chocolate (the kids love that) but other times I sneak a few for myself in the freezer (without chocolate) and have a couple recovery bites after the gym! Each banana makes about 7 bites (14 slices) so you can multiply or reduce as you need. We are pretty obsessed with Jif Creamy Peanut Butter (I mean who isn’t) but also consider a natural peanut butter if you are watching your diet/sugar intake. Enjoy!

Ingredients:

  • 3 Bananas (1 banana makes 7 bites)
  • 1 Cup semi-sweet chocolate chips
  • 1 Cup creamy peanut butter
  • Decorating bag
  • Bamboo skewers

Banana Bites

Directions:

  1. Slice your bananas into 1/2″ pieces.
  2. Scoop your peanut butter into a decorating bag and cut the tip off the end.
  3. Frost the top of half of the banana with peanut butter and skewer another plain banana.
  4. Then skewer the peanut butter banana to sandwich the two together.
  5. In a small microwave safe bowl, heat your chocolate chips on 50% power for 2-3 minutes stirring every 30 seconds until melted.
  6. Hold the skewered banana bite, dip the side into the chocolate, place onto a piece of parchment paper, and into the freezer.
  7. After they’ve been in the freezer for 15 minutes they are ready to eat or you can keep them frozen for a treat later on.

Note: Also consider freezing these after you make them. I love them frozen (even without chocolate, they make a great after work0ut snack!)

Do you ever end up with Leftover Halloween Candy? Whether you have leftovers in November, leftover candy in March, or lets get real, Halloween Candy is gone by November 1st and you never have leftovers at all, we have the tastiest Candy Pizza Cookie for you! This recipe can be made with leftover Halloween candy or you can make it in October (if you do, be sure to add candy eyes for a fun Halloween monster effect – like the Monster Cupcakes!)  Using a sugar cookie dough, frosting, and everything but the kitchen sink when it comes to candy, this recipe is very quick to make. It only has 3 ingredients plus however many additional ingredients you need to decorate. Best of all, it something the kids can do on their own (once the sugar cookie is baked!)

Ingredients:

  • Pillsbury refrigerators sugar cookie dough
  • Pillsbury chocolate frosting
  • Leftover Halloween candy: gummy worms, black licorice, candy corn, whoppers, etc.
  • Sprinkles
  • 9″ springform pan
  • Butter

Directions:

  1. Preheat your oven to 350° and grease your 9 inch spring form pan with butter.
  2. Open it and break your cookie dough into five or six pieces in place in the bottom of your pan.
  3. Evenly press your sugar cookie dough into your pan and smooth out the edges with your fingertip.
  4. Bake for 17 minutes and let your giant cookie cool.
  5. After about 10 minutes of your cookie cooling you can open your springform pan and then let your cookie finish cooling.
  6. Spread about 3/4 cup of chocolate frosting onto your cookie.
  7. Cut your licorice and place onto your frosted cookie along with your other candies and sprinkles.
  8. Slice like a pizza and enjoy!
