Watermelon Pizza with Feta, Mint and Balsamic

Watermelon season is still here. Did you know watermelon season is each summer from June to September. If you still have some leftover watermelon, consider this recipe – it’s light and delicious using watermelon, feta, mint, and balsamic. If you fear the kids or family will not like it, try it for lunch each day and limit your number of calories during the day! We are pretty big fans!

Ingredients:

  • Round Watermelon
  • Feta Cheese Crumbles
  • Mint Leaves (washed and dried)
  • Vanilla Balsamic Vinegar

Directions:

  1. Rinse and dry your watermelon and place it onto a large cutting board.
  2. Start at one end of the watermelon and start cutting it into 1″ sections to make round wheels.
  3. Lay one of your watermelon wheels flat and make threw even cuts like a pizza.
  4. Take a handful of mint leaves off the stems and place them right on top of your watermelon.
  5. Sprinkle about a 1/8 cup of your feta crumbles on top of your watermelon.
  6. Now drizzle your balsamic vinegar on top.

If you had to list your top 3 soups, I bet this one would rank… at least it would for me…

I am obsessed with Broccoli Cheddar and I have no reservations telling myself this is a hearty side of veggies.

Because.

Broccoli.

Enjoy this Copycat Panera Broccoli Cheddar Soup Recipe and don’t forget our very popular Copycat Panera Autumn Squash Soup Recipe.

Broccoli Cheddar Soup

Makes 4-6 servings

Ingredients:

  • 6 tablespoons of unsalted butter
  • ½ cup of chopped onions
  • 2 cloves of garlic, minced
  • 4 tablespoons of flour
  • 1 cup of half and half
  • 4 cups of chicken broth
  • 4 cups of broccoli, chopped
  • 2 carrots, thinly grated
  • 1 celery stalk, finely chopped
  • 3 cups of sharp cheddar shredded cheese
  • 2 ounces of softened cream cheese
  • 1/8 teaspoon of ground nutmeg
  • ½ teaspoon of cayenne pepper
  • black pepper to taste
  • salt to taste


Copycat Panera Broccoli Cheddar Soup

Directions:

  1. Melt butter in a stock pot over medium high heat. Once butter has melted, add in onions and saute for 3-4 minutes and then add in garlic for the last 30 seconds.
  2. Whisk in flour and stir until flour mixture begins to turn a golden color. Slowly add in half and half, whisk until smooth, and then slowly add in chicken broth, and seasonings.
  3. Reduce heat to medium low and simmer mixture until thickened -about 9-10 minutes.
  4. Add in broccoli, carrots, and celery. Continue to cook at a simmer until vegetables reach desired tenderness, about 20 minutes or so. When vegetables have reached desired tenderness, reduce heat to low and add in cheese, cook an additional 3-4 minutes.
  5. Serve.

Tips: Fresh is best! Use block cheddar cheese. If you can get a block and shred it yourself, go this route! Your soup will taste so much better! Additionally, to speed cooking time, steam broccoli before adding it into the soup.

Easter Nutter Butter Chicks

This Easter Food Craft is a perfect idea for the kids this Easter Season. I love that they have five simple ingredients! They would be a sweet addition to a child’s lunch or use as an after school snack idea for Easter.

Ingredients:

  • Yellow candy melts
  • Miniature brown M&M’s (we also suggest Wilton Candy Eyes)
  • Orange Starburst
  • Yellow sugar sprinkles
  • Nutter Butters


Directions:

  1. Heat your candy melts in microwave safe dish for 3-4 minutes, stirring every 30 seconds until melted.
  2. Dunk your cookies into the melted candy and place onto a piece of parchment paper.
  3. Sprinkle your sugar sprinkles onto your candy coated cookies.
  4. Carefully press two brown miniature M&Ms on to the front top of each cookie.
  5. Roll out your orange Starburst, cut out small triangles, and place the triangles below the eyes for beak.
  6. Let your cookies harden for about 30 minutes and enjoy.

Dark Chocolate Flourless Torte


I have a sweet tooth, the richer the better (because then I eat less.) You will absolutely love this Dark Chocolate Flowerless Torte. Not only will you love it, you will really love how easy it is to make and prepare and you might even trick your friends into thinking you got it at the most expensive pastry shop in town! Enjoy!

Dark Chocolate Flourless Torte

Yields: 8-12 servings
Prep Time: 15 minutes | Cook Time: 30 minutes | Total Time: 45 minutes

Ingredients:

  • 9 ounces dark chocolate (good quality & at least 65%), finely chopped
  • 9 ounces unsalted butter (18 tablespoons)
  • 1 ½ cups sugar
  • 7 eggs, at room temperature
  • 1 teaspoon vanilla extract
  • Optional additions: ¼ teaspoon almond extract or 2-3 tablespoons of your favorite rum (or other desired adult beverage)
  • Garnish options: fresh berries, whipped cream or a sprinkle of powdered sugar


Directions:

  1. Preheat oven to 375 degrees F.
  2. Grease a 9” spring form pan, add parchment paper, and then add a second layer of grease.
  3. Place both chocolate and butter in a microwave safe bowl, and microwave until melted. Stir until ingredients are smooth and combined. Stir in sugar, and allow the mixture to cool for 3-4 minutes.
  4. Add eggs (one at a time), incorporating fully between each addition. Continue to stir after all eggs have been added until batter takes on a slightly thicker consistency.
  5. Stir in the vanilla extract (+ any additional extracts or adult beverage.)
  6. Pour the chocolate batter into prepared pan. Bake for 30 and begin to check for doneness (may take up to 35 minutes). The torte should have a very slight jiggle as the middle will not be quite completely set. Allow the cake to cool for 10 minutes before removing from spring form pan.
  7. Serve with desired garnishes.

Notes:

This cake can be made up to 1 day in advance and can be served chilled or at room temperature

To freeze: allow the cake to completely cool, cover the top with plastic wrap and place in an airtight container for up to 3 months. Allow to thaw overnight the refrigerator before serving.

Another option for serving this cake is cutting into small squares and placing on a serving tray (perfect for parties!)

If you loved our Buffalo Ranch Quesadillas, you will love this slow cooker dip recipe. Tangy, creamy with a kick of spice this is the perfect dip for veggies, chips or even to top nachos with. We love that it cooks in the crockpot so after the quick pre-prep, just toss it in and it’ll be done by game time!

Ingredients:

  • 2 chicken breasts or thighs
  • 3 oz buffalo chicken sauce
  • 4 oz cream cheese (half a container)
  • 4 oz ranch or blue cheese dressing
  • 1 stalk celery, chopped (optional)
  • 1/2 to 1 cup shredded cheese
  • Salt and pepper, to taste

Directions:

  1. Place the buffalo chicken sauce and chicken breasts in a small pan and heat over medium heat for 5-7 minutes, turning the chicken once while cooking.
  2. Remove from heat and meanwhile, assemble the cream cheese, dressing, and celery and place in your crockpot.
  3. Shred the cooled chicken and add it, along with the buffalo chicken sauce, to the crockpot.
  4. Heat on slow for 2 hours to ensure chicken finishes cooking.
  5. Stir in your cheese just before serving.
  6. Serve warm alongside chips or vegetables.

Did you love the Poke Cake Recipes we shared the other week? We have another great recipe for you, Boston Cream Poke Cake made with JELL-O Instant Vanilla Pudding Mix and Duncan Hines Yellow Cake Mix. This recipe is so easy! 4 ingredients and you’re ready to go! It would make such a special treat for Back-To-School lunches for Teachers and Staff. Also, keep these ingredients handy for the holidays coming up. So easy to prep ahead. Enjoy!

Ingredients:

  • 1 box Yellow Cake Mix (plus box ingredients)
  • 2 boxes 3.4 oz Instant Vanilla Pudding Mix
  • 4 cup Milk
  • 1 container Chocolate Frosting


Directions:

  1. Prepare cake in 9×13 pan according to box directions.
  2. Use spoon handle to poke holes evenly across cake.
  3. Combine milk and pudding mix and whisk until well blended.
  4. Pour pudding over cake making sure it gets down into holes.
  5. Refrigerate cake for several hours to allow pudding to settle and set up.
  6. Open frosting container and revove foil seal.
  7. Microwave for 15 seconds and stir. Repet this until frosting is pourable.
  8. Pour over pudding layer and spread with spatula to cover completely.

Boston Cream Poke Cake

Ingredients

Scale
  • 1 box Yellow Cake Mix (plus box ingredients)
  • 2 boxes 3.4 oz Instant Vanilla Pudding Mix
  • 4 cup Milk
  • 1 container Chocolate Frosting

Instructions

  1. Prepare cake in 9×13 pan according to box directions.
  2. Use spoon handle to poke holes evenly across cake.
  3. Combine milk and pudding mix and whisk until well blended.
  4. Pour pudding over cake making sure it gets down into holes.
  5. Refrigerate cake for several hours to allow pudding to settle and set up.
  6. Open frosting container and revove foil seal.
  7. Microwave for 15 seconds and stir. Repet this until frosting is pourable.
  8. Pour over pudding layer and spread with spatula to cover completely.
  9. Refrigerate for at least several more hours.

I was never a breakfast person until I married my husband. Now, I can not advance forward throughout the day without something heavy in my belly. Often this was a sloppy bagel topped with bacon, egg and cheese but more recently, I have been watching what I have been putting in my gut, after all, this food is the jump start to my day! This Raspberry Chia Smoothie Bowl is so easy and good. Consider adding in a touch of powdered fiber and a touch of flax oil.

Ingredients:

  • 2 cups almond milk
  • 1 banana, sliced
  • ¼ cup oats
  • 2 tbsps maple syrup
  • 1 ½ cup frozen raspberries
  • ½ cup chia seeds


Directions:

  1. In a blender add the milk, banana, oats and,
  2. Pulse until creamy.
  3. Add 1 cup frozen raspberries and the maple syrup.
  4. Pulse and add more maple syrup if desired.
  5. Serve into bowls.
  6. Decorate with the remaining raspberries and chia seeds.

Enjoy.

Tips: Try adding some coconut milk for a tropical kick.

Easy Slow Cooker Chicken and Dumplings

I have five kids. Three on the outside and two on the way. That being said, spending more than 15 minutes in the kitchen is a bit difficult. For that reason, I often turn toward my Instant Pot or Slow Cooker.

Ingredients:

  • 4 medium boneless/skinless chicken breasts
  • 1 small onion, chopped
  • 1 tsp. oregano
  • salt & pepper
  • 2 10 oz cans cream of chicken soup
  • 2 C. chicken broth
  • 2 tsp. thyme
  • 2-3 bay leaves
  • 3-4 carrots, chopped
  • 1 tbsp. minced garlic
  • 1 container of refrigerated biscuits


Easy Slow Cooker Chicken and Dumplings

Directions:

  1. Lay the chicken breasts on the bottom of the slow cooker. Season with salt & pepper and cover with chopped onion and oregano.
  2. Pour the cream of chicken soup and chicken broth over the chicken breasts.
  3. Add the bay leaves and thyme.
  4. Cover and cook on low for 5-6 hours (3-4 hours on high).
  5. Once the chicken is cooked through, remove the bay leaves and discard.
  6. Shred the chicken in the slow cooker.
  7. Add in the chopped carrots (you can also add in other veggies such as celery, frozen peas, etc.
  8. Open the biscuits and cut each biscuit into quarters placing them on top of the chicken mixture.
  9. Cover and cook on high for another 45 minutes – 1 hour.
  10. Remove from the slow cooker and enjoy.
