Celebrate Dr. Seuss with one of your favorite characters in Rice Krispie Treat form! No one can mistake that red and white hat filled with mischief and fun! Make Dr. Seuss Day memorable with a tray of these at a party or even an after-school snack with friends! They’re so easy to make, let the kids join in the fun of stirring and decorating!

Ingredients:

Ingredients for Rice Krispies:

  • 1 cup (2 sticks) unsalted butter
  • Two 10 oz. bags of mini marshmallows
  • 10 cups Rice Krispies cereal
  • 1/4 teaspoon sea salt (optional)

Ingredients for Dr Seuss Rice Krispies:

  • 2 T solid shortening
  • 3/4 cup Wilton white chocolate melts
  • 9 large red Airheads candies (or red fruit roll ups)
  • Black write-on gel
  • Red write-on gel

Directions:

Directions for Rice Krispies:

  1. Spray a 9 x 9 pan with Pam and set aside.
  2. In a large sauce pan, melt the butter over low heat.
  3. Add the marshmallows to the melted butter, stirring constantly.
  4. Once the marshmallows are melted, remove from the heat and stir in the cereal and optional salt until well-coated.
  5. Using a rubber spatula (spray with Pam for easier handling), transfer the cereal mixture to the prepared pan and press down firmly and evenly.
  6. Allow the Rice Krispies to cool in the pan completely.

Assembly Directions for Dr. Seuss Treats:

  1. Line a baking sheet with wax or parchment paper. Set aside.
  2. Cut the prepared Rice Krispies (from recipe above) into 6 even long rectangles.
  3. In a medium microwave-safe bowl, microwave the solid shortening for 40 seconds or until melted.
  4. Add the white chocolate melts and stir until completely melted.
  5. Immediately coat each Rice Krispies stick with the melted white chocolate and place on the baking sheet to “set” for at least 30 minutes.
  6. Meanwhile, cut each Airheads piece into 2 pieces lengthwise. You will have 18 pieces total.
  7. Once the chocolate on the Rice Krispies is dry, take an Airhead piece and wrap around a Rice Krispies stick at the very top of the stick. Pinch at the back to seal.
  8. Wrap another Airheads piece around the stick about 1/2-1 inch down from the top one. Pinch at the back to seal.
  9. Repeat step 7 with another Airheads piece. Complete steps 6-8 until all of the Rice Krispies have 3 airheads pieces alternating with white chocolate for the hat.
  10. With the black write-on gel, pipe two eyes, a nose and whiskers on each stick.
  11. At the very bottom of each stack, pipe a large “X” with the red write-on gel. Fill it in with the gel to resemble a bow tie.

Roasted Asparagus Bruschetta with Goat Cheese

Bread, Cheese? ABSOLUTELY. The combination of both is the ultimate weakness!  Our Roasted Asparagus Bruschetta is absolutely divine. You can serve it as an appetizer or sneak it in as an entree for a lunch. We think it would be great for a ladies luncheon.

Ingredients:

  • 1 8″ ciabatta loaf
  • 1 4-ounce package of Goat cheese, room temperature.
  • 1 small bunch of fresh asparagus, ends trimmed
  • 3-4 tablespoons fresh Parmesan, divided
  • 2 green onions, finely sliced
  • 2 tablespoons olive oil, divided
  • 1 large garlic clove, sliced in half
  • Salt and pepper

Directions:

  1. Preheat your oven to 450 degrees
  2. On a large baking sheet, toss the washed & trimmed asparagus with one tablespoon of the olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Bake for 10-15 minutes or until lightly browned. Set it aside to cool.
  3. In a small bowl, mix the Goat cheese, half the green onion and 1 tablespoon of Parmesan cheese. If the Goat cheese isn’t soft enough, microwave it for 5 seconds at a time until you can easily mix it.
  4. Split the ciabatta loaf in half and then cut each half open. Brush each piece with the remaining tablespoon of olive oil.
  5. Turn the oven up to broil and toast the bread until lightly browned, which should only take a few minutes. Watch it closely. As soon as it comes out of the oven, rub each piece with the cut side of the garlic. (you can also toast it on a stovetop grill pan)
  6. Spread the goat cheese mixture on each piece of bread, followed by 4-6 asparagus pieces, 2-3 pieces of shaved Parmesan and a sprinkling of green onion.

Enjoy!

Pop ’til You Drop Popcorn Recipes

We are minorly obsessed with popcorn in this home. Especially when it comes to mixing the sweet and the salty. Usually this is the dull recipe of tossing in some M&Ms with a warm bowl of popcorn, but lately we have tried to twist things up by adding seasonings, cheeses, chocolate, candies… you name it! Take a look at these popcorn recipes that will have you burning the midnight oil with your microwave popping bag after bag – why not “pop ’til you drop!?!”
