Gameday Tater Skins Recipe

One of the most popular appetizers to start off a meal, waiting for kickoff or anywhere else people gather is Potato Skins. While there are several steps involved, they really are very simple to make. If you have never made them before gameday is a great day to start, or even if you have maybe I have new technique you’d like to try. Look for long potatoes with a small diameter rather than large potatoes like you would use for baked potatoes. You can also pre-bake potatoes and finish the broiling steps just before guests arrive to heat them.

This is a basic recipe but add more flavor and finish these potato skins off by topping them with scallions, a dollop of chili, plain or flavored sour cream, diced tomatoes, diced ham, or something outside the box – olives or capers.

Ingredients:

  • 8 small to medium Russet potatoes
  • 8 oz. shredded Colby and Cheddar blend.
  • ½ stick salted butter
  • ¼ to ½ cup crumbled bacon pieces
  • salt and pepper to taste
  • optional: chives

Directions:

  1. Wash potatoes thoroughly, dry well.
  2. Preheat oven to 400°
  3. Poke 4-5 holes in each potato with a fork.
  4. Bake in preheated oven for 45 minutes.
  5. Remove from oven, allow to cool just enough to be handled.
  6. Using a sharp knife slice each potato in half.
  7. Take a spoon and remove about 75% of each potatoes inside, take care to keep skin intact.
  8. Melt butter, and brush on both sides of potato.
  9. Season with salt and pepper.
  10. Place potatoes back on baking sheet and under broiler set to high for 6-8 minutes.
  11. Remove from oven and fill the cavity of each potato with cheese, and crumbled bacon.
  12. Place back under broiler until cheese is melted an bubbly.
  13. Serve with plain sour cream and a sour cream that has been mixed with chives to give your guests dipping options.

Gameday Brownie Footballs Recipe

Here is another great recipe for your game day buffet, but this time I’m throwing out something to satisfy your sweet tooth. A simple homemade brownie recipe that looks awesome cut out with football cookie cutters to keep the theme going. I have a set similar to this one for entertaining at the big games. These brownies are delicious, decadent and will be devoured by grownups and kids alike at your party.Include crushed walnuts inside some of your batter to offer a little variety to your hungry guests. I did a double batch and made mine on a large cookie sheet since I wanted them to be thinner than usual.

Ingredients:

  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 2 cups granulated white sugar
  • 1 cup melted butter
  • 2 eggs
  • 1 tsp. Vanilla

Directions:

  1. Preheat oven to 350°
  2. Line a 9×11 baking pan with foil, spray with nonstick cooking spray.
  3. Combine flour, and cocoa powder-set aside.
  4. In a separate bowl cream butter and sugar.
  5. Add vanilla and eggs one at a time until mixed.
  6. Add flour mixture and stir until just combined.
  7. Pour brownies into foil lined pan.
  8. Bake for 20-25 minutes or until toothpick poked in center comes out mostly clean.
  9. Remove foil from pan and allow brownies to cool completely.
  10. Use a football cookie cutter or cut freehand with a sharp knife into football shapes.
  11. Fill a small (snack size) baggie with white frosting, snip off a very small corner, squeeze gently to press frosting from bag and pipe 3 lines on brownies for laces.

Football Turf Tip: Shake a few drops of green food coloring and shredded coconut in a plastic Ziploc bag. Shake to make green grass or turf.

Gameday Guacamole Dip Recipe

I am not sure if its within the rules of football watching to have a party without guacamole and chips but I don’t really want to find out. Guacamole dip is a staple of every get together at my house and I have to include it on the menu to keep rowdy fans under control. I like mine really creamy as opposed to the more rustic kind-but feel free to skip the blender step if you like yours more chunky. You can really impress your guests by using the guacamole dip to recreate a football field , set it next to a big bowl of good scooping tortilla chips and you have a crowd pleaser. I like to add the sour cream to help make it a little smoother and creamier. A quick trip to the produce stand and you can mix up a batch of this yummy dip.

Ingredients:

  • 3 ripe Avocados
  • 2 Tbsp. Cilantro
  • 1 Tbsp. Lime juice
  • 1 clove Garlic
  • ¼ cup Sour cream
  • 1 tsp. Salt
  • 1 tsp. ground black pepper

Directions:

  1. Cut avocado in half, twist to open and remove pit.
  2. Use as spoon to remove inside flesh of avocado from the skin.
  3. Chop cilantro, crush or finely chop garlic.
  4. In a blender combine: avocado, cilantro, lime juice, garlic, sour cream, salt, and pepper.
  5. Blend until smooth.
  6. To recreate the football field-
  7. Spread guacamole dip into a flat dish using a spatula to smooth.
  8. Pipe sour cream into lines, write in the 50 yard line, etc for as large as your pan is.

Decorating Tip: This is my favorite tip for sour cream, icing, or anything else I need to write with and want a a fine tip. Scoop your sour cream into a small zip top bag, snip off a very small corner. Keep in mind that the smaller you make the snip, the finer your writing will be.

Gameday Kickin’ Queso Dip Recipe

“Are you ready for some football?” Because I sure am! If you are gearing up for the big game and perhaps hosting your own party you will want to check back everyday this week for some awesome recipes. Every day for the next 7 days I will be posting a recipe to help you with planning your menu, tasty party favorites with a flavor twist. You will find dips, appetizers, and even a couple of dessert items for the sweet tooth to include in your big spread.

Today check out a dip that makes an appearance at every party we have – birthdays, holidays, and yes of course football parties. It is simple to make and is usually half gone before I can even get it out of the pan into a serving bowl. It is thick, and hearty, and a bit spicy but even the kids love it. I guarantee once you make it, it will be requested at every party and you forever be know as “The Queso Lady” and be required to show that you have made it before you are allowed to enter the party.

Be sure and serve this with a big bowl of thick chips, this isn’t a sissy dip and may break a lesser chip with its brute strength. If by some odd chance you have any leftover or if you want to make it in advance it reheats beautifully.

Ingredients:

  • 1 lb. lean ground beef
  • 1 pkg. Mild roll sausage ( I use Jimmy Dean)
  • 1-16 oz. package Velveeta
  • ¾ can Rotel with Green Chiles
  • 1-15 oz. Salsa Con Queso
  • 1 tsp. ground black pepper

Directions:

  1. In a large saucepan over medium heat brown sausage and ground beef until thoroughly cooked.
  2. Drain off excess oil.
  3. Chop Velveeta into squares about 2×2” and add to meat in pan.
  4. Stir in Rotel, Salsa Con Queso, and pepper.
  5. Reduce heat to low, and stir frequently until all cheeses have melted and until warmed throughout.
  6. Serve with a hearty tortilla chip.

Gameday Coffee-Cocoa Rice Krispies Treats Recipe

Another sweet treat for your Superbowl spread – delicious, traditional Rice Krispie treats with a definite grown up twist. Go ahead and make a plain batch for the kid’s and non-coffee lovers… The rest of us will love the unique flavor that the combination of coffee and cocoa create. Make them as small or as large as you like to serve, I usually make a range of sizes for little hands as well as big. If any make it to the end of your party you can wrap in foil and send one home with your guests. They would also make a great party favor if you didn’t want to put them out. You could press them into a pan or form a different shape for other parties-showers, birthdays, or potlucks.

Ingredients:

  • 3 Tbsp. butter
  • 1-10 oz. bag mini marshmallows
  • 6 cups cocoa flavored rice cereal
  • 1 ½ tsp. Coffee extract

Directions:

  1. Melt butter in a large pan over low heat, add marshmallows and stir until completely melted. Remove from heat and stir in coffee extract.
  2. Immediately mix in rice cereal until thoroughly coated.
  3. Pour mixture onto a piece of waxed paper and allow to cool for 10 minutes.
  4. Butter your hands well.
  5. Scoop up a handful of krispie mixture to your desired size.
  6. Form an oval first, squeezing to compact into the shape and to bind krispies together well.
  7. Pinch the ends, forming into football shape.
  8. You can purchase white writing icing in a tube or place white frosting or even melted white chocolate in a baggie, snip off small corner and use it to create the white laces on your football.

Football Turf Tip: Shake a few drops of green food coloring and shredded coconut in a plastic Ziploc bag. Shake to make green grass or turf and lay your Krispies on top.

Filet Mignon Bites with Bernaise Sauce Recipe

Delicious appetizer to share with friends, or a yummy finger-food entree to share with the family (serve dinner with a toothpick!) Good Filet Mignon wrapped in bacon and add with a delicious Bernaise Sauce Recipe – mixed butter,  egg,white wine vinegar and flavored with herbs.

Ingredients:

  • 1/2 Onion finely diced
  • 6 egg yolks
  • 2 tsp Lemon juice
  • 2 sticks Butter
  • 1 tsp Tarragon
  • 1 tsp Chervil
  • 3 tbsp White Wine
  • 3 lb Beef Tenderloin
  • 1 lb Bacon

Directions:

  1. Finely chop the onion so that the taste doesn’t overpower the sauce.
  2. Cook the chopped onion for 1 minute in the microwave to soften.
  3. Place the egg yolks in a saucepan and add lemon juice. Stir until the mixture is blended.
  4. Add the first stick of butter sliced into pats and cook over very low heat stirring constantly until melted.
  5. Add the second stick in the same fashion continuing to stir constantly.
  6. This process will take awhile because we want the egg butter mixture to cook together.
  7. If the heat is too high or you don’t stir enough, the eggs will begin to cook on their own and the sauce will “break”. You’ll know if/when this happens because you’ll see lumps or curdles forming in your sauce.
  8. Slowly your sauce will begin to thicken and reach the point where it begins to look like a thin pudding. You’ll see the line the spoon left after you drag it across the bottom.
  9. Take the sauce off the heat, add the onions, tarragon and chervil. Mix well.
  10. Add the wine (if you don’t have wine, you can substitute 2 tsp lemon juice and 2 tbsp water) and blend well.
  11. Cut the tenderloin into 1″ cubes.
  12. Take the bacon slices and cut each piece in thirds.
  13. Wrap each filet bite in a piece of bacon and secure with a toothpick.
  14. Heat a heavy skillet on high and sear each bite on all sides.
  15. Transfer seared pieces to broiler pan and place in 350 oven for 15 minutes.
  16. Serve filet bites with Bearnaise sauce.

ROLO Pretzel Pecan Turtle Recipe

This yummy recipe is PERFECT when heading to a special occasion or party. It is incredibly easy to do, pretty frugal on the wallet, and everyone (young and old) absolutely LOVE the treats. Nothing like the classic Hershey’s combination of chewy caramel and milk chocolate, spruce it up with the salted crunch of a Pretzel.

Ingredients:

  • 12 Square or Round Pretzels
  • 12 Rolo Candies (unwrapped)
  • 12 Pecan Halves

Directions:

  1. Preheat oven to 350.
  2. Line cookie sheet with parchment paper.
  3. Place pretzels on sheet.
  4. Top each pretzel with a Rolo.
  5. Bake 4 minutes or until Rolo begins to soften.
  6. Remove from oven and top each with a pecan half.
  7. Allow to cool.

*This recipe yields about 12 but can be multiplied or split accordingly.

IBC Root Beer Reindeer – Rudolph Glass Bottle Tutorial

You know dasher and dancer and prancer and vixen… But do you know the greatest IBC Reindeer of them all – Rudolph the Red Nosed Root Beer Reindeer!

Fun Glass Bottle Reindeer tutorial – have fun making all of Santa’s friends and gift to a hostess or friend for the holiday season.

Ingredients:

  • 6 Pack Bottled Root Beer
  • 12 Wiggly Eyes
  • 6 Red Pom Poms (1/4″)
  • 9 Brown Pipe Cleaners
  • Ribbon for Scarves (optional)
  • Glue (either E6000 or Hot Glue)

Directions:

  1. Glue eyes on bottle neck.
  2. Glue red pom pom nose just below eyes.
  3. Take 3 pipe cleaners and cut them in half, then cut each of these halves in half.
  4. Wrap a pipe cleaner just below the bottle cap and twist in the back and bring ends up to make main antlers.
  5. Take one of the quarter pipe cleaners and twist it about 1 1/4″ from end each main antler.
  6. Repeat this process for each bottle.
  7. If you would like, cut a piece of ribbon and wrap like a scarf around the bottle. Use a dab of glue to hold together.

NOTE: If you use the E6000, it needs to set for awhile before it will be tacky enough to stick to bottle.
