Grilled Watermelon Salad

Fire up the grill and get your taste buds ready for … watermelon! Most people may think that grilling fruit is bizarre but, it actually makes it taste better because it caramelizes the sugars in it. Add the grilled watermelon to crisp lettuce, top with creamy feta cheese and drizzle with tangy balsamic dressing and you’ve got a delicious, unique salad that you’ll make again and again! If you like extra crunch add some chopped pecans. Enjoy!

Ingredients:

Balsamic Salad Dressing
4 oz Feta Cheese
Watermelon Cut in 1/2 inch Triangles
1 package of Baby Arugula Lettuce

Directions:

Preheat your grill to a medium heat.
Cut watermelon up in 1/2 inch triangular pieces.
Place watermelon on the grill for 1-2 minutes on each side or until you have nice grill lines on your watermelon.
Place your watermelon on a bed of baby arugula lettuce. Top with Feta cheese and balsamic salad dressing.

Instructions

Preheat your grill to a medium heat.
Cut watermelon up in 1/2 inch triangular pieces.
Place watermelon on the grill for 1-2 minutes on each side or until you have nice grill lines on your watermelon.
Place your watermelon on a bed of baby arugula lettuce. Top with Feta cheese and balsamic salad dressing.

Homemade Apple Fries – Mini Apple Pie Sticks

Fall is approaching, as is an abundance of apples! We love these Mini Apple Pie Sticks aka Apple Fries. Slightly crunchy and spiced with cinnamon, these fries are perfect with a cup of tea, offered on a brunch table or a sweet after school treat! Serve alongside a bowl of warm caramel topping and it’s comfort food heaven! They could also be packaged pretty to give as gifts. Happy Fall!

Ingredients:

1 package Refrigerated Pie Crust (2 crusts)
10 oz Apple Pie Filling
1 Egg
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 cup Sugar
Sparkling Sugar
Caramel Topping for dipping

Directions:

Preheat the oven to 350.
Spray cookie sheet with non stick spray or use silicone mat and set aside.
Alow crusts to warm slightly to make them easier to work with.
Dust work area with flour and slightly roll out crusts.
Pulse in food processor a couple of time or use a knife to chop pie filling into smaller pieces.
Spread apples over top of 1 crust leaving about 1/8″ uncovered at edges.
Place other crust on top.
Cut into 1/2″ strips and then cut to frie sized lengths.
Beat egg in bowll until well blended.
Mix together sugar, cinnamon and nutmeg.
Brush tops with egg wash and sprinkle lightly with sugar mixture.
Then sprinkle with sparkiling sugar to resemble salt.
Transfer to prepared baking sheet.
Bake for 15-20 minutes or until golden brown.

Lobster Rolls

Lobster Rolls are one of those meals that you typically have while you’re at a restaurant and craving a good comfort meal. Although, you may only have them when you’re out of town, close to the coast. Either way, Lobster Rolls are really easy to make so, you can enjoy them at home anytime with this easy, delicious recipe! The slightly sweet and buttery lobster paired with the tangy lemon, creamy mayo and crunchy celery and spices topped on a buttery toasted bun. Perfection! You’ll think you were in Maine! Enjoy!

Ingredients:

2 (7 oz.) Lobster Tails
4 Hotdog Buns (you can also use slider buns)
½ Cup Spectrum Canola Mayonnaise
½ Cup Celery
1 Garlic Clove
1 tbsp. Fresh Squeezed Organic Lemon Juice
4 tbsp. Melted Organic Butter
½ tsp. Simply Organic Onion Powder
Salt & Pepper

Directions:

Preheat oven at 250 degrees F.
Fill a medium pot about 2/3 of the way with water. Bring to boil. Add lobster tails. You will notice that the shells will begin to turn red almost immediately. Boil for approximately 8-10 minutes. The lobster tails will become slightly curled. Remove lobster tails from water. Set aside on cutting board and let cool.
Dice the celery and garlic clove into small pieces. Slice the lemon in half. Set aside.
Using scissors, cut down the center of each shell. With your fingers, pull the shell away until it breaks away from the meat. Do this until the shell is completely removed from the meat. Discard shell. Chop the lobster into small pieces.
Add 3 tbsp. butter to small microwavable bowl. Microwave for 1 minute or until butter is melted.
Toss chopped lobster in butter. Add onion powder, chopped garlic, lemon juice, chopped celery and mayonnaise to bowl. Stir well with spoon. Add salt and pepper to taste.
Toast 4 buns in oven at 250 degrees for 3-4 minutes. Remove from oven.
Add lobster mixture to each bun.
Heat 1 tbsp. butter in small microwavable bowl. Take an unused paintbrush and brush the melted butter onto each bun. Not only will this increase its flavor value, but it will glisten!
Now grab a blanket and take your picnic outside! Enjoy one of the most beloved foods of every seaside resident – best served with tortilla or potato chips and an ice-cold beer or a nice pop!

Did you love the Poke Cake Recipes we shared the other week? We have another great recipe for you, Boston Cream Poke Cake made with JELL-O Instant Vanilla Pudding Mix and Duncan Hines Yellow Cake Mix. This recipe is so easy! 4 ingredients and you’re ready to go! It would make such a special treat for Back-To-School lunches for Teachers and Staff. Also, keep these ingredients handy for the holidays coming up. So easy to prep ahead. Enjoy!

Ingredients:

1 box Yellow Cake Mix (plus box ingredients)
2 boxes 3.4 oz Instant Vanilla Pudding Mix
4 cup Milk
1 container Chocolate Frosting

Directions:

Prepare cake in 9×13 pan according to box directions.
Use spoon handle to poke holes evenly across cake.
Combine milk and pudding mix and whisk until well blended.
Pour pudding over cake making sure it gets down into holes.
Refrigerate cake for several hours to allow pudding to settle and set up.
Open frosting container and revove foil seal.
Microwave for 15 seconds and stir. Repet this until frosting is pourable.
Pour over pudding layer and spread with spatula to cover completely.
Refrigerate for at least several more hours.
