Roasted Corn & Veggie Street Tacos

If you read the blog, you know our love of tacos. We love tacos so much, we had to start twisting up recipes to not eat the “same old” recipe all the time. This taco recipe is fun. With a simple twist of lime and a touch of roasted corn, it’s delicious and and an often shared recipe.

Ingredients:

  • 2 cups canned corn (about 15 oz)
  • 2 cups canned black beans (about 15 oz)
  • 1 cup rice
  • 1 garlic clove
  • 1 tomato diced
  • 1 avocado sliced
  • shredded Parmesan cheese
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon salt
  • Dash of pepper
  • 6 tortillas
  • Lime wedges


Directions:

  1. In a pot, bring 2 cups lightly salted water to boil.
  2. Add the rice reduce to a simmer with the lid closed.
  3. Let it simmer until all the water is gone or about 15 minutes.
  4. Remove from the heat and let it it for 5 minutes.
  5. Mince the garlic, and add it to a nonstick skillet with vegetable oil on medium-high heat.
  6. Add corn; cook 8 to 10 minutes or until corn starts to brown, stirring occasionally (we made the mistake of not roasting until the brown edging appeared.)
  7. Stir in chili powder, salt and pepper to the corn.
  8. Evenly mix corn and rice together in a bowl.
  9. Slice the avocado, and tomato. Set aside.
  10. Warm the black beans in the microwave.
  11. Prepare the tortillas with the rice, corn, black beans, tomato, avocado, garlic, and Parmesan cheese.
  12. Top each individual taco with a touch of lime as needed.
  13. Serve and enjoy.

Tips: Looking for additional flavor? Try our Homemade Taco Seasoning. These make about 6 tacos, multiply as needed for your home.

Looking for an EASY mug recipe to get started? This Mug Brownie Recipe for One  has ingredients you likely have in your pantry, no need to run to the store. Best of all, this brownie recipe takes only a couple minutes to make making your evening dessert ready in under five minutes – no need waiting 25 minutes for that oven to ding! I love that I am not over eating. It seems once I make a pan of brownies, I am always trimming the edges until suddenly half the pan is gone! This is also easy for college students who might be living in a dorm, no eggs are necessary. Enjoy!

Ingredients:

  • 8 Tablespoons flour
  • 4 Tablespoons cocoa powder
  • 6 Tablespoon sugar
  • 4 tablespoons vegetable oil
  • 6 tablespoons water
  • 1 tablespoon chocolate chips (topping)


Directions:

  1. Add all ingredients (except chocolate chips) and mix well.
  2. Microwave for 1-2 minutes.
  3. Top with chocolate chips and microwave for another 15 seconds and enjoy!

*Multiply as needed depending on the size of the mug.

Greek Mug Omelet

I love an easy morning breakfast recipe. This Greek Mug is so tasty and perfect for breakfast or even dinner. If eating for dinner, serve with a side salad and it’s a perfectly, healthy option for a meal. Best of all, this recipe takes no more than 5 minutes for prep and clean up! Enjoy.

Ingredients:

  • 2-3 eggs
  • 1 tablespoon milk or water
  • 2 tablespoons Kalamata olives
  • 2 tablespoons tomatoes, diced
  • 1 tablespoons red onions
  • 3 tablespoons shredded feta cheese
  • Salt and pepper


Directions:

  1. Spray the inside of your mug with a non stick cooking spray.
  2. Pour your eggs and milk into your mug, season with salt and pepper and whisk with a fork until combined.
  3. Mix in 2 tablespoons of your feta cheese and all of your tomatoes, olives, and onions.
  4. Microwave on high for 2-3 minutes or until your eggs are cooked thoroughly.
  5. Sprinkle your remaining cheese on top and enjoy!

Bunco Recipe Idea – Dice Cookies

Raise your hand if your bunco night is less about the dice and more about the food and time spent with friends? I don’t know about you, but when bunco night comes around and it’s my time to host, I am often struggling for the best recipe idea. These dice cookies can be used with a girls’ bunco night or have fun making them with the kids to celebrate a family game night!

Bunco: (also Bunko or Bonko) is a game played in teams with three dice. The game is played with two or more people often in teams of two. An ideal game has three tables of four people (12 people total), with two people at each table on a team for a total of six teams. The goal of the game is to get the Bunco (three matching dice) for a total of 21 points. The team with the most points wins.

What You Need:

  • Decorating bags
  • Parchment paper
  • Square Cookie Cutter or use a knife

Ingredients:

  • 3/4 cup softened butter
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups + 2 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 1 egg
  • Tube black icing
  • 16 oz creamy vanilla frosting


Directions:

  1. Preheat your oven to 325° and line a couple baking sheets with parchment paper or a silicone baking mat.
  2. Use a hand mixer to beat your butter and sugar until light and fluffy.
  3. Mix in your vanilla and almond extract and egg.
  4. Then mix your flour in and continue to mix until your ingredients start sticking together.
  5. Roll your dough out onto a floured piece of parchment paper and use your square cookie cutters to cut out your dice shapes and place onto your lined baking sheets.
  6. Bake for 8-10 minutes (depending on how thick your dough squares are) and let cool.
  7. Fill one decorating bag with your black icing and one with your vanilla frosting and cut the tips off.
  8. Frost a white outline on each square, fill in, and smooth your frosting out.
  9. Now draw small circles onto the white squares for the dice numbers.

We love the taste of sweet potato and adding the savory taste of ravioli makes this one amazing appetizer (or an excuse for dinner!) This Ravioli Recipe is quick and easy and tastes amazing! Make with cheese ravioli or meat ravioli – whatever you desire or taste! We suggest serving this at a party, tailgate or make as a fun alternative to pasta for dinner!

Ingredients:

  • 2 Cooked sweet potatoes
  • 2 Cups ravioli
  • 2 Cups vegetable oil
  • 1 Tsp black pepper
  • 1 Tsp salt

  2. Place ravioli in the pot, 10 at a time and fry for 4-5 minutes.
  3. Set ravioli aside on a paper towel to absorb the oil.

  5. Season with salt and pepper then place between ravioli
  6. Secure by placing a toothpick through the center.
  7. Serve and enjoy.

Tip: Drizzle melted butter and herbs on top.

Mexican Chimichurri Pork

Here is a nice meal idea for your next evening in. This Mexican Chimmichurri Pork mixes the taste of parsley, garlic, pepper, and more. This recipe calls for 2 pieces of pork, multiply ingredients as needed for larger families.

Ingredients:

  • 2 Pork Steaks
  • 1 Tsp salt
  • 1 Tsp coarse black pepper
  • 1/2 Tsp white pepper
  • 2 Tbsp olive oil
  • 1/4 Cup chopped parsley
  • 2 Minced garlic cloves
  • 1/2 Tbsp white vinegar
  • 1 Cup red cabbage, shredded


Directions:

  1. Clean and season steaks with salt, white pepper, and black pepper.
  2. Heat up a medium-sized skillet and coat it with 1 tbsp of olive oil.
  3. Place steaks in the skillet and let cook for 7 minutes then rotate to the other side and cook for 7 more minutes.
  4. When meat is cooked to desired liking, turn off the fire and cover half way with a lid.
  5. In a small bowl, combine the parsley, garlic, and white vinegar.
  6. Stir mixture together until well blended then pour on top of the steaks.
  7. Serve the steaks on top of the shredded cabbage.
  8. Enjoy.

Tips: To switch to a red chimichurri sauce simply add 1/2 tbsp of paprika and ½ tsp of cayenne pepper for a fiery touch.

I love this dessert because it has many uses. First, it’s a fun winter food craft for the kids. Second, we are huge Eric Carle Fans and it reminds me of the Brown Bear book. Finally, it fits perfectly for a bear theme party. Have fun making these cookies from scratch. The recipe yields about 36 cookies. If you are in a pinch for time, use a sugar cookie package mix.

Ingredients:

  • 6 cups flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup butter, softened to room temperature
  • 2/3 cup sugar
  • 2 eggs
  • 1 cups sour cream
  • 2 tsp. vanilla extract

Chocolate Frosting Ingredients:

  • Wilton dark brown chocolate candy melts
  • Wilton candy eyes
  • Mini Nilla Wafers
  • Brown M&M’s


Directions:

  1. Preheat the oven to 400 degrees.
  2. Combine the flour and baking powder and set aside.
  3. In a large bowl combine the butter, sugar, egg, sour cream and vanilla. Slowly fold in the flour and baking powder mixture.
  4. Scoop the cookie dough into 2″ balls and place about 2″ a part on a large baking sheet. Use a flat bottom glass to gently press (flatten) each dough ball to about 1/4″. Consider laying on parchment paper.
  5. Bake 6-8 minutes.
  6. Once the cookies have cooled, generously frost each one with chocolate frosting and set aside.
  7. Place 2 chocolate candy melts on the cookie for the bears ears.
  8. Give each cookie 2 eyes.
  9. Place 1 mini Nilla Wafer on the bottom of the cookie for the bear’s snout.
  10. Place a small dab of chocolate frosting on the brown M&M’s and give the bear a nose.

Ingredients

Scale
  • 6 cups flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup butter, softened to room temperature
  • 2/3 cup sugar
  • 2 eggs
  • 1 cups sour cream
  • 2 tsp. vanilla extract
  • Chocolate Frosting Ingredients:
  • Wilton dark brown chocolate candy melts
  • Small candy eyes
  • Mini Nilla Wafers
  • Brown M&M’s

Instructions

Shredded Chicken Tacos in the Slow Cooker

We are so in love with how quick and easy these slow cooker Shredded Chicken Tacos are. Toss in your Crock-Pot and cook for 6 hours and you have dinner in the evening when you arrive home. This recipe makes 6 to 8 servings.  We love it so much we added it to our 52 Weeks of Taco Tuesday Recipes.

Crock Pot Shredded Chicken Tacos
Yields: 6-8 Servings
Prep Time: 15 Minutes | Cook: 6 Hours

Ingredients:

  • 5 boneless chicken breasts (3 lb package)
  • 1 packet of taco seasoning
  • 1 onion, diced
  • 1 (4.5 ounce) can chopped green chilies, undrained
  • 1 (14.5 ounce) can fire roasted tomatoes
  • ½ cup fresh cilantro, chopped
  • Corn or flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole, lettuce, tomato

Directions:

  1. Place chicken breasts in the bottom of Crock-Pot (slow cooker).
  2. Sprinkle taco seasoning evenly over the chicken and top with diced onion.
  3. Pour cans of fire roasted tomatoes and green chilies over the top.
  4. Cover and cook on low for 6-8 hours.
  5. Remove lid and shred the chicken with two forks. Add chopped cilantro and incorporate into chicken mixture.
