Chicken Parmesan Bread

I need easy dinners. I need easy dinners that please a diverse group. I need easy dinners, that please a diverse group and fill bellies.

As you all know, I am a mother of five. With are family with a large spread of ages, the twins being 19 months old and myself (the oldest) being a number that I will not share.  When cooking, my goal is to please everyone with one recipe. Baby food went out the window rather quickly in replacement of “what the family eats, you eat!” In addition to creating happy taste buds, I also look to fill tummies. Full bellies = happy kids (and a happy husband!) For example, the twins were barely on the growth chart when they were born. They went form 5 lb preemies to soaring above average on height and weight. This home fills stomachs. And don’t let the 19 month old age fool you; these growing boys can eat more than my 11 year old.

This recipe came to me from a friend and I quickly adapted to my easy, efficient lifestyle. Not many ingredients are required and I can quickly put the meal on the table getting the recipe form kitchen to plate in under an hour with very little prep. I don’t mind cook times, just don’t make me too involved in the preparation of the meal!

Did you know?

I have a secret ingredient – don’t tell the kids. We had the opportunity to work with RAGÚ Simply Creamy sauces and I was eager to create our own family version of my friend’s Chicken Parmesan Bread recipe.  I personally found it appealing that these sauces were made with milk and cauliflower, replacing traditional heavy cream.  It contains half the fat of RAGÚ’s Classic Alfredo Sauce, with the same delicious taste and texture. That sounds like a win to me!

Look at these simple ingredients.

Chicken Parmesan Bread Ingredients:

  • 1 jar of RAGÚ Simply Creamy Garlic Parmesan Sauce
  • Seasoned chicken (we used extra virgin olive oil, Italian seasoning, salt and pepper)
  • French bread
  • 1/4 Cup butter, melted
  • 1 Tablespoon minced garlic
  • 2 Cups mozzarella cheese

Chicken Parmesan Bread Ingredients

You will need to precook your chicken, but I have no problem with that. As long as there is little prep from me in the kitchen. Look at these easy dinner recipe directions.

Chicken Parmesan Bread Directions:

Begin by preheating your oven to 375 degrees.

Add a tablespoon of extra virgin olive oil (EVOO) to the bottom of a baking dish, place the chicken on top and top with a drizzle of EVOO.

Sprinkle Italian seasoning, salt and pepper onto the chicken and bake for 30-40 minutes or until the chicken is fully cooked.

Once the chicken is cooked, reduce your oven temp to 350 degrees.

Cut your chicken into small bite sized pieces.

Next, cut your French bread in half and then cut each half into half again ( a total of four pieces.)

Place each French bread piece with the crust side down onto a parchment paper lined baking sheet.

Mix your butter and garlic together and heat for 30 seconds in the microwave.

Brush the garlic butter evenly on the bread.

Add about 3 spoonfuls of RAGÚ Simply Creamy Garlic Parmesan with Cauliflower Sauce of each piece of bread and spread out evenly.

Add cut chicken breasts on top of the sauce.

Top each loaf with 1/2 cup of mozzarella cheese.

Bake for 30-35 minutes at 350 and enjoy!

Eager to try this Chicken Parmesan Bread recipe yourself?

Save money with your Valpak envelopes. Look for a 75¢ coupon for RAGÚ Simply Creamy sauce and redeem it at your local at Walmart store. At $1.66, that brings the price of this secret ingredient to only 91¢. So half the calories and almost have the price! Sweet.

You could also try another one of the new RAGÚ Simply Creamy sauce flavors. We used Garlic Parmesan but feel free to replace that with their Alfredo sauce.

Pair your Chicken Parmesan Bread with a veggie.

I suggest serving with broccoli or another green. Cook the broccoli in the oven with your bread (350, 30 to 35 minutes) prepping with a drizzle of olive oil, salt and pepper. You could use any extra sauce to serve over the broccoli, as well.

How is your summer going? We are doing okay. Since moving from Florida, I am grateful for hot days that still offer cooler evenings. We didn’t get much of that in the south. It was a hot day and night!

Summers in DC have evolved. I want from having very young kids, to elementary aged kids, to very young kids (again!) It has caused me to get creative with activity having a range of ages and desired activities. As my toddler has aged, and his little brothers trail behind him, we have kept to our home. It isn’t for lack of desire to go out, it’s for fear to go out.  Chasing after 18 month old twins is so hard – they split and run different directions. To appease my (almost) 3 year old’s heart, we have tried to find creative toddler crafts and science activities on Pinterest. I am so grateful for Pinterest, anyone else?

If you are trying to busy your little one’s summer bucket list, take a look at this Garden Journal. We suggest grabbing a clip board and a starter gardening kit for kids. Let us know what you plant!

What are you first day of school traditions? Historically, we have always gone out for ice cream after school. Apparently, we are not alone because we always ran into friends in our ice cream runs. One year I found myself at Target and let the kids pick up a treat in the toy aisle – I am a sucker. As more kids came along, our after school adventures ran into younger siblings naps and I had to get creative at home. Thus evolved our First Day of School Snack Ideas you can make at home.

We wanted more Back to School Snack Ideas and I am sure you did too. From Graham Cracker Pencils to Chalkboard Cookies to Apple Nutter Butter Pops, we have plenty of creative kids snacks to welcome your kids into the front door! This year, we bring you donuts!

These apple doughnuts do not disappoint. Have as a surprise after school snack for the kids or let them enjoy the process as these donuts are incredibly easy for little hands to make!

Three Apple Doughnuts Recipe

Your ingredients are pretty simple. Pick up donuts at the store as your base – no oven necessary!

Apple Donuts Ingredients:

  • Plain donuts
  • Red frosting
  • Red sprinkles
  • Pretzel sticks
  • Green fondant

What is Elf on the Shelf?

Elf on the Shelf is a Christmas Tradition. The tradition has a book and a elf doll. The book is poetic and in rhyme sharing the purpose of the Elf’s visits. The Elf visits each Thanksgiving. He/She goes and returns from the North Pole each evening. Every morning he can be found in a new location in the house. The Elf has been found in the refrigerator, fishing in the toilet, writing messages on the mirror or hanging from the lights. It is VERY IMPORTANT, the Elf is not touch each evening or his Christmas magic will be lost! Each family is able to name their special elf. Middle school can be intimidating. The big halls, the switching classes, feeling like a little fish in a large pond… but come on, when it comes to the locker (only), you know you wanna go back. To me, decorating a locker is like the graduation of decorating your childhood doll house. You have graduated from the dolls/Barbies, but this gives you your unique space to have fun and call your own. While my girls are still in elementary school, I had fun with this post. I love the rungs, the chandeliers, the shelving, the decor, all the little touches that would make your little (excuse me, big girl) feel special on the first day of school! And you know what mom, a lot of it is still fun and juvenile just to keep her from growing up too soon!
