Swoosh! March Madness determines the national champion of college basketball. It begins in March and rolls in to the month of April. I don’t know much about basketball, let alone many sports but I do know that my husband comes from a family of boys so when a sports tournament is on, chances are he is right there in front of the action! This is especially true of the basketball season of March Madness. I am participant in this annual sports tournament, as long as there is food. Below are recipes perfect for a feast and what better excuse for party in the middle of spring?!

Easter Carrots Rice Krispies Treats

This Rice Krispies Treat Recipe REALLY excites me because they are EASY! Use pre-packaged Kellogg’s Rice Krispie Treats for these yummy edible carrots. As a mommy who is on the go, my favorite part is only two ingredients but a finished adorable treat in the end!

Easy Easter Carrot Rice Krispies Treats – 3 Ingredients

Ingredients

Scale
  • 4 Rice Krispie Treat
  • 6 oz Orange Candy Melting Chips (like Wilton)
  • Edible Easter Grass or Rips Whips Candy

Instructions

  1. Line a cookie sheet with parchment paper and set aside.
  2. Cut each treat in half lengthwise, then cut each of them in half diagonally.
  3. Take each piece and insert a toothpick in the flat end and place on prepared sheet.
  4. Place in freezer for to minutes.
  5. Melt orange candy by microwaving for 30 seconds, stirring and repeating until melted and smooth.
  6. Pick up each by toothpick and either dip or spoon melted candy over each “carrot” to cover completely.
  7. Return to sheet.
  8. Place in refrigerator for 15 minutes.
  9. Cut several 1″ pieces of the Easter grass or Whips for each carrot.
  10. Take each carrot and carefully remove toothpick. Use the toothpick to enlarge the hole big enough to insert the grass.

St. Patrick’s Day Leprechaun Cookies

Celebrate St. Patrick’s Day with a treat that will make your little leprechaun grin! These Cake Mix Cookies are so simple to make with just a few ingredients. You’ll mix, shape and roll into gold, green and white confetti sprinkles and bake. They’ll love helping you in the kitchen! You can also bag them up to give to your friends and teachers for a sweet surprise.




Ingredients:

  • 1 package of white cake mix
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 1 tablespoon baking powder
  • Green and white confetti sprinkles

Directions:

  1. Preheat your oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. Combine your cake mix, eggs, flour, and baking powder in a mixing bowl.
  4. Mix your ingredients with a hand mixer.
  5. Using a spoon, scoop out your dough into tablespoon sized balls.
  6. Place the top of your dough balls into a bowl of sprinkles
  7. Place your dough ball sprinkle side up onto your parchment paper lined baking pan
  8. Bake for 10 minutes.

Chocolate Dipped Cookie Dough Bites

I am incredibly guilty. If there was a self-help group for eating chunks of cookie dough, I would be a member.  This yummy recipe includes a few of my favorites in chocolate chip cookies – brown sugar, butter, vanilla and NO EGGS! You will be happy to delcare this as your family’s favorite cookie recipe!

Note: For Easter, we shapped these into Eggs!

Ingredients:

  • 1/2 cup Brown Sugar
  • 2/3 cup Flour
  • 1/4 cup Chocolate Chips
  • 4 tbsp softened Butter
  • 2 tbsp Milk
  • 1/4 tsp Salt
  • 1/4 tsp Vanilla
  • 8 oz Chocolate Dipping Candy

Directions:

  1. Line a tray with parchment or wax paper.
  2. Heat flour in microwave for 2 minutes (internal temp 160). Careful you do not burn it.
  3. Mix together brown sugar, butter, vanilla and salt until well mixed.
  4. Add in milk and gradually add flour until desired dough consistensy is reached.
  5. Stir in chocolate chips.
  6. For Easter, we chose to form these into egg shapes (you can do another shape like circles.)
  7. Place in freezer for at least 30 minutes.
  8. Melt chocolate by microwaving for 30 seconds, stirring and repeating until melted and smooth.
  9. Use a fork to dip each egg into chocolate, shake off excess and place on prepared tray.
  10. Place in refrigerator until chocolate sets.

This yields about 15 smaller bites or 8 larger ones.

It’s another Frugal Fashion Friday Outfit. The weather is getting warmer (okay, well we can all pretend) and spring weddings are upon us. Right now, the cut off shoulder look is in. We love the ruffles, paired with this trending style, in this maxi dress. How adorable is that print for a spring wedding. Wear with some thin strappy shoes to keep the focus on the dress and not the feet. A little floral scent and and some nude accents and you are all ready to sing “hear comes the bride!” Don’t forget the hankey!
