Another St. Patricks Day Treat – Check out this Guinness Beef Stew Recipe, perfect for your St. Patty’s Dinner. This entree makes a great prelude to your Green Velvet Cupcakes with Baileys Cream Cheese Frosting.

Ingredients:

  • 1 1/2 lb Beef Chuck cut into 1 1/2-inch pieces
  • 1/2 cup Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Vegetable Oil
  • 2 tsp minced Garlic
  • 3 cup Beef Stock
  • 1 bottle Guinness Extra Stout (optional: 1 bottle for yourself)
  • 1/2 can Tomato Paste
  • 2 tbsp Brown Sugar
  • 1/4 tsp dried Thyme
  • 1 tbsp Worcestershire Sauce
  • 2 pounds of small Red Potatoes, quartered
  • 1 Onion, chopped
  • 1 lb Carrots, chopped
  • 1 Bay Leaves

Directions:

  1. Preheat oven to 350.
  2. Mix together flour salt and pepper.
  3. Heat oil in dutch oven over medium high heat.
  4. Dredge meat in small batches and brown in oil.
  5. Remove browned beef and set aside.
  6. Add Onion to pan and cook until golden (about 5 minutes).
  7. Add Guinness and garlic and scrape browned bits from bottom of pan.
  8. Add back browned beef and remainder of dredging flour and bring to a simmer.
  9. Then, add in the beef stock, tomato paste, brown sugar, thyme, and Worcestershire sauce.
  10. Place in oven for 2 hours or until meat is fork tender.
  11. Add in carrots and return to oven for 1 hour.
  12. Add in potatoes and return to oven for 1 hour or potatoes are cooked through.

This recipe can also be made in the slow cooker.

Homemade Sugar Scrub Featuring Essential Oils

Homemade body products are very popular right now, whether they are for your own use or to give as a homemade gift. They are much more frugal than their store bought counterparts, you can eliminate unnecessary chemicals, and customize your scent combinations using Essential Oils. Did you ese our Homemade Vicks VapoRub?

One of my favorite items to make is a sugar scrub. Easy, decadent, and I almost always have the items on hand. Need a last minute present for a new mom who could use some pampering? A thoughtful teacher gift? Or perhaps you yourself just need a mini spa pamper… Homemade Sugar Scrubs are your answer.

You Will Need:

  • 1 cup granulated sugar
  • ½ cup oil- almond, olive, or coconut
  • 1 Tbsp. pure castile soap
  • Young Living Lavender Essential Oils of your choice.

Directions:

  1. Combine all ingredients in a medium sized bowl.
  2. Add more sugar or oil to create the perfect texture for you.
  3. Begin adding your oils 2-3 drops at a time until desired scent strength is reached.

Mood Scents:

  • Relaxing – Lavender, Peace and Calming, Stress Away
  • Invigorating – Peppermint, Lemon, Orange, Joy

No-Chun Cherry Cheesecake Ice Cream

Ready for a cooler dessert after this winter spell? Try this No-Churn Easy Cheesecake Ice Cream. This recipe requires minimum ingredients and and easy to do in your home. Mix it up with pumpkin or blueberry for different ice cream flavors – a different dessert pick for everyone in the home!

Ingredients:

  • 2 cup Heavy Whipping Cream
  • 14 oz Sweetened Condensed Milk
  • 8 oz softened Cream Cheese
  • 2 tsp Vanilla
  • 2 cup Cherry Pie Filling
  • 3 tbsp Sugar

Directions:

  1. In a large bowl, beat cream cheese until creamy and smooth.
  2. Using a electric whisk, add condensed milk and vanilla, whisking until smooth.
  3. Add in vanilla extract and heavy cream. Whisk on high speed until soft peaks form.
  4. Spread half of this mixture into a loaf pan.
  5. Spoon cherry filling over the whipped mixture.
  6. Top with remaining cream mixture, spreading evenly.
  7. Using a knife, drag or swirl the cherry mixture into the cream mixture.
  8. Cover with foil and freeze for 6 hours or until firm.

Green Velvet Cupcakes with Baileys Cream Cheese Frosting

Seasons and holidays always seem to produce a recipe for the kids. This St. Patrick’s day, we haven’t forgotten the adults. Check out these delicious GREEN VELVET CUPCAKES with a touch of Baileys in a Cream Cheese Frosting… prepare to eat the entire batch (so make a few!) This recipe yield 12 cupcakes.

Cupcake Ingredients:

  • 1 1/4 cup Flour
  • 1 cup Sugar
  • 1 tbsp Cocoa Powder
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 Egg
  • 1/2 cup Oil
  • 1/2 cup Milk
  • 1 tsp Vinegar
  • 1/2 tsp Vanilla
  • Green Food Coloring (also consider Green Gel Food Paste)

Frosting Ingredients:

  • 8 oz softened Cream Cheese
  • 4 tbsp softened Butter
  • 3 cups Powdered Sugar
  • 3 tbsp Baileys (Optional: a cup for yourself)

Directions:

  1. Preheat oven to 350.
  2. Line a muffin pan with paper liners.
  3. Beat egg and then add remaining wet ingredients and whisk until blended.
  4. In a separate bowl whisk together all the dry ingredients.
  5. Add wet ingedients to the dry stir until combined.
  6. Now add food coloring until you reach the desired color.
  7. Fill cupcake liners about 2/3 full.
  8. Bake about 20 minutes or until toothpick inserted in middle comes out clean.
  9. Allow to cool on wire rack.
  10. Cream together cream cheese, butter and Baileys.
  11. Gradually add in powdered sugar and whip until desired consistency is reached.
  12. Transfer to zippered bag or piping bag and pipe frosting onto cupcakes.

This recipe yields 12 cupcakes

We shared with you last week a delicious Guiness Stew. This week, pair your soup with an amazing Guinness Bread.

Pair this dinner entree with  Guinness Cupcakes or Green Velvet Cupcakes. Best of all this frosting is made with Baileys!

Ingredients:

  • 1 cup Rolled Oats
  • 2 cup Whole Wheat Flour
  • 1/2 cup Brown Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 cup melted Butter
  • 2 tsp Vanilla
  • 1 cup Milk
  • 1 tsp Vinegar
  • 12 oz Guinness

Directions:

  1. Preheat oven to 425.
  2. Grease a loaf pan.
  3. Combine milk and vinegar and set aside for 10 minutes.
  4. Mix together 3/4 cup of oats, flour, sugar, baking soda, baking powder, and salt.
  5. In another bowl, stir together the butter, vanilla, milk mixture and Guinness.
  6. Add dry mixture into the liquid mixture, and stir until blended.
  7. Pour batter into the prepared pan.
  8. Sprinkle top with remaining oats.
  9. Bake 30 minutes, then reduce temperature to 400 and bake for additional 20 minutes.
  10. Allow to cool in pan for 30 minutes before moving to a wire rack.

Creamy Chicken and Broccoli Pasta Skillet Recipe

Tonight’s recipe is an easy and healthy meal that’s perfect for make ahead meals. Similar to the bags of frozen Birds Eye Voila Skillet Meals, where you just heat and serve. Only you control the ingredients and keep the preservatives out. Change up the cheese, meat, seasonings and pasta for lots of different flavor combinations.

Ingredients:

  • 2 cups broccoli florets
  • 1 ½ cups Monterey jack shredded cheese
  • 1 lb. chicken breasts
  • 1 cup chicken broth
  • ½ cup milk
  • 3 cloves crushed garlic
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 ½ cups uncooked bowtie pasta

Chop chicken into small bite sized pieces. In a saucepan over medium, heat 1-2 Tbsp. olive oil, add garlic and chicken, saute until cooked through. Set aside to cool.

Freezer Prep:

To prep for freezing, place; broccoli, chicken broth, milk, salt, pepper, and shredded cheese in a freezer safe gallon bag.

Cooking Directions:

Pour contents of gallon bag into sauce pan on low heat with 1-2 Tbsp. olive oil, cook until combined, Boil pasta for 8-12 minutes in 2 quarts of water. Toss pasta with chicken mixture. Serve.

Christmas Tree Rice Krispie Treats

I have had fun sharing with you Rice Krispie Treats for every holiday – Thanksgiving, Valentine’s Day, Halloween and more. I love this Christmas Tree Tutorial and I have a great tip to help you mold the tree – Use the trial form that comes in a waffle cone pack to protect the cones and cut it to make a form to help shape the trees. Directions and tips below!

Ingredients:

  • 6 cup Rice Krispies Cereal
  • 3 tbsp Butter
  • 10.5 oz Marshmallows
  • Green Food Coloring
  • 12 Miniature Reese’s Cups
  • 1/3 cup M&M Minis
  • 12 Candy Stars
  • 3 cup Powdered Sugar
  • 3 tbsp Milk
  • 3 tbsp Corn Syrup

Directions:

  1. To help in forming the cone shape, I took the foam that comes in a waffle cone pack to protect the cones and cut it to make a form to help shape the trees.
  2. Line a cookie sheet with parchment paper.
  3. In a medium to large saucepan, melt the butter over low heat.
  4. Add the marshmallows and stir until completely melted.
  5. Add enough food coloring to make mixture dark green (it will lighten when cereal is added).
  6. Remove from heat.
  7. Add the Rice Crispies cereal and stir until cereal is well coated.
  8. Allow to set about 4 minutes.
  9. Butter a your hands and form mixture into cone shapes.
  10. Place cones onto prepared pan.
  11. Allow to cool and firm up for several hours.
  12. Mix powdered sugar, milk and corn syrup in a bowl until smooth.
  13. Transfer to piping bag or zippered bag to pipe onto cookies.
  14. Pipe like a garland around each tree.
  15. Space M&M minis like ornaments onto the garland.
  16. Pipe a dab of icing on top of tree to act as glue and attach star.
  17. Place a Reese’s upside down on pan. Pipe icing on it and place tree on top.
  18. Allow to set before serving.

Here’s how to sign up:

1. Head over to the Young Living page here and fill out your information.

2. Be sure the “Wholesale Member” option is checked so that you don’t end up paying retail prices.

3. Be sure the “sponsor ID” and “enroller id” say 1819360 (so that I can send you your FREEBIES)

4. If you do not feel comfortable putting in your social security number (this is only for tax purposes if you decide to turn this into a business) then you can get an EIN from the IRS in just a few seconds here and use that number instead (the IRS just needs to be able to connect some number with you for tax purposes). They need a Social Security Number or an EIN because if you make $600 or more per year selling Young Living products, you will receive a 1099 form in the mail (which is required by law). Young Living will never share this info with anyone.

5. Select which starter kit you want to get. To get the FREEBIES, you’ll need to check the option that says “Premium Starter Kit”. You can get the kit that’s $150 or you can get the kit that’s $160 with the Bamboo Diffuser (in my opinion, the Bamboo Diffuser looks nicer, but doesn’t put out as much as the diffuser that comes with the $150 kit).

6. There’s a Step 3 of the sign-up process that you can skip if you don’t want to mess with that part, OR you can get a couple of extra free oils if you know already that you would like to order monthly (see BONUS step below!)

7. Go through the checkout process.
