Looking for an EASY mug recipe to get started? This Mug Brownie Recipe for One  has ingredients you likely have in your pantry, no need to run to the store. Best of all, this brownie recipe takes only a couple minutes to make making your evening dessert ready in under five minutes – no need waiting 25 minutes for that oven to ding! I love that I am not over eating. It seems once I make a pan of brownies, I am always trimming the edges until suddenly half the pan is gone! This is also easy for college students who might be living in a dorm, no eggs are necessary. Enjoy!

Ingredients:

  • 8 Tablespoons flour
  • 4 Tablespoons cocoa powder
  • 6 Tablespoon sugar
  • 4 tablespoons vegetable oil
  • 6 tablespoons water
  • 1 tablespoon chocolate chips (topping)


Directions:

  1. Add all ingredients (except chocolate chips) and mix well.
  2. Microwave for 1-2 minutes.
  3. Top with chocolate chips and microwave for another 15 seconds and enjoy!

*Multiply as needed depending on the size of the mug.

Scale

Instructions

Weight Watchers® Recipes and Their Point Values

I first joined Weight Watchers® when I was in college.  While it’s been awhile, since that time, the points (and how many I should have daily) hasn’t left my mind or my habits.

Did you know that toward the end of 2015, WW changed their point system. While both are still used interchangeably on the the web, SmartPoints® (SP) has replaced what we formerly know as Weight Watcher PointsPlus® (P+). What’s the difference? Well PointsPlus® was about limiting your points. That meant you could have 3 Snickers Bars and call it a day meeting your quota exactly. Smart Points focuses on the eating lifestyle and habits taking in to consideration things like proteins, sugar, saturated fats, starches, etc. This allows members to really think about what they are eating and making better choices over calorie counting.

Below are a list of some exciting recipes. Some take into account both P+ and SP while others still use calculations based on the old P+ system. Happy eating!

Greek Mug Omelet

I love an easy morning breakfast recipe. This Greek Mug is so tasty and perfect for breakfast or even dinner. If eating for dinner, serve with a side salad and it’s a perfectly, healthy option for a meal. Best of all, this recipe takes no more than 5 minutes for prep and clean up! Enjoy.

Ingredients:

  • 2-3 eggs
  • 1 tablespoon milk or water
  • 2 tablespoons Kalamata olives
  • 2 tablespoons tomatoes, diced
  • 1 tablespoons red onions
  • 3 tablespoons shredded feta cheese
  • Salt and pepper


Directions:

  1. Spray the inside of your mug with a non stick cooking spray.
  2. Pour your eggs and milk into your mug, season with salt and pepper and whisk with a fork until combined.
  3. Mix in 2 tablespoons of your feta cheese and all of your tomatoes, olives, and onions.
  4. Microwave on high for 2-3 minutes or until your eggs are cooked thoroughly.
  5. Sprinkle your remaining cheese on top and enjoy!

Raspberry Chia Smoothie Bowl

I was never a breakfast person until I married my husband. Now, I can not advance forward throughout the day without something heavy in my belly. Often this was a sloppy bagel topped with bacon, egg and cheese but more recently, I have been watching what I have been putting in my gut, after all, this food is the jump start to my day! This Raspberry Chia Smoothie Bowl is so easy and good. Consider adding in a touch of powdered fiber and a touch of flax oil.

Ingredients:

  • 2 cups almond milk
  • 1 banana, sliced
  • ¼ cup oats
  • 2 tbsps maple syrup
  • 1 ½ cup frozen raspberries
  • ½ cup chia seeds


Directions:

  1. In a blender add the milk, banana, oats and,
  2. Pulse until creamy.
  3. Add 1 cup frozen raspberries and the maple syrup.
  4. Pulse and add more maple syrup if desired.
  5. Serve into bowls.
  6. Decorate with the remaining raspberries and chia seeds.

Enjoy.

Tips: Try adding some coconut milk for a tropical kick.

Bunco Recipe Idea – Dice Cookies

Raise your hand if your bunco night is less about the dice and more about the food and time spent with friends? I don’t know about you, but when bunco night comes around and it’s my time to host, I am often struggling for the best recipe idea. These dice cookies can be used with a girls’ bunco night or have fun making them with the kids to celebrate a family game night!

Bunco: (also Bunko or Bonko) is a game played in teams with three dice. The game is played with two or more people often in teams of two. An ideal game has three tables of four people (12 people total), with two people at each table on a team for a total of six teams. The goal of the game is to get the Bunco (three matching dice) for a total of 21 points. The team with the most points wins.

What You Need:

  • Decorating bags
  • Parchment paper
  • Square Cookie Cutter or use a knife

Ingredients:

  • 3/4 cup softened butter
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups + 2 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 1 egg
  • Tube black icing
  • 16 oz creamy vanilla frosting


Directions:

  1. Preheat your oven to 325° and line a couple baking sheets with parchment paper or a silicone baking mat.
  2. Use a hand mixer to beat your butter and sugar until light and fluffy.
  3. Mix in your vanilla and almond extract and egg.
  4. Then mix your flour in and continue to mix until your ingredients start sticking together.
  5. Roll your dough out onto a floured piece of parchment paper and use your square cookie cutters to cut out your dice shapes and place onto your lined baking sheets.
  6. Bake for 8-10 minutes (depending on how thick your dough squares are) and let cool.
  7. Fill one decorating bag with your black icing and one with your vanilla frosting and cut the tips off.
  8. Frost a white outline on each square, fill in, and smooth your frosting out.
  9. Now draw small circles onto the white squares for the dice numbers.
