We are bringing back an oldie but goodie recipe from our friends at www.simplysprouteducate.com. This week enjoy a seasonally Sweet and Fresh Blueberry Wrapup.

It’s just that, a lot of yumminess wrapped up into a crowd pleasing treat! If you’re lucky enough to live in a location with blueberry and strawberry patches nearby, we encourage you to take your children to experience the joy of picking their own fruit. What better way to show how the food we eat goes from the soil to the supper table!

Ingredients:

  • 1 tsp vanilla
  • 1/4 cup sugar
  • 1 8oz container of cream cheese
  • 1/2 cup fresh blueberries
  • 1 package of crescent rolls

Preparation:

  1. Cream together cream cheese, sugar and vanilla in a small bowl and set aside.
  2. Wash blueberries and gently stir into cream cheese mixture. Open crescent rolls and align 7 of them in a pinwheel fashion, equally on a baking sheet. Use the 8th one to fill in any holes in the middle.
  3. Spoon cream cheese and blueberries onto the middle of the crescent pinwheel that is formed. Carefully pull points of crescent rolls overlapping them over the middle in a criss cross fashion.
  4. Bake in a pre-heated oven on 350 degrees for 20 minutes.

Ingredients:

  • 3 tbsp Butter
  • 6 cups Rice Krispies Cereal
  • 10 oz Marshmallows
  • Green Food Coloring
  • 24 Candy eyes
  • 12 Pretzels Sticks broken in half
  • 1/2 cup Dark Cocoa or Black Candy Melting Chips
  • 1/8 cup Red Candy Melting Chips

Directions:

  1. In a medium to large saucepan, melt butter over low heat.
  2. Add the marshmallows and stir until completely melted.
  3. Stir in enough food coloring to make the marshmallows very green.
  4. Remove from heat.
  5. Add Rice Crispies cereal and stir until cereal is well coated.
  6. Prepare a 9 x 9 pan by spraying with cooking spray or coating with butter.
  7. Butter a spoon or your hands or use wax paper to press the mixture into the pan evenly.
  8. After cooling, cut into rectangles or squares.
  9. Heat Dark Candy Chips in small Bowl by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
  10. Dip top of Bar (hair) in melted dark candy move back and forth for good coverage. Shake off excess.
  11. Lay on wax paper.
  12. Push a pretzel half in each side to make arms.
  13. Using a tootpick, gather up some of the melted candy and place on back of eye and put in place. Repeat for remaining eyes.
  14. Let cool until chocolate has set.
  15. Heat Red Candy Chips in small Bowl by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
  16. Transfer red chocolate to small plastic bag and clip very tiny piece of corner to use for piping.
  17. Pipe mouths on each.

Strawberry Lemon Cake

Looking for fun and yummy individual desserts. Enjoy this lemon, strawberry cake as you enjoy the last taste of summer. A local farmer’s market always lends itself to a great family outing. Point out seasonal fruits, like strawberries, to your children. Introduce your children to the men and women who grow food that we eat. This recipe combines the simplicity of a box mix with the sweetness of the end of a season.

Ingredients:

  • 1 box lemon cake (oil, water and eggs as per package instructions)
  • oversized cupcake pan
  • strawberries
  • cream cheese frosting
  • lemon frosting

To make these mini lemon cakes use an oversized cupcake pan and your favorite lemon cake mix (why reinvent the wheel and spend all your time baking in the kitchen while your family is outside enjoying this beautiful weather, save time and use a mix). Follow package instructions for baking. Once cupcakes are done cooking let them rest on a wire rack to cool down. Once cool slice cupcakes in half and spread on a generous amount of cream cheese frosting. Cut strawberries into thin slices and layer onto cupcake. Place top of cupcake on and use lemon icing to decorate your mini cake. Get creative and use a piping bag to add a little flair to your frosting. Top your cupcake off with a strawberry. Filled with a burst of flavor, this delicious dessert goes well with vanilla ice cream and is sure to be a crowd pleaser this spring.

We had to bring back this oldie but goodie from our friends at Simply Sprout – Let’s give leftovers a new purpose with these two recipes Chicken and Spinach Quesadillas and Hawaiian BBQ Pizza!

The school year is off to a start here, which means making sure dinner gets on the table at a decent time.  Some days that seems harder than others.  When you’re at your wits end with menu planning, look toward your refrigerator.   Leftover chicken can seem kind of boring and unappetizing, but with a little re-purposing your one meal turns into two!

Two recipes that give some pizzazz to your leftover chicken are Chicken and Spinach Quesadillas and Hawaiian BBQ Pizza.  Of course if you don’t have any leftovers to speak of, you could pull these dishes off with deli rotisserie chicken.

Chicken and Spinach Quesadillas: Grab some flour tortillas, spinach and artichoke dip, shredded mozzarella cheese, and shredded chicken.  Heat up the spinach and artichoke dip, mix in the chicken, spread it on half of the tortillas, sprinkle with cheese, and toast in the toaster oven.  We used leftover tortillas, dip, cheese and chicken from get together the day before.  So easy and so good!

Hawaiian BBQ Pizza: Lay out your favorite pizza dough (homemade, fresh from bakery, in a tube, or the powdered mix), sprinkle with mozzarella cheese, thinly sliced Vidalia onions, chopped chicken, sliced pineapple, and drizzle on your favorite barbeque sauce.  Pop it in the oven for 10 to 12 minutes and you’ll be serving up a new family favorite!

Spring is in full bloom and summertime is just around the corner. Summertime nights are best spent catching fireflies, camping out in the backyard and playing outside…not in the kitchen. In the summertime we love to be outside in the backyard playing with our kids. There’s nothing worse than being stuck in the kitchen on a beautiful summer evening. So when you are pressed for time and want something quick, give this summertime recipe a try. It’s full of summertime flavor and is super quick. It seriously takes just 10 minutes to prepare from start to finish. It’s sure to be a crowd pleaser at your table this summer.

Ingredients:

  • Cranberry Cucumber Salsa
  • 1 cucumber
  • 1 5 oz bag of Craisins
  • 1/4 cup freshly chopped cilantro
  • 4 Tbsp of balsamic salad dressing
  • a pinch of kosher salt
  • 1 Tbsp of sugar
  • Pita Bread Pockets
  • Rotisserie chicken (cut into strips)

Preparation:
Peel and wash a cucumber, dice into very small pieces. Combine the first six ingredients into a bowl. Mix together. Set aside. Warm pita pockets in the oven. Slice in half and fill with a few spoonfuls of the cucumber salsa. Add a few strips of sliced rotisserie chicken. Add a few more spoonfuls of cucumber salsa. This dish goes great with some homemade potato chips or sweet potato fries… enjoy!

As you prepare your spring gardens plant herbs and veggies your family will use. Fresh Cilantro and cucumbers are easy to plant and will save you lots of money during the summer. A recipe like this will leave plenty of time for exploring and creating with your children. Hawaiian BBQ Pizza: Lay out your favorite pizza dough (homemade, fresh from bakery, in a tube, or the powdered mix), sprinkle with mozzarella cheese, thinly sliced Vidalia onions, chopped chicken, sliced pineapple, and drizzle on your favorite barbeque sauce.  Pop it in the oven for 10 to 12 minutes and you’ll be serving up a new family favorite!

DIY Uncrustable Sandwiches

More in our Back to School Series – Project Lunchbox! This week we are using Homemade Uncrustables PB&Js. I used a Wonder Sandwich Sealer N Decruster, but a knife works well too (doesn’t seal as well but definitely gets rid of the unwantable crust!)

Ingredients:

  • Sandwich Cutter and Sealer
  • Bread
  • Peanut Butter
  • Jelly
  • Sandwich Bags

Directions:

  1. Make sure you get bread that is large enough to trim without hitting the crust.
  2. For each sandwich, get two slices of bread.
  3. Spread peanut butter on each slice of the bread, being careful to stay in the center and avoid where the cutting and sealing occurs.
  4. Apply jelly to the middle of one slice.
  5. Place the peanut butter only slice on top of the peanut butter and jelly slice (peanut butter side down).
  6. Place cutter on top of sandwich and press down firmly (make sure crust is completely cut away).
  7. Remove crust while cutter is still in place.
  8. Make sure you have pressed down completely on the blue center sealing piece.
  9. Lift off cutter and place sandwich in sandwich bag and place in the freezer.

Fall is filled with time at the pumpkin patch, apple picking and whipping up plenty of yummy treats! Doughnuts are one of those irresistible treats that easily change with every season, and pumpkin spice doughnuts are at the top of our list. It’s easy to whip up a fresh batch of doughnuts with ingredients you already have on hand and a couple seasonal treats.

Before you get started, read through the instructions entirely because frying doughnuts is a fast paced process. There are also several items that need to be prepped ahead of time to make the cooking easier.

Pumpkin Spice Doughnuts
Makes 12 doughnuts and 12 doughnut holes

Ingredients:

For Doughnuts

  • 2 tsp. baking powder
  • 1 tsp. salt
  • 3 ½ cups flour, divided into 1 cup and 2 ½ cup portions
  • 1 cup sugar
  • 2 tsp pumpkin pie spice
  • 2 eggs, 1 egg yolk
  • 4 tbsp unsalted butter, melted
  • ½ cups apple cider

For Doughnut Powder

  • 1 cup sugar
  • 1 Tbsp pumpkin pie spice

For Frying

  • 6 cups vegetable oil

Directions:

1. Prepare the items that you will be using. Line a baking sheet with wax or parchment paper. Ready two large plates, one with paper towels and the other without. In a clean paper lunch bag, mix doughnut powder ingredients and set aside.

2. In a large bowl, add the dry ingredients; 1 cup flour, 1 cup sugar, 2 tsp pumpkin pie spice, baking powder and salt. Mix well. In a small bowl, mix the wet ingredients; eggs, egg yolk, apple cider and butter. Mix well.

3. Pour wet mixture into the large bowl containing the dry ingredients and whisk till all lumps are removed. slowly stir in remaining 2 ½ cups flour till fully combined. Chill dough in refrigerator for ten minutes.

4. Heat vegetable oil on medium-high in a fryer or large pot till it is 375°– use a candy thermometer to safely test temperature. While oil is heating, prepare counter space with a coat of flour. Wash and flour doughnut cutter, or one small and one large, round cookie cutter.

5. Remove dough from the refrigerator and pat out onto floured surface. When dough it ½” thickness cut out as many doughnuts with cutters as possible. Gather up dough remnants, ball up and pat out again until all the dough is used up. Transfer doughnuts and holes to lined baking sheet. Should end up with 12 doughnuts and 12 doughnut holes.

6. Drop one to two doughnuts into the frying oil at a time. After one minute dough should rise to the surface. Let dough fry for one more minute, then flip and fry for a minute and a half. Scoop doughnut out and transfer to paper lined plate.

7. When doughnut has cooled enough to handle, drop it into the paper bag filled with powder and shake. Don’t wait too long or sugar will not coat the doughnut entirely. Remove doughnut from paper bag and place on clean plate. Repeat until all the doughnuts are fried and powdered. Enjoy!
