When I had my third child, I worked really hard to take off the baby weight. I began calorie counting, while I was nursing, and that was a mistake. This time, with the twins (baby 4 and 5), I would love to loose the extra weight but I don’t want to loose my milk supply like I did last time. I began looking for alternative ways to eat. My solution was something Keto-Friendly. These Keto-Friendly Recipes include casseroles, one-pot meals, and slow cooker recipes. My goal was to provide something to help your waist line but also something that the entire family will enjoy!

According to Healthline.com, a ketogenic diet (often termed keto) is a very low-carb, high-fat diet that shares many similarities with the Atkins and low-carb diets. It involves drastically reducing carbohydrate intake, and replacing it with fat. The reduction in carbs puts your body into a metabolic state called ketosis.

A Keto diet can be very flavorful, you really are not limited on taste but you are limited on some foods. In short, you should eat REAL food such as meat, eggs, nuts, yogurt, vegetables and occasionally some fruits. Apart from the obvious limitation of carbohydrates in foods, it is also recommended to avoid processed food and any food that may contain preservatives and colorings. Again, low-carb, high-fat!

During the beginning of the year, I took on a lifestyle change. I was dreading the diet that was beginning but after baby #3 the weight wasn’t coming off as easily as I remembered. I knew I was eating whatever I pleased. I was not eating in abundance (okay, I was a times) but I was really making the wrong choices. I took on a 28 day detox and cleanse. It focused a lot on eating protein (two shakes a day) and organically. I also was eliminating items like soy, sugar, and simple carbs. The change in eating made a world of a difference in my body. First, I always felt full. I made sure to eat every two hours. Second, I was no longer craving foods. I mean I would HAVE to eat chocolate daily. I mean, if I didn’t get this sweet treat I could go into a rage. Third, I was noticing a change in the way I felt. The weight did not drop initially but over time it did. My body recognized the change. It started burning some fat storage. In addition to looking better, I felt like I had energy.

During that detox, I watched a Documentary entitled Fat, Sick and Nearly Dead. The focus of the documentary was drinking juice (made from juiced vegetables and fruits) daily. In the case of the main character, he was doing this daily for every meal. I wanted to adopt this idea daily for health, not to fill every meal.

I have found having a juicer (over a blender) is very important. The Breville is by far the most popular brand.

Directions:

1. Print out your printable here
2. Cut out your Valentine coupons with your paper cutter or scissors and leave a quarter inch of paper on the left side of each one
3. Now cut out a piece of white card stock 4 1/2″ x 2 1/4″
4. Stack your Valentine coupons together, making sure they all line up and place onto your white piece of card stock
5. Fold over the left side of the card stock so your 1/4″ of extra paper is covered
6. Hold your pieces together and use your hole puncher to punch 2 hole indents (this will make your hole punching even)
7. Now use your hole puncher to punch out each hole, two per card
8. Stack your cards back together and place the ends of an 8″ piece of twine through the bottom holes and tie the top into a bow

Valentine Popcorn Treats Recipe

We are a big fan of cake, popcorn, and rice krispie treats and though of the perfect way to blend the three in this delicious Valentine Popcorn Treats Recipe. The recipe is simple and easy to make and is perfect for February or we found it would be cute, as well, for a princess themed party.

Ingredients:

  • 1-3.2oz light butter popcorn or 8 cups air popped popcorn
  • 5 cups miniature marshmallows
  • 3 tablespoons butter
  • 1/4 cup red M&M’s
  • 3 tablespoons red, pink, and white heart sprinkles
  • 1/2 cup Wilton pink candy melts

Directions:

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine your miniature marshmallows and butter and heat in the microwave for 1 to 2 minutes until the marshmallows grow.
  3. Stir and pour your marshmallows over your popcorn and mix well.
  4. Spread your popcorn out on your baking pan and sprinkle with M&M’s and sprinkles.
  5. In a small microwave safe bowl, heat your candy melts in the microwave for 2 to 3 minutes, stirring every 30 seconds until melted.
  6. Pour your melted candy into a sandwich bag and cut a small corner off the bottom.
  7. Now drizzle your melted pink chocolate over your popcorn and let your chocolate harden at room temperature.
  8. Enjoy!

Are weekday recipes difficult for anyone else? There is a meme out in cyberspace with a mother putting her head in her hand asking “Why do they want dinner every night?” – To that, I can relate! When it comes to dinner I want to know my kids are getting a well-balanced meal with as little fat as possible. This is hard when I find myself running through a local drive through unable to control all the food groups reaching their plate. So between a drive through and an amazing Pioneer Women recipe, I try to find a happy medium. Something they like, something that doesn’t’ require much time of me and something that is tasty and supplies nutrients.

We had fun making these Buffalo Chicken Sliders with Tyson frozen fully cooked chicken strips. I love that they are made with white meat chicken, have 100% all natural ingredients and have no added hormones or steroids.

Tyson Buffalo Chicken Sliders Recipe
Makes 5 Sandwiches

Ingredients:

  • Tyson frozen chicken strips
  • 1 cup buffalo sauce
  • 1/2 cup blue cheese (we prefer chunky)
  • Washed iceberg lettuce leaves
  • Fresh hamburger buns

Directions:

  1. Preheat your oven to 400 degrees and place your Tyson frozen chicken strips onto a baking pan.
  2. Bake your chicken strips as directed on the bag (18 to 20 minutes).
  3. As soon as your chicken comes out of the oven, carefully place them in a large mixing bowl, and toss with 1 cup of buffalo sauce.
  4. Place a large piece of lettuce onto a hamburger bun and put 2-3 buffalo coated chicken strips on top.
  5. Add a tablespoon of chunky blue cheese dressing on top of your buffalo coated chicken strips and top off with the top of the hamburger bun.
  6. Serve and enjoy!

I love a good savory meal. I am not sure there are many people who would not agree with me on that. I also love a meal that brings great flavors but doesn’t take many hours for me to make on a week night. The quicker the better.

Recently I worked with Cans Get You Cooking and was inspired by their “Cantry” pantry focus. How many times is your family ready for dinner and you have no idea where to begin? Did you know this fact? 60% of moms think that coming up with dinner ideas is more difficult than getting their children to go to bed on time. This is true for me! With canned food staples like canned fruits, veggies, broth and sauces on-hand, you can easily make it a Cantry night! Cans seal in foods’ natural goodness and nutrition so it’s there for you any time. Not only are they available and fresh, but they cut the prep process by a lot – that speaks volumes to me!

This Asian Dinner Entree is a big hit. Using 4 canned ingredients, meatballs, and brown sugar and sauce this meal is basically a dump, heat, and eat dinner recipe. It’s simple and will become part of the regular dinner routine.

Ingredients:

  • 14 oz can Jellied Cranberry Sauce
  • 2 cups Light Brown Sugar
  • 13.5 oz Jar Chili Sauce
  • 2 lbs Frozen Meatballs
  • 1 lb 4 oz Canned Pineapple Chunks or Tidbits
  • 15 oz Canned Whole Spear Baby Corn
  • 8 oz  Canned Water Chestnuts

Directions:

  1. In a large pot stovetop on medium heat, add 2 lbs frozen meatballs.
  2. In a large mixing bowl, mix together your cranberry sauce, chili sauce, and brown sugar.
  3. Pour your sauce mix on top of your frozen meatballs and stir.
  4. Cook on medium heat for 20 minutes.
  5. Now mix in your pineapple chunks, baby corn, and water chestnuts and stir.
  6. Cook for a remaining 10-15 minutes
  7. Serve over a bed of white rice and enjoy!

Canned foods can be a hallmark of a healthy diet. An analysis of NPD data shows that adults and children who ate 6+ canned food items over two weeks were more likely to meet or exceed their recommended daily allowance for 17 essential nutrients than those who ate 1-2 canned food items over the same two-week period. To me, it can be as easy as eating a healthy rounded diet at home or resorting to takeout or go out to eat because I don’t have the ingredients on-hand to make dinner! If I didn’t have the above ingredients at home, it would only be a quick 15 minute run to the store and plenty of money saved in the store over running to my nearest restaurant trying to fill an entire family’s likes and tastes.
