Graham Cracker Carrot Garden Snack

Whether you have a Winnie the Pooh party in Hundred Acre Wood or you are looking for a fun Easter Food Craft for the kids, this is such a fun garden snack for children. We used fun gummy carrots and created a chocolate cracker of goodness – because who said your veggie’s can’t include chocolate!?!

Ingredients:

Graham crackers
Gummy carrots – we got ours HERE
OREOs
1 Cup light cocoa candy melts
optional: orange icing – use THIS to create orange*
optional: edible Easter grass*

*Note, we picked up gummy carrots from HERE but you could also make your own carrots using an icing bag with orange icing and Easter grass as the topper.

Directions:

In a microwave safe dish, melt your candy melts on 50% power, stirring every 30 seconds until melted.
Scrape the white center from about 10 OREOs, place your chocolate cookies into a sandwich bag, seal the bag, and crush the cookies with the back of a spoon.
Add a teaspoon of your melted chocolate to each graham cracker and spread evenly.
Sprinkle your crushed cookies on your melted chocolate.
Top each graham cracker off with 3 gummy carrots, let the chocolate harden, and enjoy!
Optional: If choosing to using icing (over gummy carrots) lay your orange icing across each cracker is three 1 inch sections. Add edible Easter grass to the top.

Instructions

To get us started, we couldn’t resist telling you about these Steak Lettuce Wraps. With two of our favorite ingredients, avocado and peppers and a dash of cow as the center. The meal is perfected in an individual portioned light and refreshing lettuce wraps. I mean, these ingredients leave you plenty of room to have a slice of pizza for dinner #2, or just indulge in that ice cream after your meal without all the added guilt.

Since January, we have invested in a lot of Whole30 Recipes in our home. With this new lifestyle (I won’t dare call it a diet – it’s not), I am doing a lot of cooking in the home. I have three kids. One under 6 months, and two girls and elementary school. Between carrying for a baby and making sure we make it to after school activities and accomplish homework, I need the easiest solution for food on the table – that was the goal of this One-Pot Meal eBook. The girls are also pretty obsessed with Taco Tuesday, so anything in a shell (even if leafy and green) can count as our Taco Tuesday meal!

Bunny Easter Craft for Kids

We had such a fun time creating these easy and quick bunny Easter crafts for kids. The steps are simple and you likely already have the craft supplies in your home!

Supplies:

Directions:

Draw a bunny head onto your cardboard by starting with the ears, sides of the face, and bottom of the face for an even shape on all sides. You can even use a bunny shaped cookie cutter to trace your cardboard if necessary.
Cut out your bunny with scissors.
Carefully hot glue your end piece of yarn to the back of the bunny’s head and begin wrapping the yarn around the cardboard.
Keep wrapping every which way until your cardboard is completely covered in white yarn.
Once your cardboard bunny is wrapped, cut the yarn, and secure the end of the yarn to the back of the bunny with glue.
Glue your pink Pom-Pom ball to the bottom center of the bunny’s face for the nose and 2 googly eyes right above that.
Cut 6-3″ pieces from your pink pipe cleaner, twist the ends of 3 pieces together to make whiskers, and glue the ends on each side of the Pom-Pom nose.

During the beginning of the year, I took on a lifestyle change. I was dreading the diet that was beginning but after baby #3 the weight wasn’t coming off as easily as I remembered. I knew I was eating whatever I pleased. I was not eating in abundance (okay, I was a times) but I was really making the wrong choices. I took on a 28 day detox and cleanse. It focused a lot on eating protein (two shakes a day) and organically. I also was eliminating items like soy, sugar, and simple carbs. The change in eating made a world of a difference in my body. First, I always felt full. I made sure to eat every two hours. Second, I was no longer craving foods. I mean I would HAVE to eat chocolate daily. I mean, if I didn’t get this sweet treat I could go into a rage. Third, I was noticing a change in the way I felt. The weight did not drop initially but over time it did. My body recognized the change. It started burning some fat storage. In addition to looking better, I felt like I had energy.

During that detox, I watched a Documentary entitled Fat, Sick and Nearly Dead. The focus of the documentary was drinking juice (made from juiced vegetables and fruits) daily. In the case of the main character, he was doing this daily for every meal. I wanted to adopt this idea daily for health, not to fill every meal.

I have found having a juicer (over a blender) is very important. The Breville is by far the most popular brand.

Easter Nest Cheesecakes

These Easter cheesecakes are so sweet. We think they make adorable little desserts for everyone at the table. Make with malted milk eggs or jelly beans, whatever your preference. They make 18 nests and can be made in less than an hour. Enjoy!

Easter Nest Cheesecakes:

Makes: 18 nests
Prep: 15 minutes
Bake: 25 to 30 minutes
Cool: 2 hours

Crust Ingredients:

1 cup graham cracker crumbs
2 Tablespoons granulated sugar
3 Tablespoons melted butter

Filling Ingredients:

16 oz cream cheese
2 large eggs
1 teaspoon vanilla extract
1/2 cup granulated sugar

Topping Ingredients:

2 cups sweetened coconut flakes
Malted milk eggs or jelly beans

Directions:

Preheat your oven to 350 degrees and line a cupcake pan with cupcake liners.
In a small mixing bowl, mix your graham cracker crumbs and sugar together.
Then mix in your butter.
Scoop about 2 tablespoons of your graham cracker mixture into your cupcake liners and press Down with your finger tips.
In a separate mixing bowl, beat your cream cheese, sugar, and vanilla together until creamy.
Then mix in one egg at a time.
Scoop your cheesecake filling on top of your graham cracker crust, filling the cups about 3/4 full.
Bake for 25-30 minutes and set in the fridge for 2 house to cool.
Place your coconut onto a baking sheet, spread around and bake for about 6-8 minutes, tossing every 2 with a spatula.
Place a small amount of toasted coconut onto each mini cheesecake and top with either malted milk eggs or jelly beans.

Free Moving Printable | We’ve Moved!

Let me share with you, in the past two years my family and I have moved – TWICE. One was a cross country move (with movers), the second was moving four houses down (on the same street) while six months pregnant. I ~~almost~~ greatly prefer the cross-country move! There was nothing pretty about me walking up and down the street with a huge belly and a load of boxes (yes, protective readers, I know carrying boxes when pregnant is a no-no and I am happy to report, we had a healthy baby boy this past October.) Regardless, I learned my lesson that hot summer, with the worse abdominal cramping. We settled in our new home, though, and with a young baby at home, I am ignoring the boxes in the corner that never got unpacked.

Moving along (no pun intended)) moving so often has taught me some of the best lessons. In fact, I share many of those in our Top 50 Moving Hacks and Tips. A few of my favorites include creating garment bags for clothing out of garbage bags, place Styrofoam plates between breakable plates, reuse toilet paper rolls and egg cartoons and my favorite, color code your boxes based on rooms they need to go. Your movers, friends and family with thank you for this last advice. You all also appreciate not hearing the question, “where does this box go?” 100 times.

I also learned when you move often, no one has your address. This last Christmas, with a new infant in my arms, I worked hard to get Christmas cards out early so that friends and family could have our return address. I slipped inside these adorable “We’ve Moved” notes. You could also print these notes, take a cute photo like I did below and upload the image to your Facebook wall (assuming you have a private Facebook page.) No need for that address to be public.
