Easter Deviled Egg Chicks

Have you been boiling eggs? Curious what to do with all those hard boiled eggs? Make some fun Deviled Chick Eggs perfect for the Easter Table.

Ingredients:

  • 6 Boiled Eggs
  • 1/4 cup Mayonnaise
  • 1 tbsp Sweet Pickle Relish
  • 2 tsp Mustard
  • Salt and pepper, for taste
  • 1 Mini Carrot
  • 1 Sweet Midget Pickle

Directions:

  1. Cut small slice off bottom off egg to flatten it so it will stand.
  2. Cut zig zag pattern around middle of egg to look like it cracked open.
  3. Remove yolks and place in a bowl.
  4. Cut carrot so that you end up with 6 small triangles to use as beaks.
  5. Cut strip off of pickle and then make 12 small squares to use as eyes.
  6. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard.
  7. Salt and pepper, to taste.
  8. Mix until consistency is smooth and creamy.
  9. Transfer mixture to zippered bag and clip corner for piping.
  10. Pipe mixture into cooked egg whites piping until over full to resemble a chick head sticking out.
  11. Place beaks and eyes in place.
  12. Top each with the bottom with its top half.
  13. You can optionally shred lettuce to resemble grass to display them.

Think outside the box, or rather the EGG, this Easter Season with this Jelly Bean White-Chocolate Easter Bark! Easy two ingredient recipe, that creates a perfect dessert for Spring!

Ingredients:

  • 12 oz Jelly Beans
  • 12 oz White Candy Melting Chips

Directions:

  1. Prepare an 8×8 or 9×13 (depending on how thick you want your bark) by lining with parchment paper.
  2. Melt chips in microwave by heating for 30 seconds, then stirring and repeating until chocolate is melted and smooth.
  3. Mour melted chocolate in prepared dish.
  4. DIstribute jelly beans around melted mixture to ensure equal distibution of cany and colors.
  5. Place dish in refrigerator for 10 minutes to allow chocolate to set.
  6. Cut or break into bite sized pieces.

Sirloin Gyros Recipe

A delicious Greek classic, with an update. Not only is lamb hard to find in your local grocery store, but it can be a bit pricey. If you love the flavors of Gyro but want an alternative, thin cut sirloin is a great substitute.

Ingredients:

  • 1 1/2 pound thin cut sirloin steak
  • 1 small onion
  • 1 tomato
  • 1 ½ cup plain Greek yogurt
  • 2 Tbsps.oregano
  • 2 tsps. lemon juice
  • 4 cloves garlic
  • ½ cucumber
  • Salt and pepper to taste
  • 1 pack pita bread

Directions:

  1. Cut Sirloin Steak slightly into thin strips, going against the meat grain.
  2. Dice onion, dice tomato, finely chop cucumber, crush garlic. Stir ingredients together.
  3. In a gallon ziplock bag mix marinade: ½ cup greek yogurt, lemon juice, 2 cloves garlic, 1 Tbsp. oregano, salt and pepper, and steaks strips well, seal bag leave to marinate overnight.
  4. In a air tight container mix Tzatziki sauce: 1 cup Greek yogurt, 1 Tbsp. oregano, 2 Tbsp. garlic, salt and pepper.
  5. In another small bag or bowl store your tomatoes and onions. I recommend eating this no longer than the day after you prep it. The day of will prove to be more fresh.
  6. To cook: sauté sirloin and sauce marinade in a large saucepan over medium high heat to desired done-ness.
  7. Assemble sirloin steak, tomatoes, and onions in pita bread, top with Tzatziki sauce and enjoy!

Serve with chips, fries, or a yummy Greek potato salad.

Creamy Farfalle Carbonara Recipe

Yummy, and while it’s not exactly low-cal, it has peas, so that counts for something right? Even men who are big red meat eaters will find this a tasty and filling meal…. can we say Bacon?

Ingredients List:

  • 2 cups uncooked farfalle pasta
  • 1 cup ½ and ½
  • 1 cup peas
  • 1 egg
  • 6 pieces bacon
  • 2 cloves garlic
  • 1 small onion
  • ½ cup fresh grated parmesan
  • Salt and pepper to taste

Preparation:

  • Finely chop onion
  • Chop bacon
  • Grab 3 quart sized freezer bags and fill each:
    • Bag 1- pasta
    • Bag 2- onion and bacon
    • Bag 3- ½ and ½, egg, peas, salt and pepper, garlic, parmesan cheese

Cooking Directions:

Boil pasta in water 8-10 minutes until desired doneness, drain and set aside. Sauté Onion and bacon in a large non-stick sauce pan with a bit of olive oil, until bacon begins to crisp and onions become translucent and golden. Add bag 3- allow to simmer 2-3 minutes. Toss pasta in pan until heated thoroughly.

Serve with a salad for a yummy side. If carbs don’t matter, garlic sticks or bread will add a nice addition.

Crock-Pot Chicken Parmesan Recipe
(Pin to Pinterest)

A healthier version of an Italian favorite. Similar flavors but skipping a few fattening steps-mainly breading and frying the chicken. One way to wake up the flavors of prepackaged foods is to doctor it up with fresh ingredients. Pop this in the slow cooker, go about your day and forget about it until dinner time.

Ingredients:

  • 3-4 large chicken breasts
  • 1- 24 oz. jar of spaghetti sauce (we are partial to Bertolli 5 Cheese)
  • ½ cup fresh grated Parmesan cheese
  • 3 cloves garlic
  • 1 tsp. oregano
  • 1 package fettuccine
  • 1 -14 oz. can diced tomatoes

Preparation:

  • Place all ingredients into a gallon sized freezer bag, store in freezer until the morning you are going to prepare it.

Cooking Directions:

  1. Spray Crock-Pot generously with nonstick cooking spray.
  2. Pour contents of bag into slow cooker.
  3. Cook on low for 5-6 hours.
  4. Shred chicken with a fork, serve over pasta.

Add a simple side salad and bread to make this meal complete.

Teriyaki Chicken Stir-Fry Recipe

Sweet and Saucy Stir -Fry without the drive to pick it up. Change your every day dinner up from plain old burgers and fries to something exotic and sure to please the palete. If you love the sweet and salty, healthy yet full of flavor, you will really appreciate this dish.

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 bag frozen mixed stir-fry vegetables (you can also choose your own fresh veggies and cut them into matchstick size pieces)
  • 1 can pineapple tidbits
  • ½ cup Soy sauce
  • 2 Tbsp. brown sugar
  • 2 Tbsp. honey
  • 2 cloves garlic
  • 2 tsp. ginger fresh grated, or paste
  • 3 Tbsp. Cornstarch

Preparation:

  1. Chop chicken into small bite sized strips.
  2. Drain pineapple, set juice aside.
  3. In a quart freezer bag mix chicken with salt and pepper to season.
  4. In another quart freezer bag combine; pineapple, ½ cup of reserved pineapple juice, soy sauce, brown sugar, honey, garlic, ginger, and cornstarch.
  5. In a third bag placed chicken pieces-salt and pepper to season.

I like to stack my bags, including a bag of microwaveable instant rice to go with it, and wrap with a large rubber band to keep it all together.

Cooking Directions:

Sauté chicken in a large non-stick pan with 1-2 Tbsps. Olive oil (or sesame if you have on hand, but not necessary) over medium high heat until cooked almost through. Add bag of pineapple mixture, allow to simmer for 3 -5 minutes, stirring frequently.

Serve over rice or your favorite noodles.

Cinnamon Dolce Syrup Recipe

Ingredients:

  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 ½ cups water
  • 1 Tbsp. vanilla extract
  • 3 cinnamon sticks
  • ½ tsp. ground cinnamon

Directions:

  1. In a medium saucepan place water, sugars, cinnamon, and cinnamon stick. Bring to a low boil, reduce heat and simmer for 15 minutes, stir in vanilla.
  2. Remove from heat, and remove cinnamon stick. If desired strain through a cheesecloth or coffee filter to remove excess cinnamon powder.
  3. Allow to cool for 10 minutes and pour into container of choice.

For storage, I love using mason jars. Tie it off with raffia and include a cinnamon stick and handmade label to finish it off. Perfect for gift exchanges, secret santa, or any coffee lover in your life.
