Summer Strawberry Salad with Watermelon

The summer weather has hit and we are feeling the temperatures. In in effort to find the perfect summer salad, I wanted to share with you this delicious recipe. Blended with strawberries, watermelon, onions, tomatillos, olive oil, vinegar and mint, this salad is the perfect about of sweet, crunch and flavor! We think you will love it as much as our family!

Ingredients:

• About 8-10 fresh washed strawberries
• 2 small tomatillos
• 1 small red onion
• 2 Cups sliced seedless watermelon
• 10 mint leaves
• 3 Tablespoons vanilla bean balsamic vinegar (or regular)
• 3 Tablespoons extra virgin olive oil
• Salt and pepper to season
• 1/4 teaspoon diced garlic

Directions:

1. Wash and dry your fresh vegetables.
2. Slice your strawberries, tomatillos, and watermelon into bite-size pieces.
3. Dice your red onion.
4. Cut your mint leaves into long skinny strips.
5. Mix your fruits, vegetables, and mint together.
6. Now toss with your vinegar and olive oil.
7. Season with salt and pepper and top off with a little extra mint
