Copycat Cinnamon Crunch Bagel, a Panera Bread Inspired Breakfast.

Copycat Cinnamon Crunch Bagel

I am a big fan of Panera! In fact, when working on our Best Copycat Panera Recipes, I was at Panera scarfing on a meal. You know, post inspiration!  One of my favorite things from Panera Bread is their  Cinnamon Crunch Bagel. It goes so well with their honey walnut spread. So delicious, it should make me feel guilty ordering it for dessert.

I wanted to take my favorite Panera Bread recipe and create a recipe for you to enjoy at home. I hope you enjoy it as much as I do!

Cinnamon Crunch Bagel Ingredients:

  • 1 teaspoon active dry yeast
  • 1 cup warm water
  • 2 1/2 tablespoons sugar, divided
  • 2 1/2 teaspoons salt
  • 3 1/2 cups flour
  • 3 tablespoons butter, salted
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon baking soda

I tried this recipe with a different topping and liked it. I am curious as to how many bagels the recipe yields.

It depends on your size bagel. 6 to 12

I’ve made this recipe twice now. One cup of water to 3 1/2 cups of flour does not leave a sticky dough. I’ve only added 3 cups of flour at a time and it’s dry.

Interesting to hear you say that! Other recipes call for 1.5 cups water to 4 cups of flour. I felt I was on the lower end of flour. Sometimes you have to play with it! Glad you are making it, hope it is enjoyable!

Disaster. Epic fail. Many things wrong. First, recipe used too much flour. Dough was very dry and when i rolled them and tried to connect them, they end up like horseshoes instead because they don’t stick together. I still worked with it. Followed instructions to the tee.
10 minutes in, my oven is smoking because of all the sugar melting off. Entire bottoms of donuts are black and tar-like. The top sugar didn’t look crusty like Panera bread. I think sugar should’ve been added at the very end. This recipe needs A LOT of tweaking!

Sorry to hear Jenny. Something went off, it has worked for many other bakers. I did see your image on Pinterest. Oh no, looks like a Pinterest fail.

I had the EXACT same issues as Jenny. Followed the directions to a tee and it still turned into a disaster.

Amanda, that is frustrating! What turned out poorly so I can learn from this Pinterest fail.
