Rainbow Chia Pudding Parfait

Rainbow Chia Seeds Pudding

Talk about a colorful and happy way to start the day! Who wouldn’t have a smile on their face when this was in front of them. These pudding cups make a fabulous breakfast or snack. Young and old alike will appreciate the colors and flavors of this really pretty, really healthy pudding. This should make even the picky eaters happy.

Try it and see, you’re going to love this!

Rainbow Chia Pudding Parfait Ingredients:

  • 1 pint of fresh ripe raspberries
  • organic mandarin oranges
  • 1 banana
  • 2 large kiwis
  • 1 pint of fresh blueberries
  • 1 pint of fresh blackberries
  • 2 cups of black organic chia seeds
  • 4 cups of soy milk (you can use almond milk or whole milk if preferred)
  • Stevia
  • honey

We used these ColorKitchen natural food coloring powders.

Supplies:

  • 8 – 10 small glass containers (or containers of your choice)

Save this recipe for later. Print your recipe and add it to your recipe box or recipe binder! This is my favorite Recipe Binder – I get tired of printing the same recipe over and over. A binder keeps me organized and gives me a place to store my recipes.

Rainbow Chia Pudding Parfait

Ingredients

Scale
  • 1 pint of fresh ripe raspberries
  • mandarin oranges
  • 1 banana
  • 2 large kiwis
  • 1 pint of fresh blueberries
  • 1 pint of fresh blackberries
  • 2 cups of chia seeds
  • 4 cups of soy milk (you can use almond or whole milk if preferred)
  • Stevia
  • honey

Instructions

In a medium bowl, mix the chia seeds with the milk, and 2 tablespoons of honey, cover and place in the refrigerator. If the chia pudding is too thick, add a little more milk to thin.

Rinse your raspberries, blackberries and blueberries and lay on paper towels to dry.

Rinse the kiwi, dry with a paper towel. Remove your skin and slice the kiwi into a bowl, and set aside.

Wash the Blueberries, and the blackberries, and place on paper towels to dry.

Remove the pudding from the refrigerator and separate your pudding into six different dishes/bowls to make your six different colors (pink, orange, yellow, green, blue and purple) and flavors.

In your first dish, add half the raspberries to the pudding, sprinkle with a teaspoon of Stevia, and smash them into the chia pudding, turning it bright pink.

In your second dish, place half of the Mandarin oranges in the bowl, sprinkle with 1/2 teaspoon of Stevia and mash the oranges into the pudding, which will turn the pudding a light orange color.

In the third bowl, mash your pudding, the banana and natural yellow coloring.

In your fourth bowl, mix several slices of kiwi, and mash them into the pudding for a green color.

In your last bowl, add the blackberries, and mash them into the pudding, saving a few blackberries for your toppings.

In the last bowl, mash half the blueberries into the pudding for a blue coloring.

Place the pudding evenly in a larger mason jar, starting with the blueberry, followed by the blackberry, kiwi, banana, orange, and raspberry layers.

Finally, top with raspberries and blackberries, cover and refrigerate until ready to serve.

Enjoy.


Notes

Easy Crab Ham and Cheese Sandwiches for Kids Party. These buttery croissants make the most adorable crustacean for a family dinner or create a tasty party recipe perfect for a beach tablescape.

Crab Sandwiches for Kids Party

So no Beach Parties here but I love to have fun with my sandwiches for the kids, especially the younger kids. It makes dinner fun and also encourages them to eat more. You know, a win-win. One item that I always have on hand in my home, are Candy Eyes. They have so many resourceful uses. We have made endless recipes with them. Sometimes my kids just add them to break and bake cookies. Grab a few. They are cheapest on Amazon.

Perhaps you are making more than just your family’s dinner. If hosting your own celebration, we suggest pairing these sandwiches with our crab cupcakes!  And for more inspiring ideas, see all of our Beach Inspired Party Ideas.

This recipe has your classic ingredients – ham and cheese. We bought pre-made croissants. I suggest getting the jumbo kind. You will need candy eyes and toothpicks and a creative item to stick the eyes. We used mustard but gave you a few other options.

  • Croissants
  • Ham

  • Optional: Fondant, peanut butter, honey or white chocolate melts

Ingredients

  • Croissants
  • Ham
  • Cheese
  • Mustard

Instructions

Start by prepping your eyes.  Take two candy eyes and place a dot of mustard on the backs.

Lay toothpicks on the mustard and allow to dry and stick some.*

Slice your croissants to almost the opposite end, but stop slicing so the end of the croissant is still attached.

Add a thin layer of mustard to the bottom layer.

Place your ham & cheese inside the croissant. I like to fold the ham so that you get more than a thin slice when you bite.

If you want melted sandwiches, pre-heat your oven to 350. Lay down parchment paper on a cookie sheet and lay your sandwiches on the tray.

Bake in a pre-heated oven at 350 degrees for 5 to 8 minutes.

Now take your eye toothpicks and poke two into each ham and cheese croissant sandwich. You will want to place the toothpicks at an angle so your candy eyes are are laying back.  Less chance of the candy eyes moving!

Serve & enjoy!

I always get warm fuzzies when  think if EOS lip balms. In 2017, we spent much of Christmas day in the hospital. I had one of the twins in the NICU from an early deliver and another 3 day old at home. In addition to two young newborns, I had three older kids. Our hospital did something cool. Santa came and gave donated presents to the kids. The kids could choose from his workshop what they wanted. My daughter chose an EOS lip balm set of 6. It was a pretty nice gift, about $25. I remember feeling exhausted but filled with warmth in my heart for whoever mad this kind donation. So unnecessary, but such a sweet way for the kids to feel the joy of the season in the cold walls of a hospital.

There are a lot of EOS printables you can pay for, but since this is Frugal Coupon Living, we found you Free EOS printables – Enjoy all these seasonal gift ideas for everyone on your list!

I recommend you buy EOS in bulk. Near the register at the grocery store or pharmacy, they can cost a little more. If buying 25 for an entire classroom of kids, the price can add up. Look for seasonal sets that might be on sale or buy EOS in larger quantities. I think the lowest cost I have seen for an individual package is $2.99, but they average closer to $4.99.

This Strawberry Salsa Recipe is a beach friendly food perfect for everyone. It is such a beach snack crowd favorite, you will be traditionally making it every trip to the sand and sun. Serve in the beach house or out by the waves.

If there is anything about the beach this native Floridian knows, it the fact that the sand and sun makes you famished.  Having food while on the beach saves you from trips back and forth to the car and/or house. Who wants the constant need to get up, wrangle the kids, and packing up the valuables. I also find, there is nothing better than the sand, sun, breeze, an umbrella and a good drink and snack in my lap.  Actually, get this for your drink (no bueno in your lap!) This Strawberry Salsa Recipe is the best Beach Friendly Food.

Perfect for summer, this Strawberry Mango Salsa is a crowd pleaser so double the recipe or even triple it. Great with tortilla chips but also consider  serving with cinnamon pita chips as a dessert!

I was listening to podcasts for the longest time, and I got tired of the same old story. Self help, current events, murder mysteries, and they were just too much. I was ready for fiction and narratives. Below are books I have been reading this month. There are some good ones, enjoy and be sure to share your favorites too!

Where the Crawdads Sing by Delia Owens – I picked up this book because it was recommended by a lot of people. I can see why. It was a really good read. Kya, is a young girl who grows up alone. That deterred me. I dislike reading stories when I hate the main characters situation. I also wondered if it would keep my attention, since it was the solo adventure of one person, but it did! Definitely add to your wish list.

For years, rumors of the “Marsh Girl” have haunted Barkley Cove, a quiet town on the North Carolina coast. So in late 1969, when handsome Chase Andrews is found dead, the locals immediately suspect Kya Clark, the so-called Marsh Girl. But Kya is not what they say. Sensitive and intelligent, she has survived for years alone in the marsh that she calls home, finding friends in the gulls and lessons in the sand. Then the time comes when she yearns to be touched and loved. When two young men from town become intrigued by her wild beauty, Kya opens herself to a new life–until the unthinkable happens.

Perfect for fans of Barbara Kingsolver and Karen Russell, Where the Crawdads Sing is at once an exquisite ode to the natural world, a heartbreaking coming-of-age story, and a surprising tale of possible murder. Owens reminds us that we are forever shaped by the children we once were, and that we are all subject to the beautiful and violent secrets that nature keeps.

The Great Alone by Kristin Hannah – I think this was my favorite of the four. There is domestic violence, and that is hard to read, but I really fell in love with the characters and I also fell in love with Alaska. The author does an amazing job of capturing your setting. Makes me want to take a trip to the wilderness! Highly recommended! Also read The Nightingale by the same author.

Set in 1974 Alaska, this sweeping tale follows a girl coping with the dangers of domestic violence. Though ill-prepared for the extreme and harsh conditions, 13-year-old Leni and her parents, Ernt and Cora, have to learn how to survive in the unforgiving wild of their new home on the Kenai Peninsula. It’s a stray from my normal non-fiction story and is the autobiography of a neurosurgeon and his own health journey. I read when I was in poor health, so it was captivating to refocus my own thought – what makes life worth living. I think it’s a must read for everyone!

This inspiring, exquisitely observed memoir finds hope and beauty in the face of insurmountable odds as an idealistic young neurosurgeon attempts to answer the question What makes a life worth living?

This July Fourth, make sure to add this Easy Marshmallow Shooter to your list of activities for the kids. This DIY Marshmallow Launcher combines a cup, a balloon and many laughs.

For obvious reasons, the Fourth of July is always big in our home location of Washington, D.C. Since having the younger kids, however, we do not always get out together in the evening for the big fire works. One of us goes leaving the other home with the kids. It’s a balance as finding a babysitter on July 4th isn’t really an option.  Every time it is my turn to get out with the kids, I get tears in my eyes. Nothing makes you more patriotic than watching fireworks with the National Monument(s) in the background. The years that I stay home with the younger kids, however, the warm feeling of the holiday disappears. It’s just another “day.” To involve the younger kids this year, and still have some holiday fun at home, we created these Marshmallows Shooters.

Add this to your list of Summer Bucket Items and Upcycled Crafts. All it takes is a toilet paper roll, scrap paper and a balloon. Of course you will need marshmallows, use the extra marshmallows to create these Seasonal Rice Krispies Treats.

Marshmallow Launcher Supplies:

  • Toilet paper rolls
  • Scrapbook paper (we used red and white stripe)
  • Balloons (we used blue)
  • Rubber bands
  • Glue stick
  • Marshmallows

Each toilet paper roll and balloon makes one shooter.


DIY Easy Marshmallow Shooters

To create these shooters honestly takes a matter of minutes. The hardest part is getting the perfect cut of scrap paper and gluing it on the toilet paper roll!

Easy Marshmallow Shooter Directions:

First, cut the striped scrapbook paper to fit around the toilet paper roll and glue into place.

Tie a knot in the bottom of a balloon (not inflated).

Next, cut off the top (round part) off the balloon.

Wrap the open end of the balloon around the bottom of the toilet paper roll and secure with a rubber band.

To use, place a marshmallow in the shooter and pull the knotted end back. Let go of the balloon to shoot the marshmallow out.

Explosively yummy, Firecracker Cookies just like the classic Popsicle. This red, white, and blue Fourth of July Recipe is a tasty dessert for picnics, the pool, parties or just because. Best of all this summer dessert on a stick can be enjoyed while on the go.

Since moving to Washington, D.C. four years ago, the Fourth of July has taken on an entirely new meaning.  First of all, every time we drive past the monuments and historic sites, I tear up. I mean tears come down my face and I have to make sure not to find myself in conversation or I begin to sound incredibly silly not being able to get words out of my mouth. There is something about being on the ground our forefather’s walked on before. The area is full of pride. A lot of the pride is political and military, but D.C. is a huge melting pot. There is pride for every blend of person and every country. In my small neighborhood of about 12 families, half of the homes are filled with international citizens. We are all displaced people and find family in one another. It’s like nothing else I have ever experienced… it’s welcoming of each other’s differences. It’s blending of different foods and cultures.

The Fourth of July

I digress… back to July 4th… Clearly, this is an area where Independence Day is huge. There are parades, huge performances with top artists (in fact you might watch our country’s fire works and performers each year on PBS in front of the United States Capitol.) The publicized performance is topped off with fireworks over the mall. A large National Park where the Lincoln Memorial and Washington Monument are located. It’s majestic. It’s beautiful. It’s warning. We are so blessed to be in a country where red, white and blue speak more than colors on a pallets.

Firecracker Cookies  

Wherever you are this July 4th, Memorial Day or Veterans Day, this cookie recipe is a must. Dessert on a stick doesn’t have to be limited to a a frozen treat! We blended together three cookies on a stick that look just like a classic Firecracker Popsicle, but, best of all, they don’t melt.

Firecracker Cookies Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 3 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • Lemon, blue raspberry and cherry flavoring
  • Red and blue food coloring
  • Food safe craft sticks

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 3 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • Lemon, blue raspberry and cherry flavoring
  • Red and blue food coloring
  • Food safe craft sticks

Instructions

  1. Preheat your oven to 350° in line a baking sheet with parchment paper.
  2. In a large mixing bowl combine your butter, granulated sugar and powdered sugar and mix well.
  3. Mix in one egg and vegetable oil and mix.
  4. Mix in the flour, baking soda, cream of tartar and salt (if your dough is still a little crumbly, mix in a 1-3 tablespoons of water).
  5. Separate the dough into 3 bowls, mixing blue food coloring in one with 1/2 teaspoon blue raspberry flavoring, mix one with red food coloring and 1/2 teaspoon cherry flavoring, and 1/2 teaspoon of lemon extract in the non-colored dough.
  6. Form the dough into small balls and arrange onto the sticks from red, white and blue.
  7. Press the balls together into a log and press a fork down the center of each color for an imprint.
  8. Bake at 350 degrees for 10 minutes, let cool and enjoy!

Kids Baking Championship

The best thing to hit the television of our home has been Kid Baking Championship. If your kids have not seen it, turn it on. It’s a wholesome show about kids changing each other to the best tasting, self-created recipe. This show has become the best in our home because my kids have picked up a lot. I have been cooking less in the kitchen, while they pick up recipes on their own. My girls are being creative too. One day I was served sugar cookies (using a pre-made package) with lime buttermilk cream (all created on their own!) It was really good!

This Dessert on a Stick Recipe is easy for the kids and one you can step back from and focus on other Fourth of July recipes for your picnic or party.
