What is Elf on the Shelf?

Elf on the Shelf is a Christmas Tradition. The tradition has a book and a elf doll. The book is poetic and in rhyme sharing the purpose of the Elf’s visits. The Elf visits each Thanksgiving. He/She goes and returns from the North Pole each evening. Every morning he can be found in a new location in the house. The Elf has been found in the refrigerator, fishing in the toilet, writing messages on the mirror or hanging from the lights. It is VERY IMPORTANT, the Elf is not touch each evening or his Christmas magic will be lost! Each family is able to name their special elf. The elves return to their home (Santa’s North Pole Work shop) every Christmas Eve. An Elf’s Story can also be found on DVD.

Fall Sweet Potato & Sausage Shepherd’s Pie

This is a unique take on shepherd’s pie, especially if you like sweet potatoes. To balance the sweetness, we made a savory filling using turkey Italian sausage to keep it a little healthier, along with hearty vegetables, rich chicken stock, and lots of seasoning.

It’s also a great way to use up leftover sweet potatoes from your holiday meal. If you don’t have leftover sweet potatoes, you can them up quickly in the microwave. Just poke a few holes around the outside, and microwave for 3-4 minutes on each side or until soft. Carefully slice the potato and a half, and scoop out the flesh. Mash it with a fork until completely smooth.

Taste your leftover sweet potatoes before starting the recipe. If they are too sweet, they will not work for this recipe (candied sweet potatoes will not work). It will be entirely too sweet, and it would be better to just cook a couple up in the microwave.

This doesn’t take long to bake because the filling is already hot. You’re really just baking it long enough for the potatoes to warm through and for the top to get lightly browned.

Sweet Potato & Sausage Shepherd’s Pie
(makes six servings)

Ingredients:

  • 1 1/2 to 2 cups mashed sweet potatoes
  • 1/2-pound turkey Italian sausage
  • 1 small onion, diced
  • 2 carrots, peeled and sliced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups chicken stock + 2 tablespoons
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable stock

Directions:

  1. Preheat your oven to 350°F
  2. Add the olive oil to a large skillet over medium-high heat.
  3. When the oil is hot, add the sausage and cook until it is no longer pink, breaking it up with the back of your spoon.
  4. Add the onion and carrots and cook for 5 minutes over medium heat.
  5. Add the seasonings, garlic, peas, and corn, and stir to combine.
  6. Cook for two minutes, and pour in two cups of the stock.
  7. Turn the heat back up to medium-high, and bring the mixture to a simmer.
  8. Simmer gently for about 10 minutes or until the liquid has reduced by half.
  9. In a separate bowl, whisk together the cornstarch and two tablespoons of stock until smooth.
  10. Drizzle the cornstarch mixture into the pan, stirring vigorously to prevent clumps.
  11. Turn the heat down to medium, and continue to stir until the mixture has thickened.
  12. Remove the pan from the heat.
  13. Spray a 2-quart, oven-safe baking dish with nonstick cooking spray, and pour the filling into the dish.
  14. Top with a 1/4 cup of Parmesan cheese.
  15. Scoop the sweet potatoes into a quart size Ziploc bag or pastry bag, and pipe them on top of the filling so that it is completely covered. (you can also just spread them, but we think this looks nicer)
  16. Sprinkle with the remaining Parmesan cheese, and place the dish in the oven on the center rack.
  17. Bake for 25 to 30 minutes or until hot and bubbly and the top is lightly browned.

Fall Sweet Potato & Sausage Shepherd’s Pie

Ingredients

Scale
  • 1 1/2 to 2 cups mashed sweet potatoes
  • 1/2-pound turkey Italian sausage
  • 1 small onion, diced
  • 2 carrots, peeled and sliced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups chicken stock + 2 tablespoons
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup freshly grated Parmesan cheese

It’s been awhile since I have had a chance to sit down and be real with you guys. In fact, I am ashamed to admit it has been almost 2 years since my last “Who is Ashley” post. It was during that time that I shared with you a hidden secret, I was a single mom for 3 years. Many of you began a story with me in 2008 that included me, a spouse and a newborn daughter. In that time, I was shaped, molded, redeemed and blessed with an amazing story and the recent birth of a sweet baby boy. Additionally, I also have gone from living in Florida for 33+ years to uprooting myself and giving a new city and area of the country (Washington, DC) a try.

In my early 20s, my biggest fear was a failed marriage. The fear was over being alone, raising kids and somehow supporting myself and them. A paralyzing fear is the best way to describe it. I stayed in a relationship that wasn’t healthy because I was afraid of the unknown. However, as a single mother my faith grew, my compassion grew, and my self confidence grew. I am grateful for those years alone and grateful for the woman, mother, and wife that time molded me to become.

In December of 2014, I remarried this amazing man. He was a friend from youth group and not knowing each other too well, we parted ways and didn’t stay in touch. Years later, during a Google fiasco with the blog, he reached out to help. We reconnected and is it fair to say the rest is history. God closed a door and opened up a door full of love and hope I have never known. I have a compassionate husband and the girls have an amazing stepfather. Our book never closed, just new chapters were made. Our story continues…

This month, we were blessed with a son. I look down at this precious bundle and am in awe. I was always a girl mom. I once thought my days of having more children were done and there God goes again, blessing me with something I REALLY DON’T DESERVE… a sweet baby boy.

Don’t get me wrong, the trials don’t end with a second marriage and all of these blessings. I don’t just walk away from those years alone and thank God for all the additional pruning and refining. I am on earth and that time continues.  Each day I have to fully surrender myself to His grace – because I cannot do it on my own, even with the help of a spouse. This verse comes to mind. I have a wonderful home, a wonderful family, a wonderful husband but as Matthew 6 states, these are earthly treasures and temporary fulfillment. My treasure needs to be stored in Heaven, the only place I will find complete joy and perfection.

Matthew 6:19-21 “Do not store up for yourselves treasures on earth, where moths and vermin destroy, and where thieves break in and steal. But store up for yourselves treasures in heaven, where moths and vermin do not destroy, and where thieves do not break in and steal.  For where your treasure is, there your heart will be also.”

A marriage, a new home in Washington, DC, and the birth of a sweet baby boy. So many positives, so much change, but all by His grace and the daily (really hourly) surrender of storing my treasures up in heaven.
