Raspberry Vanilla Overnight Oatmeal Recipe

Want to stay on a quick and healhty morning regiment? Check out this fun Raspberry Vanilla Overnight Oatmeal! No cooking involved, ready for you to eat a few hours after creating – it’s a fun way to “cook” with Mason Jars.

Ingredients: (per serving)

1/2 cup Steal Cut Oats
1/4 cup Milk
1/4 cup Vanilla Yogurt
1/8 tsp Vanilla Extract
1 tbsp Raspberry Preserves
1/4 cup Fresh Raspberries

Directions:

In a mason jar, combine oats, milk, yogurt, vanilla and preserves.
Screw on lid and shake well to mix.
Refrigerate for at least 4 hours.
When ready to eat, remove lid and top with fresh raspberries.

Sweet Breakfast Quesadillas Recipe

I’m warning you now, this is not a healthy pre-workout breakfast. Its more of an occasional treat for you… and maybe the little’s. Uou could make it for yourself before they wake up and then feed them a healthy breakfast of fresh fruit and whole wheat toast (make sure you hide the evidence) I promise I wont judge, we all have a stash of yummy sweets that are only for mommy. These Sweet Breakfast Quesadillas are rich, deliciou, and definitely decadent. While you can use any number of yummy combinations my favorite is this peanut butter, walnut, banana, and chocolate chip combination. Flour tortillas are best as they have the mildest flavor but feel free to use whatever flavor you like.

Ingredients:

Tortillas
Chocolate Chips
Banana’s
Walnuts
Butter
Peanut butter

Directions:

Dice or slice fruit.
In a large nonstick pan over medium heat melt butter, just to cover pan.
While pan is heating, assemble your quesadilla’s, spread peanut butter on one side and place in pan, fill with the rest of your ingredients, in my case I added banana slices, walnuts, and chocolate chips.
Fold tortilla over and brown for about 2 minutes, just until it begins to turn a golden color, flip and repeat on the other side.
Cut into smaller pieces and serve.

You are not limted to these ingredients. Create your favorite combination, like Peanut Butter and Jelly, Honey and Cinnamon, Strawberries and Cream Cheese (or Marscapone), Marshmallow fluff and Nutella spread, Shredded Apples and Cheddar Cheese… the possibliities are endless!

Layered S’more Shooters Recipe

YUMMY evening snack and alternative for the typical S’mores! Try these Layered S’more Shooters!

Ingredients:

whole graham crackers (you will be breaking them into the small rectangles)
¼ cup of marshmallow crème
1 small box of instant chocolate pudding
2 cups of cold white milk
1 cup of thawed whipped topping
Mini Marshmallows (for garnish)
Hershey’s chocolate bars (for garnish)

Directions:

Break the graham crackers into the 8 small rectangles
Crush each graham cracker separately
Put the crushed cracker into each shooter glass
Make the chocolate pudding as directed on box
Let the pudding set completely
Mix in the whipped topping
Put the pudding mixture into a piping bag
Put it in each of the shooter glasses
Put the marshmallow crème into a piping bag (It will be sticky and hard to work with!)
Put in a layer of the crème
Sprinkle on another layer of the cracker crumbs
Add another layer of the pudding mixture
Place a piece of the Hershey bar and a mini marshmallow on top of the layers

Oven Baked Cornbread Zucchini Sticks Recipe

So many of you enjoyed the Zucchini Parmesan Chips and Pizza Zucchini Boats Recipes, that I wanted to provide you with another option for your Zucchini Veggies – especially when you find yourself with extra. How about Oven Baked Cornbread Zucchini Sticks?

Ingredients:

Canola oil cooking spray
1 cup cornmeal
1/3 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2-3 small zucchinis
2 egg whites, lightly beaten

Directions:

Prepare your zucchini by scrubbing clean and then slicing into three inch sections. Further cut each three inch section into 6 equal pieces, so that your zucchini pieces resemble pickle spears.
In a large plastic bag mix cornmeal, flour, salt and ground pepper. Preheat oven to 425 F and spray down cooking sheet with canola oil cooking spray.
Coat each zucchini spear in egg white and then dunk in the bag of cornmeal and flour. Toss until spear is completely coated. Lay out zucchini spears on cooking sheet, making sure none of them touch. Repeat until all zucchini spears have been added to the cooking sheet.
Spray the tops and side of zucchini with canola oil cooking spray. Bake zucchini for ten minutes. Remove sheet from the oven and flip so that the exposed side is now down, spray exposed side with canola oil and return to the oven. Bake zucchini for another ten minutes.
Serve cornbread zucchini sticks hot from the oven. Marinara sauce or fresh salsa are both great options for dipping.

Homemade Magic Shell Recipe

Only two simple ingredients for this Homemade treat! Coconut Oil is always a must to have on hand in your home. Perfect solution for healhty eating PLUS it tastes yummy!

Ingredients:

2/3 cup Semi Sweet Chocolate Chips
1/3 cup Coconut Oil

If you do not want to use coconut oil, you can substitute vegetable oil or butter.

Directions:

Melt ingredients by heating in microwave for 30 seconds and stirring and repeating until melted and smooth.
Once melted, you can transfer to mason jar.
Can be stored in air tight jar for up to 1 month.

Summer officially began this week and for a lot of kids that means it’s time to pack up the duffel bags and head off to camp. We have fond memories of all the summer time joy that goes along with sleep away camp. One of the best parts of the day was mail time in the mess hall! Your kids are sure to be happy campers with something sweet tucked in their bag and some mail to brighten their day!

Here is seven days of sweet sunshine for your camper. Fill each day with some candy or goodies and a note. They will love it!

Other ways to send love from home to your campers are:

Postcards mailed each day with one letter written on each. By the end of their stay the message might spell something like, “I miss you!”
A personalized pillowcase with sweet dream messages.
A CD or playlist for their iPod with their favorite music.
A recorded message card so a camper can hear a familiar voice from home.
A care package of their favorite homemade baked goods.
A candy gram. Use the names of candy bars to write a special note

Be sure to print/download the Camp Candy Care Package Tags.

Note: This is also fun for overnight spend the nights or backyard camping. If you can’t use candy, get creative and fill the small cubes with other thoughful gifts – rings, glow-sticks, poppers, etc.

Starting this Saturday, June 7 through Sunday, July 13, Bass Pro Shops across the US and Canada are offering FREE 20-minute workshops each Tuesday, Thursday, Saturday, and Sunday for the entire family. Kids will get a free lanyard and earn a free collectible pin for every workshop completed (while supplies last).

Here is the schedule:

Tuesdays
Noon – Bird Watching: Discover how to identify birds by their beaks and how to build a feeder.
1 p.m. – Fishing: Find out what fish eat and how to identify major families of fish.
2 p.m. – Archery: Learn the proper stance and correct finger grip for shooting a bow.
3 p.m. – Kayaking: A basic course on the history of kayaks, various uses, paddles, and safety.
4 p.m. – Backyard Adventure: Talk about reptiles, amphibians, bugs, and honeybees. Plus, learn about clouds. Try new games you can play in your backyard.

Thursdays
Noon – Archery: Learn the proper stance and correct finger grip for shooting a bow.
1 p.m. – Shooting and Hunting: Topics include wood scents, hunting seasons, clay targets shooting, game cameras, and safety tips for using treestands.
2 p.m. – Travel Safety: Discuss selecting safe rest stops, avoiding illness, fun family songs, and car-friendly snacks.
3 p.m. – Water Safety: Prepare for summertime water adventures and learn how to play it safe with properly fitted life jackets while swimming and boating.
4 p.m. – Camping: Identify animal tracks, talk about lightning safety, and learn why everyone needs to be conservation campers.

Saturdays
Noon – Fishing: Find out what fish eat and how to identify major families of fish.
1 p.m. – Water Safety: Prepare for summertime water adventures and learn how to play it safe with properly fitted life jackets while swimming and boating.

Kids can also try free craft activities such as coloring a wooden ring toss, creating a rainbow thermometer, designing a magnifying glass, making a personal camp journal, coloring a wooden wiggle fish, and painting a wolf track each day from noon to 2pm (while supplies last).

I would suggest contacting your local store to confirm the events and activities are happening before heading over.
