As you all know, I work out of the home. Working from home has it pros and cons. Pros include a flexible schedule, getting caught up on mindless tv, and having a quiet home – this doesn’t happen often with three kids! Cons include people not recognizing you as a working individual (this happens when people request play dates or lunches – I just can’t), trying to juggle a crying baby and a phone call, and eating junk that is found in the home. If we bake a cake, that cake often doesn’t live to see the next day – and that is not due to the kids eating it, it is me! Because I have no will power when it comes to food, I have learned to not buy food that is high in calories or full of sugar. If I buy my kids a treat, I tell them to hide it in a spot in the home that mom doesn’t know about (is that terrible or pure genius?!)

I think the worst time of the day for me is the 3 PM hour. I normally have the munchies and often need a large cup of coffee. I was pleasantly surprised when new campaign reached my inbox for Weight Watchers® International.  You saw me recently talk about SmartPoints® in this post about Recipes and Their Weight Watcher Points post.

Two snacks I picked up from my local Giant Landover Grocery Store (in McLean, VA) were JOLLY TIME® Healthy Pop® Popcorn endorsed by Weight Watchers® and Weight Watchers® Ice Cream Novelties. The popcorn is only 3  SmartPoints® per serving. It is Non-GMO and gluten free. You can grab it in kettle corn or butter flavors.  The ice cream is made from low-fat milk, is under 100 calories and comes in many different flavors. I picked up the Vanilla Fudge Swirl Cones and English Toffee Crunch Bars and this time I hid it form the kids! These snacks have me reaching toward smarter choices and not making requests of the kids to hide the snack food.

This recipe shouldn’t take too much time or effort. Your family will likely thank you and ask you to make it again. And if you make it, dust bunnies will crawl from corners of the home and toss themselves in the garbage. The kids beds will self make and you might even find your laundry folded nicely when you open the dryer door. Okay, all of most of that likely won’t happen, I mean who’s kids ever thank them for dinner… but you might feel a little magic being able to make something so tasty and delicious for the family.
