Doesn’t Mother’s Day breakfast in bed sound delightful? Here is a breakfast that a dad and kids can handle without you. These mini pancakes are a great recipe to have your mini chefs help out with.

Ingredients:

  • Your favorite pancake mix (like Bisquick) or recipe
  • Syrup or vanilla
  • Powdered sugar
  • Assorted berries
  • Skewers cut in half

Preparation:

Whip up some pancake batter and use a measuring spoon or cantaloupe scooper to make your mini pancakes on a griddle. If you are having little ones help serve, you might put a few drops of vanilla in the batter to sweeten up the pancakes. If not, feel free to drizzle syrup galore. Have your kids help you stack a few mini slap jacks on a skewer. Shake some powered sugar over the batch. Then top each stack with yummy seasonal berries. Serve them up on a plate with fruit and a nice cup of coffee or tea.

There you have it. A simple breakfast for dads and kids to prepare for the Queen of the House! Happy Mother’s Day!

Pumpkin Spice Coffee Frappuccino Recipe

This Pumpkin Spice Coffee Frappuccino Recipe provides a sweet and delicious autumn treat. If Fall is not quite the weather you expect, especially for us here in Florida, but you still want an Fall taste, this treat will keep you cool but still satisfy your pallet.

There is no need to spend $5 or more on a yummy coffee drink when you can make it at home yourself for a fraction of the cost! Don’t get me wrong I completely understand the call of the enchanting green siren, and do on occasion give in. But going in with the kids also means 2 cake pops and 2 organic milks, and don’t forget your drink! It becomes hard to make it out of the store for less than $15! When not indulging your self and saving the cash in your wallet, It’s nice to have an alternative recipe for home.

Frugal Tip: Anytime you have leftover coffee (ya me neither, but just in case you do) freeze it in ice cube trays to use for yummy iced coffee drinks.

Ingredients:

  • ½ cup coffee, frozen ( coffee ice cubes)
  • 1 cup half and half
  • 3 Tbsp. canned pumpkin
  • 1 tsp. pumpkin pie spice
  • ½ tsp. cinnamon
  • 3 Tbsp. brown sugar

Directions:

Blend all ingredients in a blender until completely smooth, pour into glass. Top with whipped cream, a dash of pumpkin pie spice, and if you really want to be decadent, drizzle some caramel and sprinkle with candy sugar.

A delicious Greek classic, with an update. Not only is lamb hard to find in your local grocery store, but it can be a bit pricey. If you love the flavors of Gyro but want an alternative, thin cut sirloin is a great substitute.

Ingredients:

  • 1 1/2 pound thin cut sirloin steak
  • 1 small onion
  • 1 tomato
  • 1 ½ cup plain Greek yogurt
  • 2 Tbsps.oregano
  • 2 tsps. lemon juice
  • 4 cloves garlic
  • ½ cucumber
  • Salt and pepper to taste
  • 1 pack pita bread

Directions:

  1. Cut Sirloin Steak slightly into thin strips, going against the meat grain.
  2. Dice onion, dice tomato, finely chop cucumber, crush garlic. Stir ingredients together.
  3. In a gallon ziplock bag mix marinade: ½ cup greek yogurt, lemon juice, 2 cloves garlic, 1 Tbsp. oregano, salt and pepper, and steaks strips well, seal bag leave to marinate overnight.
  4. In a air tight container mix Tzatziki sauce: 1 cup Greek yogurt, 1 Tbsp. oregano, 2 Tbsp. garlic, salt and pepper.
  5. In another small bag or bowl store your tomatoes and onions. I recommend eating this no longer than the day after you prep it. The day of will prove to be more fresh.
  6. To cook: sauté sirloin and sauce marinade in a large saucepan over medium high heat to desired done-ness.
  7. Assemble sirloin steak, tomatoes, and onions in pita bread, top with Tzatziki sauce and enjoy!
