This Quick & Easy Cheeseburger Soup recipe is so comforting on a cold winter day. Even if your household doesn’t like cheeseburgers they’ll probably enjoy it. It’s one of my family’s favorite meals.

Ingredients:

• 1 pound ground beef
• 1 small onion, chopped
• ½ cup shredded carrots, shredded
• 3 stalks celery, diced
• 3 cups chicken broth (or chicken stock)
• 2 cups shredded sharp cheddar cheese
• ¼ cup Parmesan cheese
• 2 cups milk
• 3 cups potatoes, cubed (russet potatoes are great!)
• 1 teaspoon parsley
• 1 teaspoon basil
• 2 teaspoons garlic salt
• ¼ cup flour
• 5 tablespoons butter

Directions:

For a quick prep time, use precut celery, carrots, onions, and potatoes. Alternatively, you can spend about 10 minutes chopping up your ingredients.

Place 2 teaspoons of butter in a large pot (or large Dutch oven) and melt over medium heat, stir in onions and sauté until they start to become translucent.

Stir in carrots, celery, and ground beef and turn up to medium-high heat cooking until beef is no longer pink.

Add chicken stock, parsley, basil, garlic salt, and potatoes, simmer for 10 minutes.

In a separate small pan, melt the remaining 3 Tbsp. butter, and whisk in flour, stirring constantly until a light golden color, whisk in milk until smooth.

Slowly add milk mixture into soup and simmer for a cook time of 5 minutes.

Add cheddar and Parmesan cheese to pot, stirring until completely melted.

Serve and enjoy!
