Pizza Zucchini Boats Recipe

Zucchini can be a delicious and healthy alternative to pizza with all of the flavor. Kids will be inclined to gobble up their veggies when they are mixed into cheese and pepperoni. Let them help by stirring the mixture and spooning it in the shells and see if they don’t take more interest in something they have helped prepare. These are tasty warmed up in the microwave the next day so make a little extra and you will have lunch covered too.

Ingredients:

  • 6 zucchini
  • 1 8 oz. can diced tomatoes
  • ¼ cup pizza or spaghetti sauce
  • ½ cup grated parmesan
  • ½ cup shredded mozzarella
  • Pinch of mozzarella for topping
  • 10 pieces of pepperoni
  • ¼ cup Italian breadcrumbs
  • 2 cloves crushed garlic
  • 1 Tbsp. oregano
  • Salt and pepper to taste

Directions:

Dice pepperoni. Slice zucchini long ways and chop off ends. Use a spoon to scrape insides of zucchini out leaving at least ¼” to create a shell. Chop zucchini that you have scooped out, and place chopped zucchini into a small bowl. Add all remaining ingredients, stir well, combining thoroughly. Scoop mixture back into zucchini to create a heaping filling, and top with shredded mozzarella. Place in freezer bag for later cooking. Or if preparing now; preheat oven to 350°, place zucchini in baking dish sprayed with nonstick cooking spray, bake for 25-30 minutes until tender.

Mini Bacon Cheeseburger Meatloaf Recipe

Pretty much everyone loves meatloaf. But the same old same old can get pretty boring. I like to give it a few updates to make it more appealing. The individual portion sizes are easy to serve and fun to eat. The addition of cheese, bacon and condiments gives this family staple a tasty update.

Ingredients:

  • 1 ½ pounds ground beef
  • 5 cheese sticks
  • 3/4 cup ketchup
  • 2 Tbsp. mustard
  • 2 Tbsp. mayonnaise
  • 7-8 –pieces of bacon (or about ¼ to ½ cup of precooked bacon pieces)
  • 2 cloves garlic, crushed
  • Salt and pepper to taste
  • 2 eggs
  • ¾ cup plain bread crumbs

Preparation:

If using uncooked bacon, fry in a large non-stick pan until just beginning to crisp. In a large bowl combine all ingredients except cheese sticks, until thoroughly mixed. Separate your ground beef mixture into 5-6 loaves. Press a cheese stick into bottom of loaf, work to cover cheese completely with ground beef, forming a football shape.

Grab a rectangular bread pan and line with plain bread crumbs (this helps to absorb a lot of the fat when cooking). Place meat loaves on top of bread. Brush tops with additional ketchup. Cover with saran wrap and then aluminum foil, store in freezer until the morning of the day you choose to cook.

Cooking Directions:

Place pan in oven preheated to 350° for 45 minutes.

Serve with your favorite potatoes and a vegetable to finish off the meal.

Fried Green Tomatoes Recipe with Honey Chipotle Dipping Sauce

This is a delicious southern fried favorite-with a twist. Traditionally, I put hot sauce or a little horseradish in the wash and dip to give these a little kick. I was looking for a way to use a left over can of chipotles in adobo that I had purchased for another recipe, I created this and I now have a new favorite. These make a great side or appetizer. The following recipe is good for about 2 large green tomatoes. Plus I like to “double dip” mine to make sure they have a nice thick crunchy coating.

Breading Ingredients:

  • 1 cup flour
  • 1 cup panko bread crumbs
  • 1 tsp. pepper
  • 1 tsp. garlic salt

Wash Ingredients:

  • 1 cup milk
  • 1 egg
  • 2 tsp adobo sauce

Honey Chipotle Dipping Sauce Ingredients:

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • chipotles in adobo sauce (use sauce only)
  • 1 tsp. Lemon juice
  1. In one shallow container for dipping combine all breading ingredients thoroughly.
  2. In a second shallow container whisk all ingredients for wash until well combined.
  3. Slice tomatoes to between ¼ “ to ½ ” thickness.
  4. Dredge tomatoes into breading, egg wash, then breading again.
  5. Heat vegetable or canola oil over medium high heat in a shallow saucepan.
  6. Gently lay breaded tomato slices into hot oil, take care not to crowd pan, fry for 2-3 minutes on each side until golden brown.
  7. For Honey Chipotle Dipping Sauce whisk all ingredients together until thoroughly mixed to distribute all flavors evenly, make ahead of time and pop in fridge for at least 30 minutes to allow flavors to marry.

Five Dinners for the Week with Weekend Prep

The school year can be hectic and when life isn’t settled, it is very easy to to let your budget and money-management go by the wayside.

This week we are going make 5 delicious and simple dinners. We’ll start with a shopping list for all ingredients, and then move on to weekend prep.  Dinners include minimal dishes to wash and delicious meals to savor. This round we are going a to travel around the world and not even need a passport. We have Chinese , Italian, Greek, and American dishes. No abnormal or expensive ingredients here either!

Menu for the Week:

  • Sirloin Gyros 
  • Creamy Farfalle Carbonara 
  • Crock-Pot Chicken Parmesan
  • Teriyaki Chicken Stir-Fry 
  • Mini Bacon Cheeseburger Meatloaf

Shopping List:

  • 1 pack bacon
  • 2-1 pound packs of chicken breasts
  • 1 ½ pounds ground beef
  • 1½ pound thin sliced sirloin steak
  • 1-20 oz. can pineapple tidbits
  • 1 bag frozen stir fry vegetables
  • 1- oz. jar spaghetti sauce
  • package farfalle pasta
  • package of linguine or fettucini pasta
  • 1 can or 1 bag frozen peas
  • Tub fresh grated parmesan cheese
  • 1 bag shredded mozzarella
  • 2 small onions
  • 1 tomato
  • Cucumber
  • Rice, instant or slow cooking
  • Tub plain greek yogurt
  • Ginger, fresh grated or paste
  • Cheese sticks, mozzarella or cheddar
  • Package pita bread

Pantry Ingredients*:

  • Salt
  • Pepper
  • Oregano
  • Rosemary
  • ½ and ½
  • Soy Sauce
  • Brown sugar
  • Garlic
  • Cornstarch
  • Olive oil
  • Lemon Juice
  • Eggs
  • Honey

* If you don’t have these add them to your shopping list!

These meals are based on 4 people with a little leftovers – perfect for a lunch the next day-double duty meals! They are easy to adjust to take out or add in ingredients based on your family size and needs.
