Copycat Chipotle Lime Rice with Cilantro

Love making copycat recipes at home. This one is one of my FAVORITE sides at a restaurant. Make a Copycat Chipotle Lime Rice with a dash of Cilantro in your own kitchen. Pairing with tacos would be the ultimate meal!

Before you begin, take a look at these other amazing recipes.

Copycat Chipotle Lime Rice Recipe

Ingredients:

  • 1 cup Basmati Rice
  • 2 cup Water
  • 1 tbsp Vegetable Oil
  • 1 Bay Leaf
  • 2 tsp finely chopped Cilantro
  • 2 tbsp of Lime Juice
  • 1/2 tsp Kosher Salt

Directions:

  1. Rinse rice until water runs clear.
  2. Sautee rice in oil for 3 minutes over medium heat.
  3. Add bay leaf and water and bring to a boil.
  4. Reduce heat and simmer covered for 20 minutes or until water is absorbed.
  5. Turn off heat and let rice sit covered for 15 minutes.
  6. Mix salt and lime juice until salt is dissolved.
  7. Remove bay leaf from rice.
  8. Spread juice mixture and cilantro over rice and fluff with fork to distribute.

Amazon Deal of the day,  inFAMOUS Second Son for the Playsation 4 only $35.99 from $59.99, that’s a 40% savings.  The game was just released in March is rated Teen,  has great reviews, and is a steal at the $35.99.

inFAMOUS Second Son is an action-adventure story in which superhumans, surrounded by a society that fears them, are ruthlessly hunted down and caged by the Department of Unified Protection. Step into a locked-down Seattle as Delsin Rowe, who has recently discovered his own superhuman power, fights back against the oppressive DUP. Push your awesome abilities to the limit and witness the consequences of your actions on the city and its citizens.

Some comments:

Not a bad deal. If you’ve got a ps4, jump on this deal. If I could get this for the ps3, I would also be jumping on this deal. The first two games were amazing.

This was my first PS4 game and I loved it. I’d get it for this deal price, for sure. $59.99 was justified for this game. $35.99 is a steal!

This game was the only reason I purchased my PS4. I got the Infamous 1 game free when Sony got hacked, and a day or two after I finished it, Infamous 2 came out. I’ve been waiting for the third one, and this one did not disappoint at all.
