Creamy Chicken and Broccoli Pasta Skillet Recipe

Tonight’s recipe is an easy and healthy meal that’s perfect for make ahead meals. Similar to the bags of frozen Birds Eye Voila Skillet Meals, where you just heat and serve. Only you control the ingredients and keep the preservatives out. Change up the cheese, meat, seasonings and pasta for lots of different flavor combinations.

Ingredients:

  • 2 cups broccoli florets
  • 1 ½ cups Monterey jack shredded cheese
  • 1 lb. chicken breasts
  • 1 cup chicken broth
  • ½ cup milk
  • 3 cloves crushed garlic
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 ½ cups uncooked bowtie pasta

Chop chicken into small bite sized pieces. In a saucepan over medium, heat 1-2 Tbsp. olive oil, add garlic and chicken, saute until cooked through. Set aside to cool.

Freezer Prep:

To prep for freezing, place; broccoli, chicken broth, milk, salt, pepper, and shredded cheese in a freezer safe gallon bag.

Cooking Directions:

Pour contents of gallon bag into sauce pan on low heat with 1-2 Tbsp. olive oil, cook until combined, Boil pasta for 8-12 minutes in 2 quarts of water. Toss pasta with chicken mixture. Serve.

Uses for Aluminum Foil

Need some more ways to use that aluminum foil sitting in your kitchen? I’m sure you already know that aluminum foil can be great for lining pans, cooking food on the grill, and more.

Here are some new ways you can find uses for aluminum foil!

  1. Create the perfect shaped pan. Use the aluminum foil to create special shapes like hearts, bears, and numbers inside your regular cake pan. Just crumple up balls of foil and place where needed to form the shape. Then put another layer of aluminum foil over the entire thing so you have somewhere to pour the batter into.
  2. Make fabric softener. Out of fabric softener? Wad up a ball of aluminum foil and throw it in the dryer and dry normally. The foil will help remove the static cling from your clothes so this would be especially helpful in the winter.
  3. Keep your slow cooker clean. Before you cook anything in your slow cooker, especially if it’s something really sticky like lasagna, line your slow cooker with aluminum foil. Once you are done cooking, simply remove the foil and toss. No dishes to wash!
  4. Keep the critters away from your trees. In the fall, wrap aluminum foil around the bottoms of your trees to prevent rabbits, deer and other creatures from chewing on the trunks. Make sure to remove right before spring.
  5. Keep matches dry. Going camping? Wrap your matches in aluminum foil first so no moisture can get through to them.
  6. Make a funnel. Don’t have a clean funnel on hand and you need one? Use the aluminum foil to form the shape of a funnel and use it in the kitchen, in the garage, or anywhere you need a funnel!

What are your favorite uses for aluminum foil?

Dollar Tree Fall Decor

I love when it is finally far enough into the fall season that I can begin to bring out the pumpkins, and leaf décor without looking like a crazy person.  I really love everything about fall; pumpkin flavored everything, autumn decorations, the crispness that comes to the air, and cozy pretty sweaters.  Alas, I live in Florida so I only get a touch of those last two, poor me.  But I can bring the beautiful look of fall right indoors, or even onto my front porch.  Also, I  am cheap frugal so I love  doing it on a budget, I took a drive down to my local Dollar Tree for a little inspiration and was able to come up with a few pretty, inexpensive and quick fall crafts. They have a lot of plain candle holders that make a perfect blank canvas to build upon.

So in my buggy I tossed a bag of raffia, 4 candle holders, 4 candles , a small bag of coffee beans, a roll of fall ribbon, 2 bags of large silk fall leaves,  bag of popcorn, and a few bags of beans ( I had most of them already in my pantry)  I spent  $15 on my 4 candle holder projects, with the exception of the candles, and candle holders all items can be used on multiple projects, so if I use my remaining supplies they each really only cost a couple dollars each.   And if you have any of the items on hand you can lower your total even more. Look at you being thrifty!

Grab your glue gun and let’s get this crafty party started!

Fall Leaf Candle Holder

Take 4 of the large leaves, cut off the stem right at the leaf edge. Turn your candle holder upside down, apply a thin bead of hot glue to the bottom rim about ¼” from the edge.  Press each of your leaves into the glue, overlapping them.  Turn your candle holder over run a thin line of hot glue up each leaf where it branches, press into glass, you will need to overlap leaves a bit again.  Wrap candle holder in 2 lengths of raffia 2 or 3 times, tuck ends under and place a dab of hot glue to hold them down- use a pencil or something to press  down while it dries( not your fingers, trust me)

Coffee Bean Candle Holder

Fill jar about 1/3 of the way full with coffee beans. Place your candle on top of the beans, tap down gently, centering candle. Fill between candle and jar with more beans, up to the rim of glass.  Wrap candle jar with 2-3 pieces of rafia, tuck and in and secure with a dab of hot glue. Alternatively you can tie your rafia ends into a bow, I just liked the clean, simplicity of the raffia this way- I put a row of 3 of these down the center of my table as my centerpiece.

Harvest Corn Candle Holder

Measure your wide wired ribbon by wrapping it around the jar and overlapping  about 1”, cut. Draw a thin line of glue down one end of the ribbon, press onto the back center of glass jar. Wrap ribbon around fold the end under about ½” and run a line of glue down the end, press into other side of ribbon to overlap. Like the coffee beans, fill jar 1/3 of the way full with unpopped corn kernels Place your candle, centered  on top of the corn, fill the sides between candle and jar up to the rim with corn kernels.  Place a sticker or I used a chipboard letter for our family initial, they don’t stick well to fabric so use a couple tiny dots of hot glue on the back to affix firmly. You could do Halloween  themes and place Halloween stickers like witch heads and bats on top.

Autumn Layered Bean Candle Holder

This is such a simple craft but it makes a big impact in pretty fall colors, lending your table or shelf some beautiful textures. I used a taller candle holder I purchased at Dollar Tree to create a little more drama. Simply layer dry beans in 2” layers, using at least 4-5 various colors and textures for variety.  I used; black beans, kidney beans, green split peas, yellow spit pits, northern beans, and pinto’s.  Even 2 colors alternating would be a pretty decoration. Choose colors from your home décor, use year round.
