Looking for a delicious way to fill your vegetable intake? How about this fun Parmesan and Bread Crusted Zucchini Chips? The kids might even been begging for more!

Ingredients:

• 2 Zucchini
• 1/4 cup grated Parmesan
• 1/4 cup dry Bread Crumbs
• 1/4 tsp Salt
• 2 tbsp Olive Oil
• 1/4 tsp Pepper

Directions:

1. Preheat oven to 450 degrees.
2. Spray your baking sheet with non-stick spray.
3. Cut zucchini into 1/4″ slices.
4. Combine Parmesan, bread crumbs, salt and pepper in a small bowl. Mix well.
5. Dip zucchini into oil then toss in crumb mixture and place on prepared sheet.
6. Bake 30 minutes or until crisp and brown.
