Coupon Chaos Mama is combining shrimp and seafood for a tasty seafood supper. This recipe is intended to pair with Publix Current Weekly Ad Sales.

Baked Shrimp with Tomato and Feta
(An Ellie Krieger Recipe, Foodnetwork.com)

Ingredients

Medium White Shrimp, 41 – 50 per pound $5.99 lb
Sweet Onions $.99 lb
B1G1 Del Monte Tomatoes 14.5 oz  $1.29
B1G1 President Feta Cheese, 6 oz tub $5.19
$3/2 President Cheeses Rolling
Garlic cloves $1.03 or Jarred minced
 garlic $1.99
 Fresh (or dried) Dill $1.29 (fresh) or $3.99 (dried)
 Fresh (or dried) Parsley $.99 (fresh) or $3.35 (dried)
 Uncle Ben’s Ready Rice – 8.5 to 8.8 oz $4/2

Directions:

  • Preheat the oven to 425 degrees. Heat 1 Tbsp olive oil in an oven proof skillet over a medium-high heat. Add 1 ½ cups diced onion and cook, stirring, until softened, about 3 minutes. Add 2 cloves (or 2 tsp jarred) minced garlic and cook for 1 minute. Next add two 14.5-ounce cans of no salt added diced tomatoes and bring to a boil. Reduce the heat to medium-low and let simmer for about 5 minutes, until the tomato juices thicken. Remove from the heat. Stir in ¼ cups fresh parsley(or 2 tbsp dried), 1 tsp fresh(1/2 tsp dried) dill, and 1 -1/4 lbs shrimp. Season with salt and pepper to taste. Sprinkle 2/3 cup feta over the top. Bake until the shrimp are cooked through and cheese melts, about 12 minutes. Serve over or with a side of brown rice to complete the meal.

Note: If you don’t have an oven proof skillet, you can transfer the tomato mixture into an oven safe dish, mix in the other ingredients and then bake.
