Bring the love of diced tomatoes, onions, and peppers over a chip with this easy and mild Copycat Chipotle Pico de Gallo. Pair with a side of Chipotle Lime Rice with Cilantro and a dish of our Copycat Chipotle Carnitas made with the Crock-Pot. Use the left overs for your child’s Back to School Taco Bento Lunchbox!

Ingredients:

3-4 Tomatoes, diced
1/2 Red Onion, diced
1/4 Jalapeno, diced
5-7 stems of Cilantro
Juice of 1 Lime
1/4 tsp Kosher Salt

Directions:

Remove leaves from the cilantro stems and discard stems.
Chop up cilantro leaves.
Combine all ingredients and refrigerate for at least an hour to allow flavors to marry.

Publix Coupon Policy Changes

Publix shoppers – we have some Publix Coupon Policy Changes coming. This policy goes into effect Oct. 1 with a grace period until Oct. 18. There aren’t any huge changes, which is good, but there are a few changes that I want to highlight:

Coupon limit: Only 8 of the same coupon can be redeemed per day. I have mixed feelings on this one. It’s not a huge change because you’re only allowed 10 sale items per day anyway, but I do like being able to use up to 10 coupons. However, I think this will help curb shelf clearing, which is good for all of us in the long run.

Overage: Money back will now be given on a Publix gift card rather than in cash. I always liked the feeling of getting cash back when I had overage after all my coupons but, really, a gift card is just as good!

Here is a list of all the changes:

Coupons will only be accepted for identical items.
You can use a maximum of 2 coupons per item – a manufacturer coupon and either a Publix store coupon or competitor coupon.
Digital manufacturer coupons can not be combined with paper manufacturer coupons on the same item.
Percentage off items or percentage off total order coupons will not be accepted.
Coupons that Publix determines to be printed incorrectly (missing coupon details) will not be accepted.
Coupons shown on a mobile phone or device will not be accepted.
Coupons that appear to be copied will not be accepted.
Each BOGO item is considered a separate purchase.
You may only use 8 of the same coupons per day per household.
Individual coupons above $5 require manager approval.
You may only use one Publix or competitor dollar off total order coupon per day per household.
Any overage at the end of a transaction will be giving on a Publix gift card.
You may only get 1 rain check per item per day per household.
Rainchecks will not be issued for Publix, manufacturers or competitor coupons.
