If you’ve got kids (and I do) sometimes getting them to eat anything at dinner can be a battle, let alone something relatively healthy. They seem to always want to eat the same tried and true kid friendly fare. While I am a HUGE advocate for getting our children to try new things (do you know it can take up to 12 times of trying something before a child decides they like it?), I realize we don’t want to fight over every meal. Therefore, I thought I would start a kid version of my better for you and budget friendly meals (with matchups) and give some less than healthy choices a bit of a makeover. Your kids will eat it without a fuss and you can feel at least a little bit better about what you’re serving. With that in mind, this week I’ve transformed the familiar “pigs in a blanket” into a dipping delight that might actually make this meal fun for everyone. Directions: Start by separating or cutting each can of dough into quarters (if using crescent rolls, press perforations to seal). Place one hot dog and a pickle spear at the end of each rectangle and then sprinkle with diced tomato. Roll up each dipping dog and pinch the edge to seal. Place seam side down on an ungreased cookies sheet and bake at 375 degrees for 12 to 15 minutes. Serve with carrots as well as low fat ranch dressing and ketchup for dipping the dogs and carrots.
