Monster Cupcakes

It’s Trick-or-Treat time! I don’t know about you but, I’ll take the treats over tricks any day! These Monster cupcakes are such a cute treat and will be perfect for your Halloween bash! They’re so easy to make and you can decorate them as cute or scary as you want. Make a tray of these little monsters and let the kids go nuts decorating them with various candies or keep it simple with eyeballs. Either way they will be a hit!

Ingredients:

Cupcake Ingredients:

  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1 C sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 large egg whites
  • 1/2 tsp vanilla extract
  • 1/3 C buttermilk
  • purple gel food coloring

Frosting Ingredients:

  • 4 C powdered sugar
  • 1 C unsalted butter, room temp
  • 4+ TBSP of heavy whipping cream
  • Purple gel food coloring
  • Candy eyes

Directions:

Cupcake Directions:

  1. Preheat oven to 350 degrees. Line cupcake pan with paper liners.
  2. Sift flour, baking powder, baking soda and salt in a medium bowl. Sit aside.
  3. Using an electric stand mixer whip the butter and sugar until pale and fluffy in the mixing bowl.
  4. Add in an egg, then the egg whites one at a time. Add the vanilla with the second egg white.
  5. Using a liquid measuring cup whisk the buttermilk and purple gel food coloring together.
  6. Start to mix 1/3 of the flour mixture alternating with 1/2 of the buttermilk mixture. Mix after each addition only until just combined.
  7. After all ingredients are blended scoop the batter into the paper lined cupcake pan until each tin is 3/4’s filled.
  8. Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
  9. Allow cupcakes to cool in cupcake pan for 10 minutes.
  10. Remove cupcakes from pan and place each on a wire rack until completely cooled.

Frosting Directions:

  1. Cream the butter and powder sugar until it looks creamy.
  2. Add purple gel food coloring. Stir until the color in fully blended throughout all of the frosting.
  3. Test to see if the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon it is ready if not then….
  4. Add more powder sugar 1/2 C at a time…. mix well.
  5. If ready scoop the frosting into the pastry bag with a large star tip.
  6. Twist the open end of the pastry bag to push the frosting to the tip.
  7. Frost from the cupcake edges inward to the center of the cupcake with a straight down with the tip.
  8. Position the candy eyes on the top of the frosted cupcake.

Apple Filled Cupcakes with Brown Sugar Cinnamon Buttercream Frosting

Apple season is here! Bake up a batch of these delicious apple filled cupcakes with brown sugar cinnamon buttercream frosting for a festive treat! I don’t know about you but, I think one of the best surprises in life is biting into a cupcake that has filling in it. It’s better than the cherry on top! Enjoy these for a back to school celebration, a birthday party or anytime you’re wanting a comforting treat.

Ingredients:

  • 1 box White or Yellow Cake Mix + box ingredients
  • 20 oz Apple Pie Filling
  • 1 cup softened Butter
  • 3 cup Powdered Sugar
  • 1/2 cup Brown Sugar
  • 1 tsp Cinnamon
  • 2 tbsp Milk
  • 1 tsp Vanilla

  1. Preheat oven and line muffin tins with paper liners.
  2. Prepare batter according to box directions.
  3. Fill liners 2/3 full and bake according to box directions for cupcakes.
  4. Allow to cool completely.
  5. Use a knife to dice apples into smaller pieces.
  6. use a knife to core our a plug in the middle of each cupcake and fill with pie filling.
  7. Place just the top of plug bake on cupcake.
  8. Whip butter, brown sugar, cinnamon and vanilla for until fluffy.
  9. Gradually add powdered sugar.
  10. Add milk until you reach desired consistency.
  11. Transfer to piping bag and frost each cupcake.

This recipe is so easy! 4 ingredients and you’re ready to go! It would make such a special treat for Back-To-School lunches for Teachers and Staff. Also, keep these ingredients handy for the holidays coming up. So easy to prep ahead. Enjoy!

Ingredients:

  • 1 box Yellow Cake Mix (plus box ingredients)
  • 2 boxes 3.4 oz Instant Vanilla Pudding Mix
  • 4 cup Milk
  • 1 container Chocolate Frosting


Directions:

  1. Prepare cake in 9×13 pan according to box directions.
  2. Use spoon handle to poke holes evenly across cake.
  3. Combine milk and pudding mix and whisk until well blended.
  4. Pour pudding over cake making sure it gets down into holes.
  5. Refrigerate cake for several hours to allow pudding to settle and set up.
  6. Open frosting container and revove foil seal.
  7. Microwave for 15 seconds and stir. Repet this until frosting is pourable.
  8. Pour over pudding layer and spread with spatula to cover completely.
  9. Refrigerate for at least several more hours.

Non-Fried Fried Ice Cream Recipe

I scream, you scream, we all scream for ice cream! This non-fried fried ice cream is a textural delight with it’s crunchy outer layer over the smooth ice cream. These would be a fantastic dessert for a BBQ! Make ahead of time and serve on a tray with toppings! Everyone will love the flavor of the cinnamon and crunch of the corn flakes and sugar. It’s the perfect Summer dessert!

Ingredients:

  • 5 cup Corn Flakes
  • 1/2 cup Butter
  • 2 tsp Cinnamon
  • 4 tsp Sugar
  • Vanilla Ice Cream

Directions:

  1. Scoop and form Ice cream into approx 2 1/2″ balls.
  2. Place in freezer for 15 minutes.
  3. Pulse corn flakes in food processor to crush.
  4. Melt butter in a medium skillet over medium heat.
  5. Stir in crushed corn flakes and cinnamon and cook, stirring constantly, about 3-5 minutes or until golden brown.
  6. Remove from heat and stir sugar into mixture.
  7. Pour into a shallow dish and allow to cool.
  8. Place ice cream ball into mixture and roll to evenly coat.
  9. Press corn flake mixture around outer surface if a thicker coating is desired.
  10. Serve topped with chocolate syrup, whipped topping and/or cherries, as desired.

Christmas Tree Rice Krispie Treats

I have had fun sharing with you Rice Krispie Treats for every holiday – Thanksgiving, Valentine’s Day, Halloween and more. I love this Christmas Tree Tutorial and I have a great tip to help you mold the tree – Use the trial form that comes in a waffle cone pack to protect the cones and cut it to make a form to help shape the trees. Directions and tips below!

Ingredients:

  • 6 cup Rice Krispies Cereal
  • 3 tbsp Butter
  • 10.5 oz Marshmallows
  • Green Food Coloring
  • 12 Miniature Reese’s Cups
  • 1/3 cup M&M Minis
  • 12 Candy Stars
  • 3 cup Powdered Sugar
  • 3 tbsp Milk
  • 3 tbsp Corn Syrup

Directions:

  1. To help in forming the cone shape, I took the foam that comes in a waffle cone pack to protect the cones and cut it to make a form to help shape the trees.
  2. Line a cookie sheet with parchment paper.
  3. In a medium to large saucepan, melt the butter over low heat.
  4. Add the marshmallows and stir until completely melted.
  5. Add enough food coloring to make mixture dark green (it will lighten when cereal is added).
  6. Remove from heat.
  7. Add the Rice Crispies cereal and stir until cereal is well coated.
  8. Allow to set about 4 minutes.
  9. Butter a your hands and form mixture into cone shapes.
  10. Place cones onto prepared pan.
  11. Allow to cool and firm up for several hours.
  12. Mix powdered sugar, milk and corn syrup in a bowl until smooth.
  13. Transfer to piping bag or zippered bag to pipe onto cookies.
  14. Pipe like a garland around each tree.
  15. Space M&M minis like ornaments onto the garland.
  16. Pipe a dab of icing on top of tree to act as glue and attach star.
  17. Place a Reese’s upside down on pan. Pipe icing on it and place tree on top.
  18. Allow to set before serving.

Halloween Frankenstein Twinkies – Green Monster Treats

How adorable are these? More fun with Twinkies this week (you might remmber our Twinkie Mummies) These little green monsters also make the perfect treat for a Kid’s Hallowen Party!

Ingredients:

  • 12 oz Green Melting Chips
  • 4 oz Black Melting Chips
  • 1 Red Melting Chip
  • 6 Twinkies
  • 12 Candy Eye Decorations

Directions:

  1. Place Twinkies in freezer for at least 30 minutes.
  2. Prepare a baking sheet or cutting board by covering with parchment or wax paper.
  3. Melt green candy chips by microwaving 30 seconds then stirring and repeating until melted.
  4. Dip each Twinkie in chocolate and roll to completely coat.
  5. Transfer to prepared paper.
  6. using a toothpick, spear a mini marshmallow and dip in green chocolate to cover completely.
  7. Postition marshmallow in middle of Twinkie to act as nose. Use another toothpick to loose marshmallow from first toothpick and to smooth out chocolate.
  8. Using chocolate as “glue”, set 2 eyes just above the nose.
  9. Place in refrigerator for 10 minutes to set.
  10. Lift each Twinkie to separate from paper.
  11. Using a knife carefully trim excess chocolate that ran off.
  12. Melt black candy chips by microwaving 30 seconds then stirring and repeating until melted.
  13. Dip top of each Twinkie in black chocolate to make hair.
  14. Return to prepared paper.
  15. Using toothpick method, dip 8 mini marshmallows in black chocolate to coat completely and place on prepared paper to use as neck bolts.
  16. Place in refrigerator for 5 minutes to set.
  17. Trim any excess chocolate that ran off.
  18. Using chocolate as glue attach neck bolts to sides of Twinkies.
  19. Take the one red chip and heat for 30-60 seconds until melted.
  20. Using a toothpick, draw a mouth on each and draw the forehead scar.
  21. Place in refrigerator for 10 minutes to set.

Candy Corn Rice Krispie Treats

Everyone loves Rice Krispie Treats. When baking them for the holidays, consider something unconventional. We love this Candy Corn Mashmallow Treats perfect for fall. I bet your son/daughter would love them for their class Halloween Party.

Ingredients:

  • 6 1/2 cup Rice Krispies Cereal
  • 3 tbsp Butter
  • 10.5 oz Marshmallows
  • Red Food Coloring
  • Yellow Food Coloring
  • Wilton White White Icing Color (optional)

Directions:

  1. Lightly spray a pie pan with non stick spray.
  2. In a medium saucepan, melt the butter over low heat.
  3. Add the marshmallows and stir until completely melted.
  4. Transfer about half the marshmallow mixture to a large mixing bowl.
  5. Add about 10 drops of yellow food coloring and mix well.
  6. Add 3 cups cereal and mix well.
  7. Butter your hands or use wax paper to press the mixture firmly into a ring around the outer edge of the pan.
  8. Transfer most (about 4/5) of the remaining marshmallow mixture to a large mixing bowl.
  9. Add about 10 drops of yellow and 6 drops or red food coloring and mix well.
  10. Add 2 1/2 cups cereal and mix well.
  11. Butter your hands or use wax paper to press the mixture firmly against the yellow ring around the outer edge of the pan liaving a empty circle in the middle.
  12. Optionally, add about 6 drops of white icing color to the marshamallow mixture remaining in the saucepan and mix well.
  13. Add 1 cup cereal and mix well.
  14. Butter your hands or use wax paper to press the mixture firmly against the orange ring into the empty spot in the middle.
  15. Allow to cool completely.
  16. Lift out whole and cut, or cut in pan into triangular pieces.
