Chocolate Cupcakes with Peanut Butter Filling Recipe

 If you follow me on Pinterest and have seen my fitness board, you likely know that I try to prepare my meals gluten-free and sugar-free, using only natural peanut butter and sweeteners (Truvia or Stevia.)

Just because I watch the ingredients I use in the kitchen, doesn’t mean I need to neglect my baking. When looking for a sweet treat, try out these Chocolate Cupcakes with Peanut Butter Filling Recipe.

Ingredients:

• 1/3 cup coconut flour
• ½ tsp baking soda
• ½ tsp baking powder
• ¼ tsp sea salt
• 1 tsp vanilla extract
• 4 eggs
• 3 tbsp truvia (Not the baking blend)
• 20 drops liquid stevia
• 1/3 cup almond milk
• 2 tbsp cocoa powder, unsweetened
• 1/3 cup red palm oil (you can also use oil or butter)

For the Filling:

• 1/3 cup natural peanut butter, unsweetened
• 1 tbsp truvia (Not the baking blend)

For the Frosting:

• 8oz cream cheese, softened to room temperature
• 13 drops liquid stevia
• 2 tbsp truvia (Not the baking blend)
• ½ tsp vanilla extract

Directions:

  1. Preheat oven to 350.
  2. In a small bowl combine coconut flour, baking soda, baking powder, sea salt, truvia, and cocoa powder. Set aside.
  3. In a large mixing bowl combine eggs, liquid stevia, vanilla extract, and almond milk.
  4. Slowly combine wet and dry ingredients until thoroughly mixed.
  5. Place cupcake liners in a muffin tin and lightly grease with red palm shortening (or any oil you might have on hand)
  6. Place mixture into liners and bake for 25 minutes.
  7. Once cupcakes have completely cooled, combine the filling. It is recommended to use a filling tip (makes it much easier).
  8. Insert the tip into your cupcake and slowly fill to prevent overflowing.
  9. Once the cupcakes have been filled, cream the frosting. Frost the cupcakes.

BLT Avocado Chop Salad Recipe with Homemade Ranch Dressing

This is a delicious and healthy meal that you can build to customize to your taste. Served with an Greek yogurt homemade ranch dressing- you will never buy it at the store again! If I include my kids in the preparation process they will usually eat anything, salad is no exception. Crumbling bacon in a baggie, or tossing everything together are great jobs for little hands.

BLT Avocado Chop Salad

Ingredients list:

  • 1 head of romaine lettuce or 1 bagged salad
  • 1 avocado
  • 6-8 pieces of cooked bacon
  • 1 Large tomato
  • 3 oz. Mozzarella (consider low fat for a healthier alternative, I raided the kids fridge snacks and diced up 3 mozzarella cheese sticks into our salad)

Other ingredients that are great to include in chopped salad: scallions, diced bell pepper, corn, black beans, crushed tortilla chips, homemade croutons, diced olives, diced boiled eggs or just about anything else you can think of.

  • Peel, and dice avocado
  • Chop crisp bacon pieces
  • Dice tomato
  • Chop lettuce into small, uniform pieces
  • Dice any other ingredients you want to add
  •  Toss all items together in a large bowl
  • Serve with homemade ranch dressing

Homemade Greek Yogurt Ranch Dressing

  • Ingredients List:
  • 1 cup Greek yogurt
  • ½ cup milk
  • 3 Tbsp. fresh parsley
  • ¼ tsp. dill
  • 1 tsp. garlic paste
  • 1 ½ tsp. vinegar

Whisk all ingredients together in a bowl, or container for storing. Allow to sit in refrigerator to “marry” ingredients for at least 30 minutes.

Inside Out Philly Cheesesteak Stuffed Peppers Recipe

A delicious, and low carb alternative to a lunch cart favorite. These stuffed peppers have a hearty flavor that will satisfy even the hungriest diner. Even the kiddo’s dig into these, how fun to eat out of an edible bowl! These would also make a great drop off dinner for a new momma and her family, or to bring to a potluck dinner.

Ingredients:

  • 4-6 green bell peppers
  • 1 lb. rare deli roast beef, sliced
  • 1 8 oz. bag shredded mozzarella
  • 1 large onion
  • 1 Tbsp. Beef Broth
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • ½ tsp. pepper
  • Mushrooms
  • Additional diced green peppers if desired.

Directions:

Dice roast beef and set aside. Slice tops off peppers, and remove all seeds. Dice onion.

Heat 1 Tbsp. olive oil in a nonstick skillet over medium heat. Saute onion until caramelized(until it has started to brown and soften) if you want extra peppers or mushrooms add them to pan with onions. Turn off heat. Add broth, salt, pepper and Worcestershire sauce to pan, stir to combine well, set aside to cool.

In a large bowl combine; chopped roast beef, cooled onion mixture, and entire bag of shredded mozzarella.

Fill hollowed green peppers (I used very large peppers and was able to stuff 5 peppers well)

To freeze place stuffed peppers in freezer bag, upright, and place in freezer. To cook peppers, remove from freezer, place peppers in a pan sprayed with nonstick cooking spray, allow to cook 20-25 minutes in oven preheated to 400°.

Pizza Zucchini Boats Recipe

Zucchini can be a delicious and healthy alternative to pizza with all of the flavor. Kids will be inclined to gobble up their veggies when they are mixed into cheese and pepperoni. Let them help by stirring the mixture and spooning it in the shells and see if they don’t take more interest in something they have helped prepare. These are tasty warmed up in the microwave the next day so make a little extra and you will have lunch covered too.

Ingredients:

  • 6 zucchini
  • 1 8 oz. can diced tomatoes
  • ¼ cup pizza or spaghetti sauce
  • ½ cup grated parmesan
  • ½ cup shredded mozzarella
  • Pinch of mozzarella for topping
  • 10 pieces of pepperoni
  • ¼ cup Italian breadcrumbs
  • 2 cloves crushed garlic
  • 1 Tbsp. oregano
  • Salt and pepper to taste

Directions:

Dice pepperoni. Slice zucchini long ways and chop off ends. Use a spoon to scrape insides of zucchini out leaving at least ¼” to create a shell. Chop zucchini that you have scooped out, and place chopped zucchini into a small bowl. Add all remaining ingredients, stir well, combining thoroughly. Scoop mixture back into zucchini to create a heaping filling, and top with shredded mozzarella. Place in freezer bag for later cooking. Or if preparing now; preheat oven to 350°, place zucchini in baking dish sprayed with nonstick cooking spray, bake for 25-30 minutes until tender.

Mini Bacon Cheeseburger Meatloaf Recipe

Pretty much everyone loves meatloaf. But the same old same old can get pretty boring. I like to give it a few updates to make it more appealing. The individual portion sizes are easy to serve and fun to eat. The addition of cheese, bacon and condiments gives this family staple a tasty update.

Ingredients:

  • 1 ½ pounds ground beef
  • 5 cheese sticks
  • 3/4 cup ketchup
  • 2 Tbsp. mustard
  • 2 Tbsp. mayonnaise
  • 7-8 –pieces of bacon (or about ¼ to ½ cup of precooked bacon pieces)
  • 2 cloves garlic, crushed
  • Salt and pepper to taste
  • 2 eggs
  • ¾ cup plain bread crumbs

Preparation:

If using uncooked bacon, fry in a large non-stick pan until just beginning to crisp. In a large bowl combine all ingredients except cheese sticks, until thoroughly mixed. Separate your ground beef mixture into 5-6 loaves. Press a cheese stick into bottom of loaf, work to cover cheese completely with ground beef, forming a football shape.

Grab a rectangular bread pan and line with plain bread crumbs (this helps to absorb a lot of the fat when cooking). Place meat loaves on top of bread. Brush tops with additional ketchup. Cover with saran wrap and then aluminum foil, store in freezer until the morning of the day you choose to cook.

Cooking Directions:

Place pan in oven preheated to 350° for 45 minutes.

Serve with your favorite potatoes and a vegetable to finish off the meal.

Gameday Tater Skins Recipe

One of the most popular appetizers to start off a meal, waiting for kickoff or anywhere else people gather is Potato Skins. While there are several steps involved, they really are very simple to make. If you have never made them before gameday is a great day to start, or even if you have maybe I have new technique you’d like to try. Look for long potatoes with a small diameter rather than large potatoes like you would use for baked potatoes. You can also pre-bake potatoes and finish the broiling steps just before guests arrive to heat them.

This is a basic recipe but add more flavor and finish these potato skins off by topping them with scallions, a dollop of chili, plain or flavored sour cream, diced tomatoes, diced ham, or something outside the box – olives or capers.

Ingredients:

  • 8 small to medium Russet potatoes
  • 8 oz. shredded Colby and Cheddar blend.
  • ½ stick salted butter
  • ¼ to ½ cup crumbled bacon pieces
  • salt and pepper to taste
  • optional: chives

Directions:

  1. Wash potatoes thoroughly, dry well.
  2. Preheat oven to 400°
  3. Poke 4-5 holes in each potato with a fork.
  4. Bake in preheated oven for 45 minutes.
  5. Remove from oven, allow to cool just enough to be handled.
  6. Using a sharp knife slice each potato in half.
  7. Take a spoon and remove about 75% of each potatoes inside, take care to keep skin intact.
  8. Melt butter, and brush on both sides of potato.
  9. Season with salt and pepper.
  10. Place potatoes back on baking sheet and under broiler set to high for 6-8 minutes.
  11. Remove from oven and fill the cavity of each potato with cheese, and crumbled bacon.
  12. Place back under broiler until cheese is melted an bubbly.
  13. Serve with plain sour cream and a sour cream that has been mixed with chives to give your guests dipping options.

Gameday Brownie Footballs Recipe

Here is another great recipe for your game day buffet, but this time I’m throwing out something to satisfy your sweet tooth. A simple homemade brownie recipe that looks awesome cut out with football cookie cutters to keep the theme going. I have a set similar to this one for entertaining at the big games. These brownies are delicious, decadent and will be devoured by grownups and kids alike at your party.Include crushed walnuts inside some of your batter to offer a little variety to your hungry guests. I did a double batch and made mine on a large cookie sheet since I wanted them to be thinner than usual.

Ingredients:

  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 2 cups granulated white sugar
  • 1 cup melted butter
  • 2 eggs
  • 1 tsp. Vanilla

Directions:

  1. Preheat oven to 350°
  2. Line a 9×11 baking pan with foil, spray with nonstick cooking spray.
  3. Combine flour, and cocoa powder-set aside.
  4. In a separate bowl cream butter and sugar.
  5. Add vanilla and eggs one at a time until mixed.
  6. Add flour mixture and stir until just combined.
  7. Pour brownies into foil lined pan.
  8. Bake for 20-25 minutes or until toothpick poked in center comes out mostly clean.
  9. Remove foil from pan and allow brownies to cool completely.
  10. Use a football cookie cutter or cut freehand with a sharp knife into football shapes.
  11. Fill a small (snack size) baggie with white frosting, snip off a very small corner, squeeze gently to press frosting from bag and pipe 3 lines on brownies for laces.

Football Turf Tip: Shake a few drops of green food coloring and shredded coconut in a plastic Ziploc bag. Shake to make green grass or turf.

Gameday Guacamole Dip Recipe

I am not sure if its within the rules of football watching to have a party without guacamole and chips but I don’t really want to find out. Guacamole dip is a staple of every get together at my house and I have to include it on the menu to keep rowdy fans under control. I like mine really creamy as opposed to the more rustic kind-but feel free to skip the blender step if you like yours more chunky. You can really impress your guests by using the guacamole dip to recreate a football field , set it next to a big bowl of good scooping tortilla chips and you have a crowd pleaser. I like to add the sour cream to help make it a little smoother and creamier. A quick trip to the produce stand and you can mix up a batch of this yummy dip.

Ingredients:

  • 3 ripe Avocados
  • 2 Tbsp. Cilantro
  • 1 Tbsp. Lime juice
  • 1 clove Garlic
  • ¼ cup Sour cream
  • 1 tsp. Salt
  • 1 tsp. ground black pepper

Directions:

  1. Cut avocado in half, twist to open and remove pit.
  2. Use as spoon to remove inside flesh of avocado from the skin.
  3. Chop cilantro, crush or finely chop garlic.
  4. In a blender combine: avocado, cilantro, lime juice, garlic, sour cream, salt, and pepper.
  5. Blend until smooth.
  6. To recreate the football field-
  7. Spread guacamole dip into a flat dish using a spatula to smooth.
  8. Pipe sour cream into lines, write in the 50 yard line, etc for as large as your pan is.

Decorating Tip: This is my favorite tip for sour cream, icing, or anything else I need to write with and want a a fine tip. Scoop your sour cream into a small zip top bag, snip off a very small corner. Keep in mind that the smaller you make the snip, the finer your writing will be.
